This is a delicious bread with the work left out. This is perfect to make into Thanksgiving dinner rolls. I prefer to use the machine to make the dough and then bake it in the oven. Baking time is however long it takes your machine.

3 cups flour
1 cup milk
3/4 cup chopped hazelnuts or 3/4 cup almonds, toasted
1 egg
3 tablespoons sugar
3 tablespoons margarine or 3 tablespoons butter
2 tablespoons Amaretto or 2 tablespoons hazelnut-flavored liqueur
1 teaspoon active dry yeast
3/4 teaspoon salt
1/2 cup sifted powdered sugar
1 tablespoon hazelnut-flavored liqueur or 1/2 teaspoon almond extract
milk
toasted chopped hazelnuts (optional) or almonds (optional)

Steps:

  • According to the manufacturer's directions add the flour, milk, nuts, egg, sugar, margarine or butter, liqueur, yeast, and salt to a bread machine pan, .
  • Bake and cool as directed.
  • Drizzle cooled bread with Amaretto Glaze. If desired, top with additional nuts. Makes 1 - 1-1/2 pound loaf (24 servings).
  • Amaretto Glaze: In a small bowl stir together 1/2 cup sifted powdered sugar, 1 tablespoon amaretto or hazelnut liqueur or 1/2 teaspoon almond extract, and enough milk (1 to 2 teaspoons) to make a glaze consistency.

3/4 cup whole almond
1 cup commercial eggnog
1 tablespoon commercial eggnog
1/4 cup amaretto liqueur
2 large egg yolks
2 tablespoons unsalted butter, cut into small pieces (or almond oil)
3 cups bread flour
1 tablespoon sugar
1 tablespoon gluten
1 1/4 teaspoons salt
2 1/2 teaspoons rapid rise yeast (or 1 T. bread machine yeast)
1 cup blanched almond
1 1/4 cups confectioner's sugar

Steps:

  • To make the Almond Confectioner's Sugar: place the nuts in the workbowl of a food processor with half of the confectioner's sugar; process until finely ground and fluffy.
  • Add the rest of the sugar and process until a fine powder is created; use for dusting holiday breads and sweet rolls; you will need 1/4 cup for this recipe.
  • Preheat the oven to 350°; coarsely chop the almonds and spread them evenly on a clean baking sheet.
  • Bake until lightly toasted, about 5-7 minutes; remove from the oven and let cool.
  • Place the ingredients, except the almonds, in the pan according to the order in the manufacturer's directions.
  • Set crust on medium and program for the Basic cycle; press Start.
  • When the machine beeps, or between knead 1 and knead 2, add the almonds.
  • Touch and press the dough with your fingers; it should be soft and pliable.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature; then dust with Almond Confectioner's Sugar before slicing.

But if you let it cool a bit, it shouldn't be a problem. Toasted with a little butter and jam, it is a slice of heaven!

1 cup warm water (105 to115 degrees F/40 to 45 degrees C)
4 teaspoons honey
2 teaspoons active dry yeast
2 cups all-purpose flour
4 teaspoons olive oil
½ teaspoon salt

Steps:

  • Pour warm water into the pan of bread machine and stir honey into warm water until dissolved. Add yeast to the mixture and let stand until yeast begins to foam, about 10 minutes. Add flour, olive oil, and salt to the bread pan in the order recommended by the manufacturer.

4 large eggs
1 cup sugar
1/2 cup water
1/2 cup amaretto
1/2 cup canola oil
1/4 cup butter, melted
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup sliced almonds
GLAZE:
1/2 cup sugar
1/2 cup water
1/4 cup butter, cubed
1/4 cup amaretto

Steps:

  • Preheat oven to 325°. Grease and flour four 5-3/4x3x2-in. loaf pans., In a large bowl, beat eggs, sugar, water, amaretto, oil and melted butter until well blended. In another bowl, whisk flour, baking powder and salt; gradually beat into egg mixture. Stir in almonds., Transfer to prepared pans. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. , Meanwhile, for glaze, combine sugar, water and butter in a small saucepan; bring to a boil. Cook and stir 3 minutes. Remove from heat; stir in amaretto., Remove cakes from oven; cool in pans on a wire rack 5 minutes. Pour glaze over cakes while in pans; let stand until glaze is absorbed, about 30 minutes. Remove cakes from pans. Store cooled cakes, covered, in refrigerator.
