I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

2 cups white rice
4 cups water
12 ounces country-style smoked link sausage
½ cup water
1 large onion, sliced
1 large green bell pepper, cut into 1-inch pieces
1 cup diagonally sliced celery, 1 inch thick
1 (14 ounce) can whole peeled tomatoes, quartered
1 cup beef broth
1 (8 ounce) can pineapple rings in juice, cubed and juice reserved
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 tablespoon brown sugar
2 tablespoons cornstarch

Steps:

  • Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. Combine sausages with onion, green pepper, and celery in a large skillet over medium heat; cook and stir until vegetables start to soften, about 5 minutes.
  • Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. Whisk reserved pineapple juice with cornstarch in a small bowl until smooth. Stir cornstarch mixture into sausage mixture and cook until sauce thickens and turns clear, about 2 minutes. Serve sausage mixture over cooked rice.

This is one of my favorite recipes, and it's really easy too. It has a sweet taste, but it makes for a perfect dinner. We serve it over steamed rice. Yum!!

1 (20 ounce) can pineapple chunks in juice
1 (16 ounce) can sweet potatoes, drained and cut into 1/2 inch slices
3/4 lb smoked sausage, sliced
3 tablespoons brown sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon butter
2 cups rice, cooked

Steps:

  • Drain pineapple, saving juice.
  • Add enough water to juice to measure 1 and 1/4 cups. Set aside.
  • Place pineapple, sweet potatoes, and sausage in 8x8x2 inch casserole dish.
  • Combine sugar, cornstarch, and salt in saucepan. Gradually add pineapple juice/water, and stir until blended.
  • Cook, stirring constantly, on med/low heat until it thickens and comes to a boil.
  • Boil for 1 minute, stirring constantly.
  • Remove from heat and add butter until melted.
  • Pour over sausage mixture in casserole dish.
  • Cover and bake 35-40 minutes at 350°F.
  • Serve over rice.

2 pounds smoked kielbasa or Polish sausage, cut into 1-inch pieces
1 can (20 ounces) unsweetened pineapple chunks, undrained
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons yellow mustard
1 tablespoon cider vinegar
3/4 cup lemon-lime soda
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Place sausage in a 3- or 4-qt. slow cooker. Drain pineapple, reserving 3/4 cup juice; set pineapple aside. In a small bowl, whisk the ketchup, brown sugar, mustard and vinegar. Stir in soda and reserved pineapple juice. Pour mixture over sausage; stir to coat. Cover and cook on low until heated through, 2-3 hours. , Stir in pineapple. In a small bowl, combine cornstarch and water until smooth. Stir into slow cooker. Cover and cook until sauce is thickened, 30 minutes longer. Serve with toothpicks.

3 sausages
0.5 (7 3/4 ounce) can pineapple
1 onion
knob butter
1 (8 ounce) can baked beans
1 teaspoon vinegar
salt
pepper

Steps:

  • Prick the sausages. Fry or grill them until cooked and brown. Add 1 or 2 pineapple rings and heat through with the sausages for a minute or two. Save 2 sausages, and keep hot with the pineapple rings (for decoration). Slice the rest of the sausages.
  • Peel and slice the onion, or wash and chop the spring onions. Chop another 1 or 2 pineapple rings.
  • Heat the butter in a saucepan over a moderate heat, and fry the onion and pineapple pieces until soft (2-3 minutes). Add the beans, sliced sausages, vinegar, salt and pepper, and simmer for 3-4 minutes.
  • Pour into a warm serving dish. Decorate with the whole sausages and pineapple rings you are keeping hot. Serve with crispy bread rolls or hot toast.

2 tablespoons butter
1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
1/2 cup pineapple preserves
1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
1 medium onion, finely chopped
1 medium green bell pepper, cut into 3/4-inch pieces
1 medium red bell pepper, cut into 3/4-inch pieces
1 (8-oz.) can pineapple chunks in unsweetened juice, undrained

Steps:

  • Heat oven to 375°F. In small saucepan, bring water and butter to a boil.
  • In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.
  • Bake at 375°F. for 40 to 45 minutes or until rice is tender. Let stand 10 minutes before serving.
