1 cup soy sauce
1 cup sugar
1 teaspoon grated ginger, very fine
1 large garlic clove, minced
3 scallions, chopped fine

Steps:

  • Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar. Remove from heat and add remaining ingredients.
  • Let cool and store in a glass jar in refrigerator.
  • A light inexpensive soy works well for this, just make sure it is real not one with caramel coloring as an ingredient. Tamari is a bit too heavy for this, though will work in a pinch.
  • I use my parmesan cheese grater to grate ginger--comes out well that way.
  • This is also great on noodles, tofu, vegetables, added to stir frys, besides grilled meats and burgers.

2 large eggs
3/4 c cornstarch
1/4 tsp ground pepper
1/4 tsp garlic powder
1 c water
15 - 20, 4 lb chicken thighs, boneless & skinless
1 lb panko bread crumbs
KATSU SAUCE
1/2 c worcestershire sauce
1 c ketchup
1 c sugar
2 1/2 c water
1/3 tsp salt
1/4 tsp chicken bouillon
1/4 tsp ground pepper
1/4 tsp garlic powder
2-3 dash(es) tabasco sauce

Steps:

  • 1. To make sauce: Combine all ingredients and bring to a boil. Add cornstarch dissolved in water to thicken. Chill and serve. **I would always make the sauce first to chill for a few hours before the chicken was ready (the sauce thickens in the refrigerator)***
  • 2. Open the chicken thighs and flatten. In a bowl, combine eggs, cornstarch, pepper, garlic powder, and water. In a separate bowl pour in your panko bread crumbs. First dip the chicken in the egg batter to coat, then dip chicken in the panko bread crumbs. Fry in oil (maximum 325 degrees) until brown and crispy.
  • 3. Cut chicken into strips and serve with sauce. Serve with a few scoops of hot, sticky, white rice and a scoop of macaroni salad for a true plate lunch special like L&L Hawaiian Barbecue! Serves 7-10.

1/2 cup canned crushed pineapple (do not drain)
Freshly cracked black pepper
1/2 cup store-bought BBQ sauce
1/4 cup gochujang
2 tablespoons apple cider vinegar
1/4 cup finely chopped fresh cilantro

Steps:

  • In a medium saucepot on medium heat, add the pineapple and plenty of coarse freshly cracked black pepper. Cook, stirring frequently, until the pineapple begins to bubble and brown a bit, about 20 minutes. Add the BBQ sauce, gochujang and vinegar and whisk to combine. If the mixture is too loose, cook down to a thicker consistency; if it is too thick, add a splash of water to loosen, but no more than 1/4 cup.
  • Let the sauce cool. When close to room temperature, stir in the cilantro.

  • Mix flour, sea salt and pepper on a large plate.
  • lightly beat egg whites in a medium bowl.
  • spread coconut on another large plate.
  • dip shrimp in flour then in egg whites.
  • roll each shrimp in coconut until well covered.
  • heat lard in a large cast-iron skillet over medium high heat and fry shrimp until browned and crispy, about 5 minutes on each side.

I used this sauce on ribs, and they are absolutely to die for, and the BEST ribs I have ever had the pleasure of making and eating... This recipe is heaven sent, especially for us rib lovers, using 3 racks of baby back ribs! I double the sauce, and use every last bit. Any sauce that may be left over after basting, you can spoon on ribs right before serving. Definately one not to be missed!

1/3 cup unsweetened pineapple juice
1/4 cup low-sodium teriyaki sauce, I use Kikkomans
1/4 cup ketchup
1 garlic clove, minced
1 tablespoon brown sugar, firmly packed

Steps:

  • Use with 3 baby back rib racks:.
  • In a lg. Dutch oven, combine ribs and cold water to cover. Bring to a boil over med-high heat.
  • Cover, remove from heat, and let stand for 30 minutes.
  • In a small saucepan, combine pineapple juice, teriyaki sauce, ketchup, garlic, and brown sugar.
  • Bring to a boil, stirring, over med-high heat. When it starts to boil, reduce heat to low, and simmer for 10 minutes.
  • Stir in ginger.
  • Remove from heat, and let cool.
  • Heat grill to med.
  • Drain ribs. Place on grill rack.
  • Brush with half of the sauce.
  • Grill 6" from heat, covered, for 5-7 minutes per side. (Watch carefully, so they don't burn)!
  • Brush with remaining sauce.
  • Grill covered until browned, about 3-5 minutes per side.

1 (20 ounce) can pineapple rings
¼ cup prepared ponzu sauce
4 teaspoons white sugar
1 ¼ pounds beef top sirloin, thinly sliced
1 small red onion, divided
1 jalapeno chile pepper
1 lime, juiced
½ teaspoon white sugar
1 pinch salt
⅓ cup sour cream
2 tablespoons Sriracha sauce, or to taste
1 tablespoon oil, divided
2 garlic cloves
salt and ground black pepper to taste
6 slider-sized burger buns

Steps:

  • Drain pineapple juice into a small bowl. Add ponzu and sugar to the pineapple juice; stir to dissolve sugar. Refrigerate pineapple rings and 1/3 cup of the juice mixture.
  • Transfer remaining juice mixture to a resealable zip-top bag. Add steak and seal. Refrigerate for 8 hours to overnight.
  • Peel outer layer of onion. Slice onion as thinly as possible. Thinly slice jalapeno into rounds, removing ribs and seeds for less heat. Combine 1/4 of the onion slices, jalapeno, lime juice, sugar, and 1 pinch salt in a bowl. Set aside to quick-pickle, stirring occasionally, until ready to serve.
  • Mix sour cream and Sriracha sauce together in a bowl for the Sriracha cream. Set aside.
  • Heat 1 1/2 teaspoons oil in a large pan over medium-high heat. Add pineapple rings and cook, stirring occasionally, until lightly caramelized, 3 to 4 minutes. Remove from the pan and set aside. Add remaining onion and oil to the pan; season with salt and pepper. Cook and stir until softened, 4 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Drain sirloin from marinade. Add to the pan and season with salt and pepper. Cook until browned, 4 to 5 minutes. Carefully add reserved pineapple juice mixture to the pan. Cook and stir until liquid has mostly evaporated and beef is coated in sauce, 1 to 2 minutes. Remove from heat and stir in pickling liquid from onion and jalapeno. Taste and season with salt and pepper.
  • Assemble sliders by adding sirloin steak to each bun. Top with jalapeno slaw, Sriracha cream, and caramelized pineapple.

4 teaspoons chopped red bell peppers

1 medium ripe papaya, diced

Steps:

  • For crab cakes:.
  • In a mixing bowl, combine the crab meat, eggs, salt, cayenne pepper, coriander, red pepper, garlic, and ginger. Blend well.
  • Form the mixture by hand into 8 cakes. Place the bread crumbs on a planted and dip the crab cakes into the crumbs until well-coated.
  • Heat the olive oil in a skillet and when hot add the crab cakes and saute until the cakes are golden on both sides, about 2 minutes.
  • To serve pour sauce on a plate and top with the crab cakes.
  • For the Papaya-Basil Sauce:.
  • In a saucepan over medium heat, combine the wine, papaya, and shallot. Reduce the liquid by two-thirds, then add teh cream and reduce again by two-thirds. Slowly whisk in the butter, piece by piece, melting one before incorporating another. Season with salt, pepper, ginger, and lime juice. Put the mixture into a blender and blend until the ingredients are well combined.
  • Pour the sauce into a bowl and add the basil. Allow it to infuse for at least 20 minutes before serving.

1/4 c chopped green bell pepper
2 clove garlic, minced
1/2 c beer
1/2 c pineapple juice reserved from pineapple
1/2 c crushed pineapple
2 Tbsp brown sugar
1 can(s) (small size) tomato paste
1 Tbsp vinegar
2 Tbsp sweet asian chili sauce
1/4 tsp cayenne pepper
1 Tbsp olive oil

  • 1. In a skillet, cook the onion and green pepper in the olive oil until tender- about 5 mins. Add pineapple and let cook on medium-low. In a separate bowl, whisk the beer and pineapple juice together then stir in brown sugar, tomato paste, vinegar, chili sauce and cayenne pepper. 1 cup yellow mustard
1/3 cup horseradish

Turn off broiler and preheat oven to 350 degrees F. 2. Prepare fish, wash and dry thoroughly, and sprinkle with the salt and pepper. 3. In a large oven-proof saute pan over medium high heat, warm the olive oil and butter until butter just begins to sizzle; add fish and saute 2 minutes; turn and put fish into the oven for 5-6 minutes or until it flakes easily. 5. While baking, make the quick and easy sauce. In a saucepan over medium heat, melt the butter; add the liqueur, wine, and preserves, stirring to reduce slightly. When slightly reduced, about 3-4 minutes, add the mango and banana. 6. Plate the fish on two plate and drizzle each portion with the sauce.

2 Tbsp brown sugar, such as demerara
1 Tbsp fresh ginger, minced
1 Tbsp hoisin sauce
2 Tbsp ketchup
2 Tbsp honey
1 large clove garlic, pressed
1 1/2 c pineapple juice

Steps:

1 cup teriyaki sauce
1 pinch red pepper flakes
2 tablespoons cornstarch
1/4 cup water
1 1/4 cups ketchup
1/4 cup mustard
1 tablespoon of minced garlic
1 tablespoon minced ginger

Steps:

  • When Pork is finished roasting, add the Pan Drippings, Teriyaki Sauce, and red pepper flakes to a sauce pan, over low heat. Meanwhile mix together Corn Starch and water. Then pour corn starch mixture into the Teriyaki Sauce mixture, and bring to a simmer till it thickens. Mix in 1 Cup of Ketchup.
