1 tablespoon onion powder
2 teaspoons kosher salt
1 1/2 teaspoons garlic powder
1 teaspoon freshly ground black pepper
5 pounds boneless pork butt or shoulder
One 8-ounce can crushed pineapple
1/2 cup hoisin sauce
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons rice vinegar
Hawaiian buns, for serving
4 cups thinly shredded savoy cabbage
1/4 cup rice wine vinegar
2 teaspoons sugar
1 teaspoon celery seeds
Kosher salt and freshly ground black pepper

Steps:

  • For the Hawaiian pulled pork: In a small bowl, mix the onion powder, salt, garlic powder and pepper. Rub the mixture on all sides of the pork. Put the pork in a slow cooker and cook on low for 8 hours.
  • Shred the pork with 2 forks, removing any large pieces of fat. Pour the broth into a fat separator or skim off the fat. In a bowl, whisk 2 cups of the skimmed broth with the crushed pineapple, hoisin, honey, soy sauce and vinegar. Put the pork back in the slow cooker and stir in the sauce. Cook on low for 1 hour.
  • For the slaw: Meanwhile, combine the cabbage, rice vinegar, sugar, celery seeds and some salt and pepper in a bowl and toss to coat. Let stand, tossing frequently, until the cabbage wilts, about 20 minutes.
  • Serve the pulled pork on Hawaiian buns topped with slaw.

For the cauliflower crust
2 cups cauliflower florets (7 ounces), 1/2-inch pieces
1/2 cup corn flour (2 1/4 ounces 57 g) or masa harina
1 large egg
2 tablespoons olive oil
1/4 teaspoon kosher salt
2 tablespoons cornstarch
3 ounces Parmesan cheese (1 1/2 cups grated)
For the toppings:
1/2 cup pizza sauce, homemade or store-bought
4 ounces mozzarella cheese, shredded
5 slices Canadian bacon
1/2 cup diced pineapples, fresh or canned
Black pepper, for garnish
Oregano, fresh or dried, for garnish

Steps:

  • Preheat oven: Place the oven rack in the upper-middle position and preheat the oven to 475°F.
  • Bake the pizza: Bake until the cheese is melted and pizza edges are golden browned and crisp, 4 to 6 minutes.
  • Serve: Garnish pizza with black pepper and oregano, and slice and serve immediately while hot. Leftovers will keep for about a week. To reheat, place on a foil-lined baking sheet and cook at 375°F until the cheese is melted and the crust is warm and crisp, 5 to 7 minutes.

You won't believe this pizza is gluten-free. The cauliflower takes on all the flavor of a delicious pizza crust with none of the flour.

1 small head cauliflower, chopped (about 5 cups)
2 ounces shredded Asiago (1 cup)
1 large egg
1/2 teaspoon dried Italian seasoning or oregano
1 clove garlic, minced
Kosher salt and freshly ground black pepper
Olive oil, for brushing
1 1/2 cups shredded mozzarella (6 ounces)
1/2 cup marinara sauce
4 slices prosciutto (1 ounce), sliced into ribbons
Crushed red pepper flakes, for sprinkling
1/4 cup fresh basil leaves, torn

Steps:

  • Preheat a pizza stone or clean baking sheet in an oven to 475 degrees F.
  • Add the cauliflower to a food processor and pulse until finely ground and the consistency of couscous; you should have about 4 cups.
  • Transfer the cauliflower to a large bowl. Add the Asiago, egg, Italian seasoning, garlic, 1/2 teaspoon salt and a few turns of black pepper and combine until the mixture holds together when pinched. Pour onto a clean kitchen towel and wring out as much moisture as you can.
  • Line a pizza peel, flat cutting board or cookie sheet with parchment and brush with some oil. Spread the cauliflower mixture into a 12-inch circle. Slide the parchment onto the preheated pizza stone and bake until barely golden and darker at the edges, about 15 minutes.
  • Remove the crust from the oven, sprinkle with the mozzarella and spread the marinara over the top (this keeps the crust from becoming soggy and the cheese from sliding). Scatter the prosciutto across the top and sprinkle with a good pinch of crushed red pepper. Slide back onto the pizza stone and bake until bubbly with browned spots, about 4 minutes.
  • Sprinkle with the basil just before serving.

1 packet teriyaki marinade (recommended: McCormick Grill Mates)
1 tablespoon paprika
1 teaspoon fresh ground pepper
3 1/2 pounds pork shoulder
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chili sauce
One 6-ounce can pineapple juice
1 medium onion, chopped
2 carrots, chopped
8 hamburger rolls
2 tablespoon canola oil
1 tablespoon ginger, chopped
2 teaspoons garlic, chopped

Steps:

  • In small bowl, combine teriyaki mix, paprika and pepper.
  • Coat the pork the with rub mixture, patting until all rub is used. Set aside.
  • In a bowl whisk together the chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice. Set aside.
  • Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder for Hawaiian sauce. Cover and cook on low for 7 to 8 hours. The meat should fall apart easily. Remove the roast from the slow cooker to a cutting board. Using 2 forks carefully pull the meat into shreds.
  • Hawaiian Sauce:
  • In a medium pot heat the oil over medium heat. Add garlic and ginger and saute until soft, about 2 minutes. Add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside.
  • Serve the pork on rolls drizzled with the Hawaiian sauce or on the side for dipping.

1 head cauliflower, stem removed
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/2 teaspoon dried oregano
Kosher salt
1/4 teaspoon garlic powder
2 large eggs, lightly beaten
1/2 cup marinara sauce
Sliced bell peppers and onion, for topping

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Break the cauliflower into florets and pulse in a food processor until fine. Line a steamer basket with a kitchen towel (not terrycloth); set in a saucepan with 2 inches simmering water. Add the cauliflower, cover and cook 5 minutes. Drain well, then wring dry in the towel to get out all the moisture. Let cool.
  • In a bowl, combine the cauliflower with 1/2 cup mozzarella, the parmesan, oregano, 1/2 teaspoon salt, the garlic powder and eggs. Transfer to the center of the baking sheet and spread into a 10-inch circle to make a pizza crust. Bake until golden, about 20 minutes.
  • Spread the marinara sauce on the crust; top with bell peppers and onion and sprinkle with the remaining 1/2 cup mozzarella. Return to the oven and bake an additional 10 minutes.
