HAWAIIAN FRIED RICE
Growing up in the South Pacific, rice was the mainstay of our diet. When my husband and I moved stateside, we created this Hawaiian fried rice recipe. We bring this dish to every potluck, and it's always the hit of the party. -Janice Edwards, Plainville, Illinois

Steps:
- Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

HAWAIIAN LUAU FRIED RICE

- Cook rice according to package directions for 6 cups cooked rice; set aside.
- Add shredded coconut to a pan over medium-high heat. Stir constantly until coconut begins to turn golden brown.
- Remove coconut completely from the pan; set aside.
- Using the same pan over medium-high heat, add vegetable oil, onion, ginger, bell pepper and ham and sauté until ham begins to turn golden brown and red pepper and onion are tender.
- Add cooked rice, pineapple, sesame oil, soy sauce and toasted coconut to the pan and cook, stirring constantly, until heated through and well combined.
- Remove from heat.
- Serve and garnish with green onion.

If you're from Hawaii, you know very well about our local-style sticky bacon fried rice you can get at almost any short order restaurant. I made this version of my own to take me back to the days when I used to live on the island. These ratios are approximate, I usually make mine to taste.

- Place bacon into a wok or large frying pan and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain most of the bacon fat, reserving 3 tablespoons. Add sweet onion and saute in the hot bacon grease over medium-high heat until translucent, about 5 minutes. Add sausage and saute until browned, 5 to 7 minutes.
- Meanwhile, crack eggs into a nonstick skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes. Remove and cut into small pieces.
- Add eggs and rice to the wok and stir until ingredients are evenly distributed. Return bacon to the wok and mix well. Season with soy sauce and pepper and stir-fry until rice is a light tan color, about 5 minutes. Garnish with scallions.

- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
- Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
- Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

- Cook the rice the day before.
- Heat a wok to medium-high and add sesame oil and saute the tofu cubes, set aside.
- Add a little canola oil to the wok, add the onion, carrot and bell peppers and stir fry a few minutes.
- Add the cooked rice and continue to stir fry, break up the lumps; then add the soy sauce, oyster sauce and sambal oelek.

- In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and remove sausage from the pan. In the same pan, using the remaining coating of grease from the sausage, scramble the eggs, stirring frequently until cooked through. Set aside.
- Heat the oil in a very large skillet or electric skillet over medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, stirring so that there are no clumps.
- Mix in the sausage and pour in some soy sauce. Stir in bean sprouts, peas, and eggs, mixing well so there are no big chunks of egg. Season with pepper, and stir in green onions just before removing from the heat.

A co-worker of mine shared his recipe with me and it is the best fried rice I have ever made. - 2. Add all diced vegetables, except green onions, and stir/cook until tender.

- In a small bowl, whisk the soy sauce with the hoisin and vinegar.
- Heat a wok or large skillet to medium-high. Brown the pork and remove with a slotted spoon.

- 1. Make rice according to directions.
- 2. Lightly beat eggs with 1 tsp sugar and 2 tsp of soy sauce. I usually cook this like an omelet and then dice it.
- 3. Dice Spam. Brown in a little oil. Remove from the pan and set aside.
- 4. Add carrots, onion, ginger and garlic to the pan, saute until tender and fragrant.
- 5. Add sesame oil and rice to the pan. Mix well.
- 6. Add frozen peas. Mix in and make sure they are completely warmed through.
- 7. Remove from heat.
- 8. Add mirin, rice wine, and soy sauce to the pan. Mix well.
- 9. Add in the Spam, rice mixture and diced egg. Stir to incorporate.

- 1. In a small bowl, stir together the soy sauce, sesame oil and hot sauce. Set aside.
- 2. In a large, non-stick skillet, heat 1/2 of the vegetable oil over medium-high heat. Add the diced ham, red bell pepper and the chopped white parts of the green onions. Cook and stir for 5 to 7 minutes, or until ham is browned and bell pepper is crisp-tender. Stir in the garlic and cook another minute. Pour this mixture into a bowl, and set aside.
- 3. Heat the remaining vegetable oil in the same skillet until hot, and then add the cold rice. Cook and stir rice, breaking up the clumps. Cook until rice is thoroughly heated, about 8 minutes.
- 4. Push the rice to one side of the skillet. Crack the eggs onto the other side of skillet and stir until lightly scrambled and set. Stir the eggs and the ham mixture into the rice. Pour the soy sauce mixture into the rice and cook, stirring until combined and hot.
- 5. Turn off the heat, stir in the pineapple and green parts of the onions.

- On high heat, stir fry the celery, carrots, mushrooms and onion in oil, about 3 minutes or until tender.
- Add in the vegetarian "ham"; stir fry for 1 minute.

- 1. Cook rice, set aside 2. Scramble eggs, set aside 3. Slice bacon into very thin strips 4. Cut Portuguese sausage into small pieces 5. Dice onion 6. Slice eggs into small strips/pieces 7. Over medium heat, cook bacon, sausage and onions until meats are well cooked and onions are clear 8. Add finely chopped green onion, mix 9. Add in rice and eggs, mix 10. Add in oyster sauce 11. Add pepper to taste. No salt is needed - there's plenty from meats and oyster sauce.
HAWAIIAN FRIED RICE
Kids love this fried rice, if you can't find a fresh pineapple, canned tidbits will work as well. I use link pork sausage, but spam is also very good.

- Heat your wok up and fry your sausage. Remove the sausage but leave the grease.
- Add 1 Tblspn of oil, the onions and garlic. Cook until onion is nice and browned. Remove and set aside.
- Make sure your wok is good and hot. Add the rest of the oil and butter. Turn rice and gently break it up until all the grains are separate and have some oil on them. Turn the heat way up till the wok is hot and the rice is popping. Let it sit until it sizzles, then turn, sit. Sizzle. Turn sit sizzle. This might take a while but don't get impatient, you want lots of crunchy grains throughout.
- Combine the sauces and salt, add and stir through to disperse evenly.
- Add the pineapple and stir until its just warmed. Add back in the meat and vegetables. Stir until reheated.
- Serve hot and make plenty for leftovers!
