Sweet and tangy, delicious Hawaiian chicken. This chicken is sautéed with peppers and pineapple and a tasty Hawaiian inspired sauce for a perfect weeknight meal.

2 pounds boneless skinless chicken breasts (diced)
Salt and Pepper to taste
2 cups diced bell peppers (red, orange, yellow mix)
1 fresh pineapple (diced)
3 cups Cooked white rice
1 Tbs olive oil
3 Tbs Soy Sauce
3 Tbs dark brown sugar
2 Tbs rice vinegar
½ tsp ground ginger
1 Tbsp minced garlic
1/2 cup barbecue sauce
½ cup pineapple juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper then add to the skillet.
  • Sear outside until a nice golden crust forms.
  • Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan
  • Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.

1 1/2 pounds boneless skinless chicken thighs
1/2 cup low sodium soy sauce
1/4 cup water
1/4 cup packed light brown sugar
1/2 teaspoon minced garlic
1 teaspoon sesame oil
1/2 cup light coconut milk
1/4 cup pineapple juice
1 cup pineapple slices (fresh or canned)
1 cup white rice (I prefer short grain for this recipe)
1 1/4 cup light coconut milk
1/2 cup water
3/4 teaspoon kosher salt
2 teaspoons brown sugar
cilantro leaves and lime wedges for garnish (optional)

Steps:

  • For the chicken: Combine the soy sauce, water, brown sugar, garlic, sesame oil, coconut milk and pineapple juice, then pour into a container or resealable bag.
  • Add the chicken and marinate anywhere from 2-24 hours.
  • Heat the grill to medium. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until chicken is cooked through.
  • Add the pineapple to the grill and cook for 2-3 minutes per side. Arrange the pineapple and chicken on a serving plate.
  • For the rice: Bring the coconut milk and water to a boil. Add in the salt and rice. Cover, reduce heat to low and simmer for 18 minutes. Stir in the brown sugar.
  • Serve the chicken and pineapple with the coconut rice. Garnish with lime wedges and cilantro if desired.

1 broiler/fryer chicken (3 to 4 pounds), cut up
1/4 cup butter, melted
1 can (20 ounces) pineapple chunks
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 teaspoon salt
1/3 cup ketchup
1/4 cup cider vinegar
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
Pinch ground ginger

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish; drizzle with butter. Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine brown sugar, cornstarch and salt; stir in reserved pineapple juice until smooth. Add the ketchup, vinegar, chili powder, Worcestershire sauce, soy sauce and ginger. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over chicken., Cover and bake at 350° for 1 hour. Uncover and bake for 30 minutes. Top with reserved pineapple; bake 15 minutes longer or until chicken juices run clear and pineapple is heated through.
