2-1/4 cups sugar, divided
1 cup canola oil
4 eggs
1/4 cup orange juice
2-1/2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
4 medium tart apples, peeled and cubed
2 teaspoons ground cinnamon
Whipped cream and additional cinnamon, optional

Steps:

  • In a large bowl, beat 2 cups sugar, oil, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Stir in apples. , Spread half of the batter into a greased 13x9-in. baking dish. Combine cinnamon and remaining sugar; sprinkle over batter. Carefully spread remaining batter over the top. , Bake at 350° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Garnish with whipped cream and additional cinnamon if desired.

2 teaspoons vanilla extract
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 medium Granny Smith apples, peeled, cored and chopped
1 cup walnuts, chopped
1/2 cup butter or margarine
2 teaspoons milk
2 cups white sugar
1/2 cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 inch Bundt pan.
  • In a large bowl, beat the sugar, oil, vanilla and eggs with an electric mixer until light and fluffy. Combine the flour, baking soda, cinnamon and salt; stir into the batter just until blended. Fold in the apples and walnuts using a spoon. Pour into the prepared pan.
  • Bake for 1 hour and 20 minutes in the preheated oven, until a toothpick inserted into the crown or the cake comes out clean. Allow to cool for about 20 minutes then invert on to a wire rack.
  • Make the glaze by heating the butter, milk and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar, then remove from the heat. Drizzle over the warm cake.
  • I like to place a sheet of aluminum foil under the cooling rack to catch the drips for easy clean up.

It consist of fresh apples, chopped nuts and a divine caramel sauce which makes this cake. I have had this cake recipe for such a long time. I believe I got it from Betty Crocker...

2 c sugar
2 tsp vanilla
3 eggs
3 cups all purpose flour
1 tsp salt
1 tsp baking soda
2 medium apples, peeled and finely chopped (2 cups)
1 c chopped nuts
caramel glaze
1/2 c butter or margarine
1/2 c packed brown sugar
2 tsp milk

Steps:

  • 1. Heat oven to 350°F. Grease and flour 12-cup fluted tube/bundt cake pan. In large bowl, beat granulated sugar, oil, vanilla and eggs with electric mixer on medium speed until light and fluffy. Beat in flour, salt and baking soda until smooth. Stir in apples and nuts. Pour into pan.
  • 2. Bake 60 to 90 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes. Remove from pan to cooling rack. In 2-quart saucepan, heat all glaze ingredients to boiling, stirring occasionally. Boil 2 minutes, stirring constantly; remove from heat. Spoon glaze over warm cake.
  • 3. Note: I usually punch small holes in the cake for the glaze to go down in the cake. Not many just enough to give it a good flavor inside the cake.

1 2/3 cups flour
1 teaspoon baking powder
1/4 teaspoon salt, preferably fine sea salt
1/2 teaspoons ground cinnamon
1/4 teaspoon freshly grated nutmeg
8 tablespoons (1 stick) unsalted butter, at room temperature
2 ounces cream cheese, at room temperature
1 cup sugar
2 large eggs, plus 1 large egg yolk
1 1/2 teaspoons vanilla extract
2 1/4 to 2 1/2 cups peeled cored, and diced "cooking" apples (3 to 4 medium apples). May use Cortland, Jonathan, McIntosh, or Fuji or a combination of all
3 tablespoons sugar
1/4 teaspoon ground cinnamon

Steps:

  • 1. Preheat oven to 350 degrees. Use flour and oil spray to coat the inside of a 9" round baking pan with 2" sides. FOR THE BATTER: 2. Sift the flour, baking powder, salt, cinnamon and nutmeg on a sheet of wax paper. 3. Place the butter in a bowl of a stand mixer or hand-held electric mixer. Beat on medium speed until smooth, about 2 minutes. Add the cream cheese and beat for 1 to 2 minutes; scrape down the sides of the bowl. On moderately high speed, blend in the sugar in 3 additions, beating for 45 seconds after each addition, stopping to scrape down the sides of the bowl as needed. 4. Add the eggs one at a time, beating after each addition for 30 seconds or until just incorporated. Add the egg yolk and vanilla extract, beating. On low speed, beat in the flour mixture in 2 additions, mixing just until the particles of flour are absorbed. The batter will be thick. 6. Use a wooden spoon to stir in the apple chunks. 7. Scrape the batter into the prepared baking pan, smoothing the surface. 8. Bake for 40 to 45 minutes or until the cake has risen and set. It should pull away slightly from the sides of the pan. The top of the cake will be a medium golden color and will look somewhat bumpy due to the chunks of fruit embedded in the batter. 9. Cool the cake in the pan on a wire rack for 10 minutes. Invert the cake onto another cooling rack, lift off the baking pan, then invert again to stand right side up. FOR THE TOPPING: 10. Whisk together the sugar and cinnamon in a small bowl. While the cake is warm, sprinkle the mixture evenly over the top of the cake. To Serve: use a serrated knife to cut the cake into wedges.

5 apples, peeled, cored and sliced
1 c vegetable oil
1 tsp salt
1 1/3 c sugar
1 tsp cinnamon
3 eggs
1 tsp vanilla
2 c plus 2 tbsp. flour
1 tsp baking soda
1/2 c nuts (optional)

Steps:

  • 1. Preheat oven to 350°. Grease a bundt or tube pan.
  • 2. Cream oil, salt, sugar, cinnamon, eggs and vanilla. Stir in sliced apples. Sift flour and baking soda and add to creamed mixture.
  • 3. Pour into prepared pan and bake approx. 45 minutes. If a tube pan is used, add 10-15 minutes to baking time.

2 lbs apples, peeled, cored and sliced
1 cup sugar, divided
1 cup flour
1/2 cup oatmeal
1/4 cup chopped nuts
1/2 tsp baking powder
dash cinnamon
1/4 tsp salt
1/2 cup butter
1 egg
1 tsp vanilla

Steps:

  • Place apples and 1/2 cup sugar in saucepan & simmer, covered for approx. 7 minutes, till apples are translucent. Sprinkle with cinnamon and 1 TBSP flour. Let cool. Pastry: Combine 1/4 cup sugar, flour, baking powder and salt. Cut in butter until it looks like coarse oatmeal. Lightly beat in egg and vanilla and incorporate until a ball forms. Roll 1/2 of this dough out in the bottom of a springform pan. Place cooled apples over the dough, leaving a 1/2 inch around sides of the pan. Mix in oatmeal and chopped nuts with remaining dough and crumble. Drop 1/2 of this in the space between apples and side of pan. Sprinkle remaining crumbs over apples. Sprinkle with remaining 1/4 cup sugar over top of everything. Bake at 425 degrees for 30 minutes or until golden. Let cool and cut into wedges.
