This is a recipe that my Grandmother used to keep me and my finicky cousins well fed! It is very kid friendly, and adults like it too!

1 pound lean ground beef
3 cups peeled and thinly sliced potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
¾ cup milk
salt to taste
freshly ground pepper, to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef; drain fat.
  • In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
  • Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

1 pound lean ground beef
2 (10.75 ounce) cans condensed cream of mushroom soup, divided
4 (4 ounce) cans sliced mushrooms, drained
1 cup milk, divided
½ teaspoon seasoned salt
ground black pepper to taste
4 cups peeled and thinly sliced potatoes
½ cup shredded Cheddar cheese
¾ cup French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11-inch baking pan.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Mix 1 can cream of mushroom soup, mushrooms, 3/4 cup milk, seasoned salt, and black pepper in a bowl; fold in potatoes.
  • Spread half the potato mixture into the prepared baking pan; top with Cheddar cheese. Spoon 1/2 the ground beef over cheese layer. Top ground beef layer with remaining potato mixture; layer with remaining ground beef.
  • Mix remaining 1 can cream of mushroom soup with 1/4 cup milk; pour mixture over ground beef layer.
  • Bake in the preheated oven until casserole is bubbling, about 1 hour 20 minutes. Sprinkle French-fried onions over casserole; return to oven for 5 more minutes.

Our homey ground beef casserole is a great choice for a busy family. A meatloaf-like mixture is topped with homemade mashed potatoes and cheese.

1/4 cup breadcrumbs , fine and dry
1/2 cup milk
1 pound ground beef , at least 85% lean
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons onion , minced
1 large egg
3 cups prepared mashed potatoes, or more
3/4 cup sharp cheddar cheese, shredded
Optional: paprika

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • In a small bowl, soak the breadcrumbs in milk.
  • In a large bowl, mix the ground beef with the bread crumb mixture, along with the salt, pepper, onion, and the beaten egg .
  • Pat the meat mixture into a 9-inch pie plate. Bake in the preheated oven for 30 minutes. Remove the ground beef from the oven and carefully pour off the excess fat.
  • Top the meat with the mashed potatoes; sprinkle with cheese. If desired, sprinkle lightly with paprika.
  • Return to oven for about 15 minutes longer, or until the cheese is melted and potatoes are thoroughly heated.

2 bacon strips, diced
1 pound ground beef
1-3/4 cups sliced fresh mushrooms
1 large onion, finely chopped
1 large carrot, finely chopped
1 celery rib, finely chopped
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried tarragon
1/4 teaspoon pepper
3 cups hot mashed potatoes
3/4 cup shredded cheddar cheese, divided
Paprika

Steps:

  • In a large skillet, cook bacon until crisp; drain, reserving 1 teaspoon drippings. Set bacon aside. Cook beef in drippings over medium heat until no longer pink; drain. , Toss mushrooms, onion, carrot and celery in flour; add to skillet with the broth, Worcestershire sauce, tarragon and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until the vegetables are tender. , Add bacon; transfer to a greased 2-qt. baking dish. Combine potatoes and 1/2 cup of cheese; spread over beef mixture. Sprinkle with paprika and remaining cheese. , Bake, uncovered, at 350° for 20-25 minutes or until heated through. Broil 4 in. from the heat for 5 minutes or until bubbly.

2 lbs ground beef
2 (10 ounce) cans tomato soup
2 (16 ounce) cans green beans, drained
8 cups instant mashed potatoes
2 cups shredded cheddar cheese

Steps:

  • Brown ground beef and drain fat.
  • Add the soup and green beans.
  • Spoon into a casserole dish.
  • Prepare the mashed potatoes according to package directions.
  • Spread over the top of casserole ingredients.
  • Sprinkle with the cheese.
  • Bake at 350°F for 30 minutes, or until cheese is bubbly.
  • Note: You can be creative.
  • Add chili powder or cumin and chopped jalapeño pepper for a Mexican flair.
  • Or tomato sauce instead of soup and a bit of oregano substituting mozzarella cheese for Italian style.
  • Just use your imagination with the basic recipe.

The name just about says it all. If you are looking for something exotic, interesting or spicy, you would be happier moving on to the next recipe. If you need something that will be ready quickly, or is low fat, this is not the dish for you. You also usually have to soak the pan afterward to clean up. BUT, if sometimes you or your family members just want some hamburger and cheesy potatoes, and you have a couple of hours before you need to have dinner ready, you might enjoy this. After all of the fun and interesting things I make for my family - which they enjoy - this is what they ask for. This is a recipe my mother asked for; this is what my son wants to eat so he feels like he's been home during school holidays; my picky 7 year old eats an adult-sized portion of this. My husband is always happy to eat it. Adapted from the More with Less cookbook - can also be made with other meats/cheeses.

5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
2 -3 tablespoons chopped onions
1 lb ground beef (really lean is preferable)
salt and pepper
2 cups milk (I use skim)
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces shredded sharp cheddar cheese
ketchup (optional condiment)

Steps:

  • I use a 2 1/2 quart covered casserole dish for this. This will stick unless you have a great non-stick baking dish - I never grease the pan though because of all the fat that's already in this.
  • Preheat oven to 350.
  • Brown hamburger and onion.
  • Place a layer of sliced potatoes in casserole dish, top with half of hamburger/onion mixture. Salt and pepper to taste (kind of depends on how salty your cheese sauce is - you can always salt it later if it needs it).
  • Repeat layering of potato slices and hamburger mixture (and salt and pepper if desired).
  • Make Cheese sauce:.
  • Melt 3 T butter in saucepan over med-high heat.
  • Add 3 T flour, and the salt and pepper. Stir quickly to blend.
  • Add 2 cups milk; stir with whisk to incorporate butter/flour mixture.
  • Reduce heat, stir till thickened and bubbly.
  • Remove from heat and add shredded cheddar. Stir until cheese melts.
  • Pour cheese sauce over hamburger and potatoes in baking dish. Push potatoes around to let cheese sauce into all of the crevices so it's well coated.
  • Cover and place in oven. Bake for about 1 1/2 hours, till potatoes are tender and top is browned. I like to take off the lid for the last 20 minutes or so to brown the top a bit.
  • Even with the leanest ground beef, this can get little pools of grease on top - I just spoon these off. It doesn't mean the whole thing is greasy - just cheesy.
  • My family members consider generous amounts of ketchup a necessary addition to this dish. I like it fine by itself (ok, maybe a spot of ketchup on the side).

This casserole may upset some mashed potato purists, but take heart: one bite and they'll be won over. The genius of this recipe, besides its utter deliciousness, is that it can be made the day before, or even two. Cook the potatoes, assemble the casserole, wrap tightly and store it in the refrigerator. When dinnertime comes, dust it with the cheese, butter and bread crumbs and bake the whole thing off. 14 tablespoons unsalted butter, softened, and more for the pan
6 pounds Yukon Gold potatoes, peeled and cut into chunks
2 tablespoons plus 1 teaspoon kosher salt
1 1/2 cups sour cream
1 teaspoon black pepper
6 tablespoons finely chopped chives
2/3 cup bread crumbs
2/3 cup grated Parmigiano-Reggiano cheese

Steps:

  • Lightly grease a 9-inch-by-13-inch baking pan.
  • In a large pot, bring the potatoes, 4 quarts water and 2 tablespoons salt to a boil. Boil potatoes until fork tender, about 20 minutes. Drain.
  • Mash potatoes with 10 tablespoons butter, sour cream, 1 teaspoon salt, and pepper. Mash in the chives. Taste and adjust seasoning, if necessary. Spread potatoes into the prepared pan. Cover and refrigerate for up to three days.
  • In a small bowl, combine the remaining 4 tablespoons butter, bread crumbs and cheese. Mix together until it forms coarse crumbs. Crumbs can be refrigerated for three days.
  • Heat the oven to 400 degrees. Sprinkle crumbs over the top of the potato casserole and bake until golden and crisp, 30 to 40 minutes.
