My husband and I have to watch our cholesterol. It is VERY difficult finding any recipe with NO cholesterol, so I had to start experiamenting. 3 Tbsp powdered flax seed (this replaces 3 eggs)
9 Tbsp boiling water (stir flax with water in a cup and let sit 10 min. ( may sit longer, but not less, stir once in a while)
1 1/4 c packed brown sugar
1 c granulated sugar
1/2 tsp salt
1 tsp orange extract (l find mine at the 'bulk store')
1 1/2 c crunchy peanut butter
1/3 c becel (because it is cholesterol free)
1/2 c choc. chips
1/4 c raisins (soak in hot water abt. 10 min., rince and drain, rince and drain)
1/2 c chopped walnuts
2 tsp baking soda
4 1/2 c quick oatmeal
1/3 c all purpose flour
1/3 c whole wheat flour ( you can use all white flour)

Steps:

  • 1. Oven 350. Mix flax seed/water mixture with first six ingredients together thoroughly.
  • 2. Mix in raisins(don't worry about how wet they are, it is actually good for the mix), choc. chips and nuts, till just blended.
  • 3. Mix in, b.soda, oats, and flour, till well blended. I use a big wodden spoon. Using a soup spoon, scoop about two good tablespoons and press together. Flatten on parchment paper-lined cookie sheet. Make cookie the size you want them, because they really won't change much while baking. I cook mine 7 min. and rotate cookie sheet, then bake about another 6-7 min., till lightly brown on edge. Don't overbake!
