Hamburger Steaks with Onion and Mushroom Gravy image

This recipe is an update of the classic Salisbury steak. With additions like smoked paprika in the beef mix and lightly caramelized onions in the gravy, this version will be a new family favorite to enjoy with a side of mashed potatoes.

1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 large egg
1 clove garlic, minced
Kosher salt and freshly ground black pepper
1 pound ground beef (80/20)
2 tablespoons breadcrumbs
1 tablespoon vegetable oil
10 ounces baby bella mushrooms, sliced
2 sprigs thyme, leaves picked and stems discarded
3 tablespoons unsalted butter
1 small onion, thinly sliced
1 clove garlic, sliced
3 tablespoons all-purpose flour
2 cups low-sodium beef broth, hot
2 teaspoons Worcestershire sauce
2 tablespoons fresh parsley, roughly chopped

Steps:

  • For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
  • Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
  • For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
  • Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
  • Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.
  • Turn the patties over a few times to coat in the sauce. Season with salt and pepper and top with the parsley.

1 jar (4-1/2 ounces) whole mushrooms, drained
Hot cooked mashed potatoes

Steps:

  • In a large bowl, combine the egg, bread crumbs, 2 tablespoons soup mix and pepper. Crumble beef over mixture and mix well. Shape into four patties. , In a large cast-iron or other heavy skillet, cook patties over medium heat until a thermometer reads 160°, and juices run clear, 4-5 minutes on each side. Set aside and keep warm., Combine the flour, water, Worcestershire sauce and remaining soup mix until blended; stir into skillet. Add mushrooms. Bring to a boil; cook and stir until thickened, about 5 minutes. Serve sauce with patties and mashed potatoes.

Try this recipe of simple ingredients and enjoy a different take on a ground beef patty, tonight.

1 ½ pounds ground beef (90% lean)
⅓ cup plain dried bread crumbs
1 egg, lightly beaten
1 teaspoon seasoned salt
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
1 tablespoon extra-virgin olive oil
2 cups sliced fresh mushrooms
¾ cup sliced onion
½ red bell pepper, sliced into strips
½ green bell pepper, sliced into strips
salt and ground black pepper to taste
½ cup beef broth

Steps:

  • Combine ground beef, bread crumbs, egg, seasoned salt, Worcestershire sauce, and garlic in a large bowl. Use your hands to lightly mix and combine the ingredients. Form into 4 equally sized patties and set aside.
  • Heat olive oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add mushrooms, onion, and bell peppers. Season with salt and pepper. Stir the vegetables quickly, moving around in the skillet until the onion is just beginning to soften, 4 to 5 minutes. Remove the vegetables from the skillet and keep warm.
  • Place beef patties in the same skillet and cook until browned, about 3 minutes per side. Add the vegetables on top of and around the patties. Pour in beef broth. Reduce heat to medium and cook until patties reach an internal temperature of 160 degrees F (71 degrees C) when tested with an instant-read thermometer, 4 to 5 minutes more.
  • Transfer the patties to serving plates and top with the vegetables. Allow liquid in the skillet to boil and reduce to about 1/2 cup. Drizzle 2 tablespoons of the skillet sauce over each serving. Serve warm.

2 tablespoons steak sauce
1 envelope (1 ounce) onion soup mix (from 2-ounce package)
2 large Bermuda or other sweet onions, cut in half, then thinly sliced and separated (6 cups)
2 tablespoons packed brown sugar
1 tablespoon balsamic vinegar

Steps:

  • Heat coals or gas grill for direct heat. Spray two 18x12-inch sheets of heavy-duty foil with cooking spray.
  • Brush beef patties with steak sauce; sprinkle with half of the soup mix (dry). Place half of the onions on center of each foil piece. Sprinkle with remaining soup mix, the brown sugar and vinegar. Fold foil over onions so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • Cover and grill packets and beef patties 4 to 6 inches from medium heat 10 to 15 minutes, turning patties and rotating packets 1/2 turn once or twice, until meat thermometer inserted in center of patties reads 160°F. 1 eggs or 1 egg substitute
1/4 cup breadcrumbs
2 (2 ounce) packages onion soup mix
1 teaspoon Worcestershire sauce
1/2 cup flour
1 teaspoon salt (optional)
1 teaspoon pepper
1 tablespoon olive oil
4 medium thinly sliced onions
3 cups beef broth, diluted slightly

Steps:

  • In a large bowl mix together beef, egg, bread crumbs, 1 package soup mix, and Worcestershire sauce. Form into 8 balls and flatten into patties.
  • Mix flour salt and pepper.
  • Dredge patties in flour mixture.
  • Heat large skillet over med-high heat. Fry the patties 4 minutes each side, then remove patties to a platter.
  • Heat oil and sauté onions until translucent, about 10 minutes.
  • Add the rest of the flour mixture to onions and stir to coat.
  • Mix broth and last package of onion soup and add to the onions. Stir well.
  • Return the patties to the pan, cover and reduce heat to low.

  • 3. Cover. Cook on Low 4 to 6 hours.

1 pkg lipton onion soup mix
2 eggs
1/2 tsp fresh ground pepper
1 Tbsp a-1steak sauce
1 tsp season salt
2 Tbsp worcestershire sauce
1/2 c italian bread crumbs
1/2 c milk
1/4 c olive oil - more if needed
3 Tbsp butter, divided
2 lb cleaned and sliced portabella mushrooms
2 clove minced garlic
2 large onions, thin sliced
GRAVY
2 Tbsp butter
1/3 c flour
2 c beef broth
1 Tbsp worcestershire sauce
1 Tbsp kitchen bouquet
1 1/2 tsp better than buillion beef paste or beef buillion
1 Tbsp sherry ( optional )

Steps:

  • 1. In a large bowl, crumble meat - to this add soup mix, salts, pepper, egg, crumbs, milk, A-1 steak sauce, worcestershire sauce and mix just until combined. Make into desired size patties.
  • 2. Preheat oven to 375 degree F. Grease a 9 x 13 baking dish. In a large skillet, over med high heat add oil and 3 tablespoons butter. Once butter has melted into the oil, carefully add your burgers. Cook until browned well on each side.
  • 3. Place evenly into prepared dish.
  • 4. In the same skillet with juices, saute the mushrooms until starting to brown, add the garlic nowcand cook another minute or two.
  • 5. Spoon mushrooms over the burgers evenly.
  • 6. Melt 1 tablespoon butter in same skillet and cook onions until golden. Spoon over the mushrooms. Preheat oven to 375 degree F.
  • 7. In a med bowl, whisk together broth, kitchen bouquet, worcestershire sauce and buillion. To the same skillet, melt 2 tablespoons butter and to this whisk in the flour, stirring constantly for at least 1 minute. To this slowly whisk in the broth mixture, making sure to smooth out any lumps. Stir in sherry if using. Cook until becomes a gravy thickness. Doesn't take but a minute.
  • 8. Pour this evenly over the steaks. Cover tightly with foil and bake for 40 - 45 minutes. Should be good and bubbly.
  • 9. Remove foil and serve while good and hot, along side of whipped potatoes or noodles. The rich, tasty gravy would be great with either. Enjoy!

2 1/2 lb ground beef
2 eggs, beaten
1 onion, chopped
1/2 bell pepper, chopped
2 clove garlic, minced
1 Tbsp cajun seasoning
2 Tbsp worcestershire sauce
1/2 c breadcrumbs
4 slice american cheese
MUSHROOM ONION GRAVY
1 Tbsp oil
1 onion, chopped
3 clove garlic, minced
1/2 c sliced mushrooms
1 can(s) golden mushroom soup
1 can(s) beef broth
1/2 c water
1/2 tsp cayenne pepper

Steps:

  • 1. Mix all ingredients for the patties (except cheese) in a large bowl. Use your hands. It is messy, but the easiest way to do it.
  • 2. Once you have mixed the beef ingredients thoroughly, form four large, flat patties.
  • 3. Cook patties to your liking in a large nonstick skillet over medium heat. I don't cook them all the way done. They finish cooking in the oven.
  • 4. Remove patties from skillet. Place them in a 9x13-inch casserole dish. Place cheese slices over the patties right after you remove them from the heat.
  • 5. For the gravy: In the skillet that you cooked the ground beef in, add the oil. Heat oil over medium heat.
  • 6. Add the onion and garlic. Saute for about 10 minutes until the onions are tender. Add the mushrooms and saute for a few minutes until tender.
  • 7. Add the mushroom soup and mix well.
  • 8. Add the beef broth and water and stir until all ingredients are combined.
  • 9. Let the gravy simmer over medium heat for about 15 minutes.
  • 10. Add the cayenne and remove from heat.
  • 11. Pour the gravy over the hamburger patties. Cover with foil. Place in a preheated 300 degree oven. Bake for 30 minutes.

1 1/4 c water
1/2 c milk
2 tsp beef bouillon granules
1 Tbsp worcestershire sauce

  • 1. Combine ground beef, garlic powder, onion powder and black pepper in large bowl. Form into six patties. In a large skillet, at medium heat, brown the patties on both sides.
  • 2. Remove the patties from skillet and drain off the remaining fat. Add the butter to the skillet and when melted; add the sliced onions and saute at medium heat until softened and browned slightly.
  • 3. Stir in the can of cream of mushroom soup, water, milk, beef bouillon granules and worcestershire sauce. Add a dash of pepper if desired. Return beef patties to skillet and spoon the sauce over each. On low heat, covered; simmer for about 20 to 30 minutes.
  • 4. Serve over mashed potatoes, rice or noodles of your choice.

  • Saute onion and green pepper in skillet until tender.
  • Stir in tomato sauce, Worcestershire, and dry mustard; bring to a boil.
  • Add beef patties to skillet; cover, reduce heat, and simmer 15 minutes.

An old fashioned hamburger steak recipe topped with cream of mushroom. Serve with some warm mashed potatoes and your favorite green vegetable. Our family loves this. Makes a great cheap meal!

3 pounds ground beef
25 saltine crackers, crushed
1 cup milk
½ teaspoon black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon Italian seasoning
3 (10.75 ounce) cans condensed cream of mushroom soup
1 (8 ounce) can mushrooms, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
  • Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

4 (4 to 6-ounces each) lean ground beef patties
2 tablespoons steak sauce
1 ounce onion soup mix (from 2-ounce package)
2 large Bermuda or other sweet onions, cut in half, then thinly sliced and separated (6-cups)
2 tablespoons brown sugar, packed
1 tablespoon balsamic vinegar

Steps:

  • Heat coals or gas grill for direct heat. Spray two 18x12-inch sheets of heavy-duty foil with cooking spray. Brush beef patties with steak sauce; sprinkle with half of the soup mix (dry). Place half of the onions on center of each foil piece. Sprinkle with remaining soup mix, the brown sugar and vinegar. Fold foil over onions so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion. Cover and grill packets and beef patties 4 to 6 inches from medium heat 10 to 15 minutes, turning patties and rotating packets 1/2 turn once or twice, until meat thermometer inserted in center of patties reads 160ºF. Place packets and patties on plates. Cut large X across top of each packet; fold back foil. Notes: If you can't find the ground beef patties at your market, you can make your own with 1 pound lean ground beef. Shape into 4 patties, each about 1/2 inch thick. These patties and onions can be served in sandwich buns. Just add your favorite condiments such as additional steak sauce, mustard, pickles, tomatoes, shredded lettuce and cheese.

1 1/2 to 2 lbs. lean ground beef
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1 medium onion, cut into thin slices then separated into rings
1 - 2 teaspoons oil, if needed
Salt and pepper to taste
2 tablespoons flour
1 tablespoon Worcestershire sauce
2 1/2 cups beef broth

Steps:

  • In a mixing bowl, mix together the meat, black pepper, and garlic salt. Divide mixture into 6 even-sized balls of meat then flatten into patties about 1/2-inch thick. In a large skillet, cook patties over medium/medium-high heat until done, 4-5 minutes per side. Remove patties from skillet; keep warm. Reduce heat to medium; add the onions to the skillet and a teaspoon of oil if needed to saute. Sprinkle lightly with a little salt and pepper. Saute onions until lightly browned and tender, but not mushy. Remove onions from skillet; keep warm. Add flour to skillet and a teaspoon of oil if needed to blend. Whisk and cook for 1 minute. Add the Worcestershire sauce and about 1 cup of the broth, whisking vigorously to blend until smooth. (You may need to remove it from heat to do this.) Add remaining broth and cook for about 10 minutes or until reduced by half and thickened, whisking frequently. Return steaks to the skillet; spoon the gravy over the meat. Scatter the onions on top of the steaks. Heat until warmed through. Remove to a serving dish and serve immediately with mashed potatoes or other potato of choice.

6 fresh mushrooms, sliced

1/2 medium potato, shredded
1 large egg, beaten
1/4 cup ketchup
1 tablespoon all-purpose flour
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
8 slices bacon

Steps:

  • Melt butter in a large skillet; add onion and mushrooms, and saute over medium heat 2 to 3 minutes or until tender.
  • Remove from skillet.
  • Combine ground beef and next 7 ingredients in a large bowl; shape into 8 patties.

2 slices bread, torn (I put them in my mini food processor and make crumbs)
1 egg
3/4 cup onion, chopped (divided)
3 cloves garlic, minced (or to taste)
salt and pepper
3 tablespoons cooking oil
3 tablespoons flour

Steps:

  • In a medium sized bowl, mix together all ingredients.
  • Form patties and fry over medium heat until no longer pink inside.
  • Remove from the skillet and set aside.
  • In skillet heat about 3 TBSP cooking oil, add 1/4 cup chopped onion and cook til browned.
  • Add 3 Tbsp flour and brown til the color of a penny.
  • (I think the darker the roux the better the gravy) Add water till desired thickness.
  • Place patties in the gravy and let simmer for 10 minutes stirring occasionally to prevent sticking.
