Meat Loaf Muffins image

Serve these tangy meat loaf muffins for dinner or slice them up for a take-along sandwich lunch. They're just as flavorful after freezing. -Cheryl Norwood, Canton, Georgia

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup barbecue sauce
1-1/2 pounds lean ground beef (90% lean)
3 tablespoons ketchup
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

1/2 pound ground beef
1 small onion, finely chopped
2-1/2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup 2% milk
1/2 cup butter, melted
2 large eggs
1 teaspoon prepared mustard
2 cups shredded cheddar cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the ketchup, milk, butter, eggs and mustard; stir into the dry ingredients just until moistened. Fold in the beef mixture and cheese. , Fill greased miniature muffin cups three-fourths full. Bake at 425° until a toothpick comes out clean, 15-18 minutes. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.

1 pound ground beef
1 small onion, chopped
2 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1 teaspoon salt
¾ cup ketchup
¾ cup milk
½ cup butter, melted
2 eggs, beaten
1 teaspoon prepared yellow mustard
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line 24 muffin cups with paper cups and lightly coat with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until the beef is completely browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Mix flour, sugar, baking powder, and salt together in a large bowl. Stir ketchup, milk, butter, eggs, and mustard together in a separate bowl; add to flour mixture and stir until pink in color. Mix ground beef mixture into the flour mixture; spoon into prepared muffin cups to completely filled.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Healthy, quick & delicious burger you can whip up in less than 15 minutes. I recommend using 93% lean ground beef & serving it on whole wheat double fiber english muffins to make it extra healthy. Nice alternative to the greasy burger, but still satisfies that burger craving!

1 lb extra lean ground beef
salt
pepper
1 teaspoon Worcestershire sauce
2 teaspoons garlic powder
4 slices low-fat American cheese
4 whole wheat English muffins

Steps:

  • Season the ground beef with salt and pepper.
  • Add the Worcestershire sauce and garlic powder. Be careful not to over mix, as this may cause beef to become tough.
  • Form into 4 patties.
  • Spray non-stick cooking spray on frying pan. Fry each burger over medium high heat, approximately 3 minutes each side (do not press down).
  • While beef is frying, toast english muffins.

12 mini kosher dill pickles

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Cool 5 minutes; stir in Worcestershire sauce, garlic salt and cheese.
  • In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.

Who needs drive-through when you can have these cute and easy cheeseburger cups ready in 45 minutes? This fun muffin-tin meal is sure to satisfy!

1 tablespoon butter, melted
6 regular-size burger buns, split
3 slices thick-cut bacon, chopped
1 lb ground beef
1/2 cup diced yellow onion
1/2 teaspoon seasoned salt
4 tablespoons ketchup
6 slices American cheese, each cut in four pieces
1 teaspoon sesame seed
2 tablespoons dill pickle relish
Yellow mustard, if desired
Sriracha sauce, if desired

Steps:

  • Heat oven to 350°F. Brush 12 regular-size muffin cups with melted butter. Press half of a bun, cut side up, into each muffin cup, pressing to 1/4-inch thick; set aside.
  • Meanwhile, in 12-inch nonstick skillet, cook bacon over medium heat until crisp; with slotted spoon, transfer to paper towel-lined plate to drain. Pour off and discard all but 1 tablespoon drippings. Add beef, onion and seasoned salt to drippings in skillet; heat to medium-high heat. Cook 5 to 7 minutes, stirring frequently, until beef is brown and cooked through; drain.
  • Divide mixture evenly among muffin cups. Gently press mixture down into cups. Top each with 1 teaspoon ketchup. Divide cheese, then sesame seed among muffin cups.
  • Bake 7 to 9 minutes or until cheese is melted. Immediately top with cooked bacon, followed by relish and mustard or Sriracha sauce, as desired.
