This hamburger soup with Macaroni takes the classic macaroni soup and makes it into a full meal by adding elbow macaroni! The whole family is going to love this soup!

1 1/2 lbs lean ground beef
1 medium white onion diced
2 tsp minced garlic
1 28 oz can diced tomatoes
1 10.75 oz can condensed tomato soup
4 cups beef broth
1 tsp dried thyme
2 bay leaves
2 cups frozen vegetables
1 tsp white sugar if your tomatoes are too acidic
1/2 tsp black pepper
2 cups elbow macaroni cooked

Steps:

  • Fry the ground beef and onions together in the bottom of a large soup pot until the ground beef is cooked and the onions are translucent. Add in the garlic and fry until brown. Drain the fat and return the pot to the stove.
  • Stir in the tomatoes, tomato soup, beef broth, bay leaves, thyme, frozen vegetables and pepper.
  • Simmer the soup on low heat until the meat has softened and the vegetables are cooked, around 40 minutes.
  • Remove the bay leaves. Stir in the cooked macaroni and let it warm up. Ladle into bowls and serve.

1 ½ pounds ground beef
1 medium onion, chopped
3 (14.5 ounce) cans diced tomatoes
3 (14 ounce) cans beef broth
3 (14 ounce) cans water
6 medium carrots, cut into bite-sized pieces
6 ribs celery with leaves, chopped
6 sprigs fresh parsley, chopped
1 bay leaf
1 teaspoon salt
1 teaspoon chili powder, or more to taste
½ teaspoon dried thyme
2 cups uncooked elbow macaroni

Steps:

  • Heat a large soup pot over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly and onion is translucent, 5 to 7 minutes. Drain and discard grease.
  • Add diced tomatoes, beef broth, water, carrots, celery, parsley, bay leaf, salt, chili powder, and thyme. Bring to a simmer and cook for 3 to 4 hours.
  • Add macaroni and cook, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes.

True comfort food for cold winter nights. I searched the website for this recipe and when I didn't find it I came up with this. Quick, easy and delicious, even the hubby liked it. It's an all in one dish. Just add fresh crusty bread!

1 lb hamburger
3 celery ribs, chopped
1/2 onion, diced
8 ounces pasta, cooked in salt (elbow or shell)
2 cans tomato soup (undiluted)
1 (14 1/2 ounce) can peeled/diced tomatoes
1 cup frozen green beans
1 cup frozen white corn
1 teaspoon salt, to taste
1/2 teaspoon pepper, to taste
1 teaspoon chili powder
2 teaspoons sugar
1/4 cup water (or to desired consistency)

Steps:

  • Brown hamburger with onion and celery.
  • Drain.
  • Cook pasta in dutch oven while browning hamburger.
  • Add green beans and corn during last 3-5 minutes.
  • Drain.
  • Return pasta to dutch oven and add hamburger mixture.
  • Add salt, pepper, chili powder, sugar and water.
  • Heat through.
  • Serve with shredded cheddar cheese (optional) and crusty french bread.

A fairly quick and easy hamburger soup with macaroni that I just threw together. This recipe freezes well. The soup will thicken upon standing.

1 pound lean ground beef
4 ½ cups water
½ (32 fluid ounce) container beef broth
1 (28 ounce) can crushed tomatoes
1 (15.25 ounce) can whole kernel sweet corn (such as Green Giant® Niblets®), undrained
1 cup frozen lima beans
¾ cup barley
2 stalks celery, thinly sliced
1 medium onion, chopped
1 cube beef bouillon
1 teaspoon ground paprika
½ teaspoon Italian seasoning
1 bay leaf
2 cups elbow macaroni
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain off any excess grease. Transfer beef to a slow cooker.
  • Add water, broth, tomatoes, corn, lima beans, barley, celery, onion, bouillon, paprika, Italian seasoning, and bay leaf to the slow cooker.
  • Cook on Low for 6 hours.
  • Just before serving, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • Add cooked macaroni to the soup. Stir until combined and heated through. Serve immediately garnished with parsley.
