1 lb hamburger
1 onion, diced
1 teaspoon crushed garlic
1 tablespoon olive oil
6 cups beef stock
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can kidney beans, rinsed
1 (8 ounce) can tomato sauce
1 cup uncooked macaroni
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried basil
1 teaspoon Worcestershire sauce

Steps:

  • In a large dutch oven or other soup pot, saute onion and garlic in oil until soft, about 10 minutes.
  • Add meat and cook until no pink remains.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat to medium-low and cook an additional 15-20 min until macaroni is cooked through and flavors have had time to meld.

1 lb lean ground beef
1 cup chopped yellow onion
2 garlic cloves, minced
1/2 green bell pepper, chopped
1 teaspoon oil, if needed
1 (14 1/2 ounce) can diced tomatoes with juice
6 cups beef stock or 6 cups beef broth
1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
1 teaspoon dried basil
1 teaspoon salt
pepper, to taste
1 cup uncooked elbow macaroni
1 (15 ounce) can red kidney beans, drained and rinsed

Steps:

  • In a large soup pot over medium heat, combine the meat, onion, garlic, and bell pepper.
  • Cook, breaking the meat up using a spoon, until the meat is browned and vegetables are tender (about 10 minutes).
  • Add in the oil if needed to prevent mixture from sticking.
  • Add in the rest of the ingredients; bring to a boil.
  • Lower heat and simmer, uncovered, stirring occasionally, for about 15-20 minutes or until macaroni is tender and flavors are blended.
