GLAZED HAM WITH ROASTED APPLES

1 11-to-15-pound whole smoked ham
3/4 cup apple butter
1/2 cup dijon mustard
1/4cup packed light brown sugar
1/4cup apple cider vinegar
1/4teaspoon ground cloves
8 small apples, halved

Steps:

  • Preheat the oven to 325 degrees F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat-side up, in a large roasting pan. Bake 1 hour, 30 minutes.
  • Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
  • Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.

6 large red apples, unpeeled
8 ounces cooked ham, cubed small
2 tablespoons butter
1/3 cup raisins (brown or golden)
1/3 cup pecans, chopped
3 tablespoons brown sugar
1/2 cup apple juice (may need up to 1 cup)

Steps:

  • Cut the tope off the apples and scoop out the core with some of the fruit, but be sure to leave a thick shell to hold the stuffing.
  • Preheat the oven to 350 degrees.
  • Put approximately 1 cup of the removed apple fruit in a mixing bowl and combine it with the ham, butter, raisins, pecans and brown sugar; mixing the ingredients well.
  • Spoon this mixture into the cored apples and place them in a baking dish.
  • Pour the juice over the apples and bake for 35 to 40 minutes, basting occasionally with the juice.

1 pound, 1 inch thick ham steak
2 tablespoons butter
1 granny smith apple, peeled, cored, finely diced
1 teaspoon Dijon mustard
1/4 cup hard or apple cider
1/4 cup heavy cream, optional
Salt and freshly ground black pepper

Steps:

  • Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
  • Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

5 cups 1/2-inch cubes crustless firm white bread (about 7 ounces)
5 tablespoons butter
4 cups chopped onions
2 cups chopped celery
4 cups small cubes peeled Granny Smith apples
2 1/3 cups small cubes Black Forest ham
2 tablespoons chopped fresh Italian parsley
1 tablespoon minced fresh thyme
1 tablespoon minced fresh sage
1 tablespoon minced fresh marjoram
1/2 teaspoon minced fresh rosemary
1/4 teaspoon ground nutmeg
1 1/4 cups low-salt chicken broth
2 large eggs

Steps:

  • Preheat oven to 350°F. Bake bread cubes on large rimmed baking sheet until dry and beginning to brown, about 12 minutes. Place bread in large bowl and cool.
  • Melt 4 tablespoons butter in heavy large skillet over high heat. Add onions and celery; sauté until tender and beginning to brown, about 10 minutes. Add apples; sauté until tender and beginning to brown, about 10 minutes. Add mixture to bread. Melt 1 tablespoon butter in same skillet. Add ham; sauté 5 minutes.
