RANCH SALAD BOATS WITH BACON



Ranch Salad Boats with Bacon image

1/4 cup buttermilk
1/4 cup sour cream
1/4 cup mayonnaise
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh dill
2 teaspoons fresh lemon juice
1 to 2 dashes hot sauce
Kosher salt and freshly ground pepper
4 slices thick-cut bacon, cut into 1/2-inch pieces
12 romaine lettuce heart leaves
1 1/2 cups cherry tomatoes, quartered
2 radishes, thinly sliced
1 Persian cucumber, thinly sliced

Steps:

  • Make the dressing: Combine the buttermilk, sour cream, mayonnaise, 2 tablespoons each chives and dill, the lemon juice and hot sauce in a blender. Blend until very smooth. Season with salt and pepper. Refrigerate until ready to use.
  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until browned and crisp, 5 to 7 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain.
  • To serve, arrange the lettuce leaves on a platter and top with the tomatoes, radishes, cucumber and bacon. Season with salt and pepper. Drizzle most of the dressing over the salad and serve the remaining dressing on the side. Sprinkle with the remaining 1 tablespoon each chives and dill.

3/4 cup mayonnaise
1/2 cup finely chopped celery
1/4 cup sliced green onions
2 tablespoons minced fresh chives
1 tablespoon honey
2 teaspoons spicy brown mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt
5 cups diced fully cooked ham or turkey
1/3 cup chopped pecans and almonds, toasted
Slider buns, split, optional

Steps:

  • Mix first 8 ingredients. Stir in ham. Refrigerate, covered, until serving., Stir in pecans before serving. If desired, serve on buns.

So refreshing and loaded with fresh fruit flavors. Ready in minutes. A quick and healthy lunch or great addition to your brunch table. Has a very colorful presentation. The recipe is also very interchangeable. You can exchange ham (I use black forest ham) for chicken or turkey and use a mixture of berries like raspberries blue berries and strawberries. If you prefer a different type of cheese use it.

1 1/2 cups cooked chicken or 1 1/2 cups cooked turkey
2 medium nectarines or 2 medium peaches, peeled, sliced
6 cups mixed salad greens
1 pint strawberries, hulled, sliced or 1 pint mixed berry, raspberries, blue berries and strawberries
1 cup swiss cheese, shredded
1/4 cup orange juice
2 tablespoons canola oil
1 tablespoon white wine vinegar
1/2 teaspoon poppy seed
1/4 teaspoon salt

  • Mix all salad ingredients in serving bowl; toss well.
  • Whisk together all dressing ingredients in small bowl. Pour dressing over salad; toss to coat.

OK, this might seem like it's way to fussy, but hey, treat your honey to something festive! This is a 1968 recipe, if that is a clue.

1 small pineapple, chilled
1 cup cubed cooked ham
1/2 cup sliced celery
1 tablespoon chopped green pepper
1/4 cup mayonnaise (or your choice of salad dressing)
1/2 teaspoon prepared mustard

Steps:

  • Cut pineapple in half lengthwise.
  • Remove hard core.
  • Cut around edge of fruit, leaving a rim about 1/2 inch thick.
  • Cut loosened fruit crosswise; remove and dice.
  • Combine 1 cup of the diced pineapple with ham, celery, and green pepper.
  • Blend mayonnaise and mustard; add to ham mixture.
  • Toss to coat ingredients.
  • Spoon into pineapple boats.
  • (The leftover fresh pineapple is delicious mixed with cottage cheese for another meal).
