CREAMY HAM, PEA, & POTATO CASSEROLE
A Fantastic Ham, Potato, and Pea casserole in a creamy white sauce. Perfect for using up that leftover Holiday Ham! Pure Comfort food!

Steps:
- In a large skillet, over medium heat, melt 1/4 cup of butter. Using a whisk, add 1/2 cup of flour and whisk briskly to create a thick paste.
- Slowly add in 2 1/2 cups of milk, whisking continually, until thick and creamy. If sauce is too thick add in more milk until the creamy consistency of gravy.
- Add in 1/2 tsp. of salt and 1/2 tsp, coarse black pepper.
- Spray a deep, 4 quart, baking dish, with cooking spray.
- Place 1/3 of the sliced, drained potatoes in the bottom of the baking dish. Place 1/2 the ham slices or 1 1/2 cups of diced ham on top of the potatoes. Sprinkle half the can of drained peas over the ham.
- Pour 1/3 of the white cream sauce over the top of the layers.
- Repeat the layers again. 1/3 of sliced potatoes, other half of the ham, other half of the can of peas. 1/3 of the cream sauce.
- Top with last layer of potatoes and cream sauce. Ending with cream sauce.
- Sprinkle with Paprika.
- Cover and bake in a 350°F oven for one hour. Remove cover and brown for 10 minutes.
- Serve Immediately.

- Heat oven to 450°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In large bowl, place both packages of potatoes and sauce mix (from scalloped potatoes boxes), the ham and frozen peas; pour boiling water and whipping cream over mixture, and stir. Stir in 1 tablespoon of the chives. Pour mixture into baking dish; spread evenly.
- Sprinkle cheese over potato mixture. Bake 33 to 35 minutes or until top is golden brown and potatoes are tender. Let stand 5 minutes (sauce will thicken as it stands). Top with remaining 1 tablespoon chives.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

- Boil the potatoes, carrots and peas to cook, then drain.
- Lightly brown Spam and onions in butter.
- Stir in flour.
- Stir in milk.
- Cook until thickened slightly.
- Add soup and stir well.

- 1. Boil cubed potatoes, onions in salted water til tender. Prepare white sauce as follows.
- 2. Melt butter in sauce pan, add flour and whisk til smooth, slowly add milk & whisk til thickened heated through. Add salt & pepper to taste.

HAM, PEAS AND POTATO CASSEROLE RECIPE

- Add chopped celery and salt to boiling water. Cook for 10 minutes. Add potatoes and cook 15 minutes longer. Drain and reserve liquid. Add enough milk to potato water to make 1 1/2 cups. In a large saucepan melt butter. Add onion and cook on low heat until it turns yellow. Add flour and blend well. Gradually add liquid, stirring constantly until sauce thickens. Boil for 1 minute. Remove from heat and add ham, parsley, celery, potatoes and peas. Spoon into greased 1 1/2 quart casserole dish and top with grated cheese. Bake Uncovered at 325 degrees for about 30 minutes or until hot and bubbly. If refrigerated before baking, bake at 350 degrees for 45 minutes.

- Preheat oven to 350 F degrees.
- Combine bread, onion, parsley, poultry seasoning, salt and 1/2 cup milk.
- Spoon into a greased 1 1/2 qt shallow baking dish.
- Drain peas,[b]reserving liquid[/b], and spread over bread mix and add ham.
- Melt butter in a saucepan, remove from heat and stir in flour, mustard and remaining salt.

- Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a large baking dish with olive oil.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until halfway cooked, about 10 minutes. Drain and place in the prepared baking dish.
