Ham, Cheese and Potato Salad image

Enjoy this hearty salad packed with ham, Muenster cheese, potato, egg, radish and onion - a delicious dinner.

4 medium red potatoes
3 large eggs
1 cup (6 oz.) chopped cooked ham
4 oz. Muenster cheese, cubed
1/4 cup sliced radishes
2 green onions, sliced
1/2 cup purchased ranch salad dressing
1/4 cup purchased honey-mustard salad dressing
1/4 teaspoon celery seed

Steps:

  • Place potatoes in medium saucepan; add enough water to cover. Bring to a boil. Reduce heat; cover and simmer 20 minutes or until tender. Drain; cool 20 minutes or until completely cooled.
  • Meanwhile, place eggs in single layer in saucepan. Add enough cold water to cover by 1 inch. Bring to a boil. Immediately remove from heat; cover and let stand 15 minutes. Drain; rinse with cold water. Place eggs in bowl of ice water; let stand 10 minutes.
  • Peel eggs; cut into small pieces. Place in large bowl. Peel potatoes; cut into small pieces. Add to eggs in bowl. Add ham, cheese, radishes and onions; mix gently.
  • In small bowl, combine all dressing ingredients; blend well. Pour dressing over potato mixture; mix well. Serve immediately, or cover and refrigerate until serving time.

Potato salad is a must on a cookout menu and we really liked this twist. The addition of peas gives the side dish a slight sweetness. Ham and cheese make this a hearty potato salad. This could be a side or even a meal.

8 medium Yukon Gold potatoes, peeled and diced (about 3 lbs)
4 hard boiled eggs peeled and diced
1 c English peas, thawed
1 c cooked, diced ham
1 c shredded cheddar cheese
1 1/2 c real mayonnaise
1 tsp Mrs. Dash table blend
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder

Steps:

  • 1. Boil potatoes until just done (about 12 minutes). Be careful not to overcook.
  • 2. Drain potatoes. Cool potatoes completely and chill in the refrigerator for an hour or so.
  • 3. Add all ingredients to a bowl.
  • 4. Thoroughly mix all ingredients together and chill until ready to serve.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.
  • Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

2 large potatoes (peeled and diced into 3/4" cubes)
10 ounces low-fat plain yogurt (or substitute light sour cream)
1 teaspoon kosher salt ((adjust to taste))
2 teaspoons hot sauce ((or to taste))
1 lemon (juiced)
3/4 pound First Street Hickory Smoked Ham (diced into small cubes)
3/4 pound First Street Sharp Cheddar Cheese (diced into small cubes)
1 bunch green onions (sliced thin)

Steps:

  • Place cubed potatoes in a medium pot, and cover with water. Add about a teaspoon of salt, and bring to a boil. (Covering the pot will make them boil faster.) Boil approximately 10 minutes or until potatoes are easy to cut with a fork. Drain and rinse cooked potatoes with cold water.
  • While potatoes cook, dice your other ingredients. Whisk together the yogurt, salt, hot sauce, and lemon juice until smooth. Add cooked potatoes, ham, cheese, and green onions. Stir gently to coat with yogurt mixture. Add additional salt or hot sauce to taste.
  • Serve immediately or store in refrigerator until ready to enjoy.

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. ½ cup butter, melted

1 cup Miracle Whip light
1/2 cup plain nonfat yogurt
2 tablespoons Dijon mustard
1 teaspoon celery seed

8 ounces low-fat cheddar cheese, cubed
8 ounces monterey jack cheese, cubed
2 cups cooked ham, diced
3/4 cup tomatoes, chopped
1/4 cup green onion, sliced

Steps:
