8 ounces dried baby lima beans
2 cups chopped onions
2 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-1/2 cups cubed fully cooked lean ham
1 cup sliced fresh carrots (1/4-inch slices)
1/2 cup water
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh parsley
1/2 teaspoon pepper

Steps:

  • Place lima beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discard liquid., In a Dutch oven coated with cooking spray, cook onions and garlic until tender. Stir in the broth, ham, carrots, water, jalapeno, parsley, pepper and lima beans. Bring to a boil. Reduce heat; cover and simmer for 50 minutes or until beans are tender.

1 lb dried lima beans
8 cups water
1 lb ham steak, cubed
2 tablespoons butter
1/2 cup onion, diced
1 carrot, peeled and sliced
1 stalk celery, sliced
2 large potatoes, peeled and halved
1 bay leaf
1 teaspoon salt
1 dash pepper

Steps:

  • Rinse and sort beans before adding to a pot of water and bringing to boil for 3 minutes.
  • Set aside to soak for 1 hour.
  • While beans are soaking, melt butter in large soup pot.
  • Saute onions, carrots, and celery for 3-5 minutes.
  • Add 8 cups water, bay leaf, salt and dash of pepper.
  • Add halved potatoes.
  • Drain lima beans and add to pot.
  • Bring to a boil and then cover and reduce heat to medium low.
  • Simmer for 1 1/2 to 2 hours or until beans are tender.
  • Add cubed ham during last half hour.
  • Mash the potato halves to thicken the stock.
  • Salt and pepper to taste.

1 (16 ounce) package dried lima beans
2 quarts water
1 ham bone with meat
1 large onion, sliced
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce
1 teaspoon dry mustard
½ teaspoon salt

Steps:

  • Place lima beans in a large bowl and cover with several inches of water; soak 8 hours to overnight.
  • Bring water, ham bone, and onion to a boil in a pot. Reduce heat, cover, and simmer until onion is tender, about 1 hour.
  • Drain and rinse lima beans and add to the pot with the ham bone. Add brown sugar, Worcestershire sauce, hot sauce, dry mustard, and salt. Simmer, covered, about 2 hours. Uncover and continue simmering soup until beans are tender, about 30 minutes more.
  • Remove ham bone from soup; cut the meat into bite-sized pieces. Discard bone and return meat to the soup.

Lima's are one of my favorite beans. Might be because my Gram would always make a big pot with ham, and she always served them with yummy fried potatoes in an iron skillet...this is one of my favorite things to eat on a cold winters eve..

6 c soaked large white lima beans (1 pound dried
2 qt chicken stock
2 bay leaves
1 meaty ham bone
a pinch of thyme and oregano
4 slice thick-cut smoked bacon, chopped
1 large onion, chopped
3 celery stalks, chopped
1 clove garlic chopped
3 large carrots, chopped
1 c ham, chopped
2 large potatoes, peeled and cut into 1-inch pieces
salt and pepper to taste

Steps:

  • 1. Soak beans overnight however you like, I prefer the stove top/oven method (see Soaked and Cooked Tender Beans). Drain and put aside. Now if you are in a hurry, 4 -15 ounce cans will do, just be sure to rinse well.
  • 2. In a large stockpot, simmer the ham bone in the stock along with the bay leaves, thyme and oregano for at least a couple of hours, the longer the better. It is ready when the meat falls off. Remove bone and ham from the pot and place on a platter discarding the bone. When cool to touch, shred or tear the ham into bite size pieces. Put aside.
  • 3. In a skillet, fry the bacon until fully cooked. Remove bacon with a slotted spoon and set aside. Add onion, celery, garlic and carrots to bacon grease and sauté over medium heat until onions are translucent. Remove vegetables with the slotted spoon and add to the stockpot.
  • 4. Add the limas, ham to the pot and bring to a boil. Add the potatoes, bacon, salt and pepper to taste, and bring back to a boil. Skim off any foam that rises to the top. Reduce to a slow simmer; cover and cook on low for about 45 minutes or until beans are tender and begin to break down.
  • 5. I serve it with cornbread...mmmm!
  • 6. Soak and cook beans: I prepare dried beans two ways. When I think ahead I cook them in a slow cooker overnight with seasonings, on a warm setting and then a few hours the next day on low. Or if I forget, I use the stove-top/oven method that does the same in a couple of hours. The oven seems to work better than using just the stove, making a faster, tender pot of beans. Here's how: cover the washed beans with about 2-inches of water in a dutch oven with a tight fitting lid. Preheat oven to 325 degrees F. Add your seasonings and heat on the stove over high heat until the water just starts to simmer. Place in the oven and cook for 90 minutes. Stir and check the tenderness of the beans. If needed, cook another 15 minutes or until beans are tender for your recipe. Drain and you're ready to go.

3 (3.5 ounce) links Italian sausage, casings removed
1 large meaty ham bone or 4 smoked ham hocks
16 ounces dry lima beans
1 (16 ounce) package dried navy beans
2 (14.5 ounce) cans stewed tomatoes
1 (6 ounce) can tomato paste
1 onion, chopped
4 stalks celery, chopped
4 carrots, sliced
4 cloves garlic, minced
¼ cup chopped fresh parsley
3 bay leaves
¼ cup chopped fresh chives
2 tablespoons chopped fresh basil
6 green onions, chopped
1 teaspoon dried thyme
1 teaspoon mustard powder
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons Worcestershire sauce
3 tablespoons chicken bouillon powder
1 (12 fluid ounce) can or bottle beer

Steps:

  • In a large soup pot, brown the Italian sausage; drain off fat. Add ham bone (or ham hocks), lima beans, navy beans, tomatoes, tomato paste, onion, celery, carrots, garlic, parsley, bay leaves, chives, basil, green onion, thyme, mustard, cayenne pepper, salt, ground black pepper, Worcestershire sauce and chicken base or bouillon.
  • Add the can of beer and water to cover all. Bring mixture to a boil, then reduce heat and simmer until beans are tender, about 4 or 5 hours, and the ham has been released from the bone. Refrigerate overnight to let the fat to come to the surface of the soup.
  • When ready to serve, skim fat, remove ham bone (or hocks), pick off remaining ham from bone and put into soup. Discard bones and bay leaves. Heat soup until warm. Serve and enjoy!

Growing up, I loved my mom's ham and lima bean soup. It's just good old comfort food for me. I've never made mom's recipe but was meaning to ask for it after one day picking up a couple cans of lima beans for no reason. It'd been months since buying them and I purchased a new bowl that I wanted to use for soup photos so I scrounged around in the pantry and fridge. This was the result. It's a light soup, not heavy with tomatoes or cream, which was perfect for a family of 4 all feeling under the weather. My family really enjoyed it. I hope you do too!

1 small onion, chopped (about 1 cup)
6 small potatoes, cut into bite-sized pieces (about 4-1/2 cups)
2 (15 1/4 ounce) cans lima beans
2 cups ham, cut into bite-sized pieces (or a bag of pre-packaged cubed ham)
32 ounces chicken broth
1/4 teaspoon pepper
1/2 teaspoon celery salt

Fresh sage garnish, lightly crisped on the stovetop, updates humble lima bean soup and gives it restaurant-like flair.

Yield Serves 6; 1 1/2 cups per serving

Number Of Ingredients 10

16 ounces dried baby lima beans (about 2 1/2 cups), sorted for stones and shriveled beans, rinsed, and drained
4 cups water
1 large onion, chopped
1/2 cup diced lower-sodium, low-fat ham, all visible fat discarded
4 medium garlic cloves, minced
2 medium dried bay leaves
5 medium carrots, shredded (about 2 1/2 cups)
1/4 teaspoon salt
1 teaspoon olive oil
12 fresh sage leaves

Steps:

  • Put the beans in a Dutch oven. Cover with 2 inches of water (this is not the 4 cups water). Bring to a boil over medium-high heat. Boil for 2 minutes. Remove from the heat. Let stand, covered, for 1 hour. Drain in a colander. Return the beans to the pot.
  • Stir in 4 cups water, the onion, ham, garlic, and bay leaves. Bring to a boil over medium-high heat. Reduce the heat and simmer, covered, for 1 hour, stirring occasionally. Discard the bay leaves.
  • Stir in the carrots and salt. Increase the heat to medium high and return to a simmer. Simmer, uncovered, for 20 minutes, or until the beans and carrots are tender.
  • For a creamier texture, transfer about 2 cups soup to a medium bowl. Mash the soup with a potato masher. Stir the mashed soup into the soup in the pot. For a smoother soup, in a food processor or blender, process all the soup in batches (without mashing any beans first) until the desired consistency.
  • Meanwhile, in a small nonstick skillet, heat the oil over medium heat, swirling to coat the bottom. Cook the sage for 1 to 2 minutes, or until crisp, stirring frequently. Transfer the sage to paper towels and drain. Crumble and set aside. Use to garnish the soup.
  • Most individuals need about 4,700 milligrams of potassium daily to help keep blood pressure levels at a healthy level. A serving of this soup provides almost one-fourth of that amount, primarily because of the lima beans.

LENTIL-LIMA BEAN SOUP WITH SMOKED HAM

This is a twist on the traditional lentil soup, as it uses lima beans and smoked ham in addition to the lentils. It is from the R.S.V.P. section of a December 1985 issue of Bon Appetit magazine and was requested from The Buttercup Bakery in Berkeley, California. This recipe doubles or triples well and also freezes well.

1/2 cup dried baby lima beans
2 tablespoons unsalted butter (1/4 stick)
1 medium onion, thinly sliced
2 celery ribs, diced, tops reserved and diced
1 carrot, peeled and diced, top reserved and diced
1 garlic clove, minced
5 cups beef stock (preferably homemade)
1/2 cup dried lentils
1/4 cup finely diced smoked ham (preferably Black Forest)
1/2 bay leaf
salt & freshly ground black pepper, to taste

Steps:

  • Combine lima beans and enough cold water to cover in small saucepan.
  • Simmer until beans are just tender, adding more water as necessary to keep beans covered, about 45 minutes.
  • (Cooking times will vary depending on dryness of beans.).
  • While limas are simmering, melt butter in large saucepan over medium-low heat.
  • Add onions,celery tops,carrot top and garlic and cook until onion is soft, stirring occasionally, about 15 minutes.
  • Roughly puree onion mixture in food processor and return to saucepan.
  • Add celery,carrot,stock,lentils,ham,bay leaf and pepper and simmer until lentils are tender, about 30 minutes.
  • Add lima beans and cooking liquid to saucepan and simmer 10 minutes.
  • Cool completely to allow flavors to mellow.
  • Season to taste with salt, remove bay leaf and reheat soup gently before serving.

1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
  • Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
  • Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
  • Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.
