My family has enjoyed this hearty ham salad recipe for years. It came to be an unexpected leftover every time we had ham for a special dinner. Recently, I decided to measure the ingredients, write down the recipe and pass it on to my daughter and daughter-in-law. Number Of Ingredients 8

3 cups ground fully cooked ham
1 hard-boiled large egg, chopped
2 tablespoons finely chopped celery
2 teaspoons finely chopped onion
2 teaspoons sweet pickle relish
3/4 cup mayonnaise
1 tablespoon prepared mustard
Assorted crackers

Steps:

  • In a large bowl, combine the first five ingredients. Combine mayonnaise and mustard; add to ham mixture and mix well. Refrigerate until serving. Serve with crackers.

3 c cubed ham
4 scallions, white part and a bit of the green, chopped
2 sweet gerkins
1 Tbsp heaping, of pickled jalapenos slices
1 Tbsp dijon mustard
1/3 c mayonnaise
1/2- 2/3 tsp pepper

Steps:

  • 1. Place everything in a food processor with not quite all the mayo and pulse until it is pebbly size and encorporated. Add more mayo just to bind. Taste and adjust as you wish.
  • 2. The point is to get away from the salty, heavy mayo and cloying sweetness. If you like more of this, then obviously add more sweet pickles and mayo. I stayed away from the dill pickles because of the salt.

This is one of my favorite recipes. My Mom, Lucy Wahnsiedler, used to make this when I was a kid. I love the flavor of the spread, and it is marvelous for making sandwiches or for spreading on crackers. It is simply delicious!

3 pounds smoked ham, cut into chunks
1 (8 ounce) can tomato sauce
2 tablespoons quick-cooking tapioca
2 tablespoons ketchup
1 tablespoon prepared mustard
1 teaspoon vinegar
1 teaspoon Worcestershire sauce
1 pound processed cheese food (such as Velveeta®), cubed

Steps:

  • Place ham into a saucepan and cover with water. Bring to a boil, reduce heat to medium, and boil ham gently for 15 minutes. Drain and allow ham to cool.
  • Place ham into a food processor and pulse several times to grind the meat to your desired texture.
  • Stir tomato sauce, tapioca, ketchup, mustard, vinegar, and Worcestershire sauce in a large saucepan over low heat; melt cheese food in the tomato sauce mixture and stir all ingredients smoothly together. Do not allow to simmer.
  • Combine melted cheese food mixture with ground ham in a large bowl; stir thoroughly. Chill before serving.

I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

1 ½ cups cubed cooked ham
3 tablespoons mayonnaise
2 teaspoons prepared mustard
5 drops hot pepper sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon celery salt
½ teaspoon ground black pepper
½ teaspoon paprika
1 pinch caraway seeds, or to taste
¼ cup finely chopped onion
¼ cup finely chopped celery

Steps:

  • Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
  • Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

1 pound cooked ham
⅓ cup chopped onions
2 teaspoons dill pickle relish
1 teaspoon prepared mustard
¼ cup creamy salad dressing (e.g. Miracle Whip)

Steps:

  • Cut up ham to put into food processor, grind on pulse until very coarse. Add the onion and dill pickle relish close to the end of this stage. Put into mixing bowl and add mustard and creamy salad dressing; mix well.
