HAM 'N' NOODLE HOT DISH

- In a saucepan, melt 2 tablespoons butter; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes. Remove from the heat; stir in cheese and salt until cheese is melted. , Add the ham, noodles and peas. Pour into a greased 1-qt. baking dish. Melt remaining butter; add bread crumbs and parsley. Sprinkle over casserole. , Bake, uncovered, at 350° for 30 minutes or until heated through.

- Preheat oven to 350°. Cook broccoli according to package directions; drain. Spoon rice into a 13x9-in. baking pan. Place broccoli over rice. , Melt butter in a large skillet. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside. In remaining butter, saute onion until soft. Add flour, salt and pepper, stirring constantly until blended; stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Add ham. , Pour over rice and broccoli. Sprinkle with crumbs. Bake until heated through, about 30 minutes. Sprinkle with cheese; let stand 5 minutes before serving.

- In a greased 13x9x2 inch baking dish, layer 1/3 of noodles, ham and cheese.
- In a bowl, combine soup, sour cream, onions, and green pepper; spread half the mixture over top.
- Repeat layers.
- Bake uncovered about 45 minutes or until very hot.

- 4. Melt butter in a large skillet.
- 5. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside.
- 6. In remaining butter, saute onion unitil soft.
- 7. Add flour, salt and pepper, stirring constantly until bubbly.
- 8. Stir in milk and continue cooking until sauce thickens and bubbles.
- 9. Cook and stir for one minute.
- 10. Add ham and heat through.
- 11. Pour over rice and broccoli.
- 12. Sprinkle the crumbs over all.
- 13. Bake at 350 for 30 minutes or until heated through.
- 14. Sprinkle with cheese (swiss or cheddar).
- 15. Let stand for 5 minutes before serving.

Parmesan cheese makes this a rich and tasty variation of traditional macaroni and cheese. My family has come to expect this meal whenever I have leftover ham.
