This slightly sweet and tangy dressing is creamy and perfect with bitter greens and wild grasses. A fresh accompaniment with aged cheeses.

  • Peel and core pears. If hard, poach in water for 5 minutes.
  • Place in a food processor and add oil, vinegar, salt and pepper and puree until creamy and smooth.
