NIF'S EGG, HAM AND CHEESE BREAKFAST QUESADILLAS
I wanted to whip up a nice breakfast for us this morning and this is what happened! The instructions are very easy - I was just being specific. Enjoy!

Steps:
- Over medium-low heat, heat ham in a nonstick frying pan sprayed with nontick spray. While ham is warming, whisk together the egg and egg substitute. Add to ham and stir until eggs are just barely cooked. Salt and pepper to taste.
- Place one tortilla in another frying pan, over medium heat. Sprinkle with half of the cheddar and half the ham and egg mixture. Top with half of the mozzarella. Place second tortilla on top.
- Gently lift the tortilla to see when it is lightly browned. When it is, slide quesadilla onto a plate. Place pan on top of plate and flip so that the uncooked side is now on the bottom. Cook until lightly browned. Slide onto a cutting board and cut into 6 slices.
- Repeat to make another quesadilla.

Steps:
- Preheat oven to 350°F
- Saute onions in butter till golden.
- Add mushrooms and saute 1 minute more.
- Add chopped ham and saute another minute more. Set aside to cool.
- Mix all ingredients together. Be sure veggies and ham mixture has cooled slightly before adding to egg mixture.
- Spoon (I use a small ice cream scoop) into lightly greased mini muffin tin. Bake for 30 minutes or until centers are firm.

A standard egg casserole at our house. Great with left-over ham or turkey. You can also add bacon or veggies if you like.

Steps:
- Add milk to eggs.
- Mix egg mixture, salt and pepper together.
- Spray a 9x13 inch pan with cooking spray.
- Put bread pieces in bottom of pan.
- Sprinkle ham or sausage over bread and sprinkle cheese over the meat.
- Pour egg mixture over all.
- Bake at 350 degrees for 45-50 minutes.
