nonstick cooking spray
1 lb about 4-5 croissant, cubed
2 tablespoons olive oil
1 cup diced thick cut ham
1 medium red onion, diced
3 celery ribs, diced
2 garlic cloves, minced
3 cups loosely packed Baby Spinach, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
2 cups chicken stock
2 large eggs
4 green onions, sliced
1/2 cup swiss cheese, shredded
2 ounces brie cheese, diced

Steps:

  • Preheat oven to 400 degrees F. Spray a popover pan with cooking spray and set aside.
  • Place the cubed croissants on a baking sheet and toast until golden brown and somewhat dried out, about 15 to 20 minutes.
  • Heat oil in a a large skillet over medium high heat. Cook the ham until just starting to crisp, about 6-8 minutes.
  • Add the onion, celery and garlic and cook until softened, about 5 to 7 minutes. Add in the spinach and cook until wilted down. Season with salt, pepper and rosemary.
  • In a large bowl, mix to combine the croissant cubes, sauteed ham and vegetable mixture, chicken stock, eggs, scallions, Swiss cheese and Brie cheese. Divide the mixture evenly in the popover pan, pressing down gently on each to get them packed inches Bake until popovers are golden brown and puffed, about 20 to 25 minutes. Remove from the oven and let cool slightly before removing them from the pan and serving.

I knew I wanted a black pepper and Gruyere Popover....with a late breakfast morning, I thought about incorporating a ham component and making it brunch. Warning: They do deflate quickly...

FOR THE POPOVER BATTER:
3 eggs
1 c milk
1/4 tsp salt
1 Tbsp butter, melted
1 c all purpose flour
1/2 tsp black pepper
SCRAMBLED HAM AND EGGS
1 Tbsp oil (i used coconut)
3 eggs, whisk really well
1 c milk
1/2 shallot, minced
1/4 c canadian bacon (minced) or ham
1/4 c gruyere cheese, grated

Steps:

  • 1. Preheat the oven to 350F. Grease the popover pan really well....I use coconut oil.
  • 2. In separate bowl using a whisk....combine until smooth.....eggs, milk, salt, MELTED butter and flour. Mix, mix, mix until it is smooth.
  • 3. In a small skillet, heat oil on medium low. and saute the shallot or onion for a few minutes In another bowl, beat the eggs, add in the ham or other breakfast meat and the cheese (You can use any cheese you want). Scramble and remove from heat.
  • 4. Spoon 3/4 full of popover batter into popover pan. Spoon in 1/4 cup of the egg and ham mix..
  • 5. BAKE for 33 minutes.

1 cup flour
1/2 teaspoon salt

Steps:

  • Beat eggs slightly, add remaining ingredients, blend but don't worry about lumps.
  • Refrigerate 1/2 hour.
  • Grease generously 8 muffin cups.
  • Fill each 3/4 full.
  • Place pan in a cold oven.
  • Turn temperature to 450°F Bake for 30 minutes.
  • Don't open oven while their cooking or they fall.

6 ounces cream cheese
4 ounces thick-cut ham, chopped
1 cup shredded Swiss cheese
1/2 cup shredded mozzarella
1/2 cup chopped pickles
1 tablespoon Dijon mustard
1 dash cayenne pepper
1 dash paprika
8 jalapenos, stemmed, halved lengthwise and seeded
1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 large eggs
2 tablespoons milk
5 cups buttery crackers, such as Ritz, ground in a food processor
Oil, for frying

Steps:

  • Combine the cream cheese, ham, Swiss, mozzarella, pickles, mustard, cayenne and paprika in a medium bowl.
  • Stuff the jalapeno halves with the filling and place on a baking sheet lined with parchment.
  • Set up 3 bowls. In the first, mix together the flour with a pinch of salt and a few cracks of pepper. In the second, beat the eggs with the milk, a pinch of salt and a few cracks of pepper. In the third, place the cracker crumbs.
  • Coat the stuffed peppers first in the flour mixture, then in the egg mixture and then in the cracker crumbs.
  • Heat 2 inches of oil in a heavy-bottomed pot until a deep-frying thermometer registers 365 degrees F.
  • Fry the stuffed jalapenos in batches until golden brown on all sides, about 2 minutes per batch. Alternatively, you can bake the poppers in the oven at 350 degrees F for 30 minutes.
