COUNTRY HAM CARBONARA

2 tablespoons olive oil
1 small sweet onion, chopped
2 cloves garlic, grated
1 pound spaghetti
8 to 10 ounces country ham, cut into small dice, recipe follows (see Cook's Note)
2 cups freshly grated Parmesan
1 cup heavy cream
4 large eggs
Freshly ground black pepper
One 18- to 20-pound smoked ham, water added, ham hock removed
One 16-ounce box light brown sugar
1 cup (one 8-ounce jar) clover honey

Steps:

  • Bring a large saucepan of salted water to a boil.
  • Heat the oil in a medium saucepan over medium-low heat. Add the onion and saute, stirring occasionally, until soft and starting to caramelize, about 20 minutes. Add the garlic and continue to cook until softened, 3 to 5 minutes.
  • Meanwhile, put the spaghetti in the boiling water and cook according to the package instructions, about 8 minutes.
  • Add the ham to the pan with the onions and garlic and cook until just warmed through, about 2 minutes. Whisk together the Parmesan, cream, eggs, 1 1/2 teaspoons salt and some pepper in a bowl.
  • Drain the pasta and transfer to the saucepan with the onion mixture and toss well. Immediately stir in the egg and cheese mixture until well combined. Serve immediately.
  • Adjust the oven racks to accommodate a large covered roasting pan. Fit the pan with a shallow rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with the lid and bake for half the estimated cooking time (total cooking time is about 20 minutes per pound, so 6 hours to 6 hours 40 minutes total).
  • Halfway through the estimated cooking time, add the sugar and honey to a saucepan, cooking over medium heat until smooth and the sugar is dissolved. Pour the mixture over the ham and continue baking the ham, basting occasionally with the drippings in the roaster. Check for doneness at the end of the estimated cooking time by inserting a meat thermometer at a meaty point (not into fat or touching the bone). It should register 160 degrees F.

1/3 cup vegetable oil
1 cup cubed, fully cooked ham
1/2 cup chicken broth
1/4 cup margarine, melted
2 egg yolks, beaten

1/2 cup parmesan cheese, grated

8 ounces uncooked spaghetti
1 medium zucchini, chopped
1 small yellow summer squash, chopped
1/4 cup chopped onion
2 garlic cloves, minced
2 tablespoons olive oil
1/2 pound thick sliced deli ham, cubed
1 cup frozen peas, thawed
2 large eggs
1/2 cup grated Parmesan cheese, divided
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the zucchini, summer squash, onion and garlic in oil until tender. Add ham and peas; heat through. Remove from the skillet and keep warm., Reduce heat to low; add eggs to the skillet. Cook and stir until egg coats the back of a spoon and reaches 160° (mixture will look like a soft frothy egg)., Drain spaghetti and place in a bowl. Add eggs; toss to coat. Add the vegetable mixture, 1/4 cup cheese, thyme, salt and pepper; toss gently to coat. Sprinkle with remaining cheese.

1 1/2 cups ham, chopped
1 cup mushroom, thinly sliced
1 garlic clove, crushed
4 eggs
300 ml cream
1/2 cup parmesan cheese, freshly grated
500 g pasta
1 teaspoon butter
black pepper

Steps:

  • Melt the butter in a small frypan, and cook the mushrooms & garlic for 2 minutes. Remove from heat.
  • Cook the pasta until just al dente in salted water. Drain, and return to the pan.
  • While the pasta is cooking, beat the eggs, parmesan and cream together in a bowl until well combined. Stir the ham and mushrooms through the mixture. Pour the sauce over the hot pasta and toss gently to combine.
  • Return th epan to very low heat and cook for 1 minute. Add pepper to taste.

Personally, I would add peas, but they're not allowed in the house. So I accompany this with a large leafy salad. Very quick, very easy.

1/4 cup butter
1/2 cup sliced green onion
4 1/2 ounces canned mushrooms (drained)

3/4 cup chopped country ham
2 tablespoons olive oil
2 shallots, thinly sliced
2 garlic cloves, pressed
2 pasteurized egg yolks
1/2 cup freshly shredded parmesan cheese
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley
1/2 teaspoon freshly cracked pepper

Steps:

  • Cook pasta according to package directions; drain, reserving 1 1/2 cups hot pasta water.
  • Cook ham in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until crisp. Remove ham, reserving drippings in skillet. Drain on paper towels.
  • Sauté shallots in hot drippings 3 to 4 minutes or until tender. Stir in garlic; sauté 1 minute. Add reserved pasta water to shallots and garlic; bring to boil.
  • Stir in hot cooked pasta, and remove from heat. Stir in egg yolks, 1 at a time.

1 8-ounce package spaghetti uncooked, vermicelli or linguini
10 ounces ham cooked
1/4 pound bacon lean
2 tablespoons butter or margarine
1 clove garlic minced
1/2 cup parmesan cheese grated
2 tablespoons parsley dried
1/4 teaspoon black pepper
3 eggs
1 5-ounce can evaporated milk
1/2 cup green olives sliced stuffed (optional)
Additional grated Parmesan cheese (optional)
Additional pepper (optional)
Chopped fresh parsley (optional)

Steps:

  • Cook pasta according to package directions. Drain; set aside. Meanwhile, cut ham into strips about 2 x 1/2 x 1/4 inches (you will have about 2 cups); set aside. In a large skillet or electric frying pan over medium-high heat, fry bacon until crisp. Drain bacon on paper towels; crumble and set aside. Discard all but 2 tablespoons of the drippings. To skillet, add butter or margarine. Sauté ham and garlic for 3 to 5 minutes or until heated through and garlic is softened. Add cooked pasta, cooked bacon, 1/2 cup Parmesan cheese, dried parsley and 1/4 teaspoon pepper and toss with two forks or spoons until blended. Turn off heat under skillet. Meanwhile, in a small bowl, beat eggs and evaporated milk until well blended. Quickly pour over mixture in skillet, tossing constantly until pasta is coated and egg is set. Sprinkle with olives (if you are using them) and additional Parmesan cheese and pepper. If desired, garnish with fresh parsley. Serve immediately.
