HAM AND SWISS CHEESE FRITTATA
Not just for breakfast but for any meal of the day. Omit green pepper and add mushrooms if desired. A topping of salsa might be good also. Haven't personally tried this recipe, it was posted by request.

Steps:
- In skillet cook onion and green pepper with salt& pepper in 1 Tbls.
- of olive oil over low heat until green pepper is tender.
- In a bowl whisk together the eggs, ham, 2/3 cup Swiss cheese, and salt& pepper.
- Add onion and green pepper to egg mixture and stir until combined well.
- In skillet heat remaining 1/2 Tbls.
- olive oil over moderate heat until hot and pour in mixture, distributing ham and green pepper evenly.
- Cook frittata without stirring for 8 to 10 minutes or until edge is set but center is still soft.
- Sprinkle remaining 1/3 cup Swiss cheese over the top.
- (If the skillet handle is plastic, wrap it in a double thickness of foil).
- Broil frittata under preheated broiler about 4 inches from the heat for 2 to 3 minutes or until the cheese is golden.
- Cool in skillet for 5 minutes.
- Slide the frittata onto a serving plate and cut into wedges.
- Serve warm or at room temperature.

- In a 9-inch non-stick skillet cook the onion and the bell pepper with salt and pepper to taste in 1 tablespoon of the oil over moderately low heat, stirring, until the bell pepper is tender. In a bowl whisk together the eggs, the ham, 1/3 cup of the Swiss cheese, and salt and pepper to taste, add the bell pepper mixture, and stir the mixture until it is combined well. - Preheat the oven broiler. Melt the butter in a medium nonstick skillet over medium heat. Add the shallot and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until soft, about 5 minutes. Remove from the heat and cool. Reserve the skillet for cooking the frittata.
- Meanwhile, whisk the half-and-half and eggs together in a medium bowl with 1/4 teaspoon salt and a few grinds of pepper until smooth. Add the cooled shallots, cheese, parsley and chives and stir to combine.
- Heat the reserved skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set, about 5 minutes more. Remove from the oven and let stand for 5 minutes. Slide the frittata out onto a large plate or cutting board. Cut into wedges and sprinkle with more chives and serve warm or room temperature with a green salad if desired.

- 1. Heat the boiler. Heat the olive oil in a large, ovenproof skillet over medium heat. Add the onion and cook until clear and translucent, about 1 minute. In a bowl whisk together the eggs, ham, 1/3 cup of the cheese, thyme, and parsley. Season with salt and pepper.
- 2. Add egg mixture to onions and cook, without stirring, about 8 minutes, or until the bottom and edges are set but center is still soft.
- 3. Sprinkle the remaining cheese on the top of the frittata. Broil about 4 inches from the heat until the cheese is bubbling, about 1 minute. Transfer to a cutting board, cut into wedges, and serve.

I was puttering in the kitchen this morning and bemoaning the fact that I was out of bread when I decided to make this. It tasted so good I had to post it. Enjoy! will serve 1-2 people main dish or up to 4 side dish.

- beat eggs, sour cream and seasonings together until well blended.
- Add diced ham to eggs.
- Melt butter in 10 inch fry pan.
- Add 1/2 egg mixture to fry pan and cook on medium heat for about 1 minute to set bottom.
- Layer swiss cheese on cooked eggs, then add the rest of the egg mixture.
- Continue cooking over medium heat until bottom begins to brown slightly.
- Remove pan from stove and place on top rack of oven broiler.
- Broil until completely set and top is nicely browned.
- (watch carefully, burns easily).
