HAM, BROCCOLI AND RICE SKILLET DINNER
This no-fuss skillet dinner blends packaged rice mix with precooked ham and vegetables.

Steps:
- In 10-inch nonstick skillet, melt butter over medium heat. Add onion and rice from mix; cook and stir 1 to 2 minutes or until onion begins to cook. Stir in water and contents of seasoning packet from mix; heat to boiling. Reduce heat to medium-low; cover and cook 10 minutes.
- Stir in broccoli and ham; return to boiling. Reduce heat to medium-low; cover and cook 10 to 15 minutes, stirring occasionally, until broccoli is crisp-tender and rice is tender.

Wanted to make a main meal with Ham. I could find what I envisioned, so I made my own. It' So flavorful and very filling! My family and Me Love it!

- 1. In a deep Skillet, heat olive oil at med heat. Add diced onion and diced garlic. Stir until onion is clear, and garlic is fragrant. Toss in diced Ham. Stir.
- 2. Reduce heat, and add drained beans and canned tomatoes. Stir in Chili powder, add salt to taste. Bring up the heat to med. Cover. Cook to reduce liquid.
- 3. Add in Rice. Stir. Slowly add in chicken broth. Heat skillet to boiling, then reduce to a simmer until liquid is absorbed. As soon as that happens, sprinkle with shredded cheese of your choice. cover until cheese has melted.

This is a tasty and satisfying one dish meal that's high in flavor and low in fat and calories! Based on a recipe from a Healthy Cooking book that says it has just 229 calories per serving, 15 g of protein and 7 g fat! We like it with a salad and a nice dinner roll.

Steps:
- In saucepan combine carrot, celery, onion and water.
- Bring to boil, reduce heat.
- Cover and simmer 7 minutes.
- Do not drain.
- Stir in undiluted soup, uncooked rice, ham and poultry seasoning.
- Pour into 1 1/2 quart casserole dish that you have sprayed with Pam.
- Sprinkle paprika over top.
- Cover and bake 30 to 35 minutes at 350.
