INSTANT POT® MAC AND CHEESE WITH HAM AND PEAS



Instant Pot® Mac and Cheese with Ham and Peas image

Forget about the blue box (you know what I'm talking about) and make homemade mac and cheese for a weeknight dinner. The ham, peas, and optional hot sauce add some pizzazz to classic mac and cheese. Adjust the consistency of the mac and cheese sauce to suit your personal preference. I used Kraft® 2% Milk Extra Sharp Cheddar Cheese to reduce fat with no negative effect on taste.

4 cups water
1 (16 ounce) package elbow macaroni
1 teaspoon dry mustard powder (such as Colman's®)
1 teaspoon salt
1 teaspoon hot sauce
1 (12 fluid ounce) can evaporated milk
⅓ cup whole milk
2 tablespoons unsalted butter
2 cups shredded 2% milk Cheddar cheese (such as Kraft®)
1 cup shredded Monterey Jack cheese
1 cup diced cooked ham
½ cup frozen peas, defrosted
salt and ground black pepper to taste

Steps:

  • Combine water, elbow macaroni, mustard powder, salt, and hot sauce in an electric pressure cooker (such as Instant Pot®). Close and lock the lid. Set to high pressure according to manufacturer's instructions and cook for 4 minutes. Allow up to 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Switch to Low Saute function by pressing Saute once and Adjust twice. Stir macaroni to separate any clumps.
  • Stir evaporated milk, milk, and butter into the pot. Add Cheddar cheese and Monterey Jack cheese gradually, stirring constantly until melted. Stir in ham and peas. Season with salt and pepper.

I had some leftover Ham from our 2011 Christmas Dinner,and needed a different way to serve it.O.k. I hear some of you saying " It's the same way to make M & C with ham. 1 1/4 cups cooked small shell pasta (or whatever small pasta you have on hand )
3 tablespoons butter or 3 tablespoons margarine
1/4 cup finely chopped sweet onion
2 tablespoons flour
1 1/2 cups milk
3 ounces Velveeta cheese, cubed
1/4 teaspoon sweet paprika (can use regular )
1/4 teaspoon dry mustard (I think regular would work too)
1/4 teaspoon chicken bouillon powder
1/4 teaspoon ground black pepper (add extra if desired )
1 1/4 cups chopped cooked ham
1 cup peas
1/2 cup shredded sharp cheddar cheese (optional)

Steps:

  • Pre heat oven to 350 degrees,and lightly grease or spray a 1 1/2 quart baking dish.
  • In a medium saucepan ( I used the same one that was used to cook the pasta in,one less pan to wash ),melt margarine over medium heat and add onion.
  • Cook onion until soft, then add flour and cook until flour is lightly browned.
  • Add milk,and all seasonings stir until slightly thick.
  • Reduce heat to low and add velveeta,stirring until cheese is melted.
  • Remove from heat,add cooked pasta,ham and peas.
  • Stir until all ingredients are well coated,if mixture seems to thick add a bit more milk.
  • Pour into prepared baking dish and top with optional cheese,bake for 25 minutes or until bubbly.

1 lb elbow macaroni
6 tablespoons butter
1/4 cup finely chopped onion
1/2 cup flour
3 1/2 cups milk
2 cups shredded swiss cheese
3 cups shredded cheddar cheese
1 teaspoon mustard
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt, more to taste
1/4 teaspoon pepper
1 lb diced cooked ham
1 1/2 cups frozen baby peas, thawed

Steps:

  • Cook macaroni according to package directions; drain.
  • In a large pot, melt the butter and saute the onions for about 5 minutes.
  • Stir in the flour until well blended. Cook and stir for 2 minutes.
  • Add the milk; stir well.
  • Add in the cheeses, mustard, paprika, garlic powder, salt and pepper.
  • Continue to cook and stir until smooth, hot and thickened.
  • Stir in the ham, peas and cooked/drained macaroni.
  • Stir well until heated through.
  • Serve.
