1 whole grain baguette, cut into 1/4-inch to 1/3-inch slices
1/4 lb ham, sliced thin and to fit the baguette slices
8 ounces manchego cheese, sliced thin and slightly smaller than the ham (may substitute parmesan)
2 tablespoons olive oil (approximate)
2 teaspoons garlic, minced

Steps:

  • Saute' garlic in olive oil until lightly browned. Arrange baguette slices on a baking sheet. Brush slices with olive oil. Assemble crostini, with ham first then cheese. Cook under broiler until cheese is melted and ham is warm. Watch carefully to prevent burning.

12 slices bread
3/4 cup mayonnaise
2 cups cheddar cheese, grated or 2 cups monterey jack cheese
1 1/4 cups cooked ham, chopped or 1 1/4 cups bacon bits
1/2 cup green onion, chopped
1 tablespoon lemon juice
1/4 teaspoon hot pepper sauce

Steps:

  • lightly brush mini tart pans with mayonnaise.
  • remove crust from bread, cut each slice into 4 squares, lightly press into tart pans.
  • combine mayonnaise, cheese, onion, ham or bacon, lemon juice and hot pepper sauce
  • spoon into each bread cup, distributing evenly.
  • Bake in 350 degree oven for 15 to 20 minutes until lightly browned.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
4 ounces cooked ham, diced
1/2 lb cheddar cheese, shredded
2 1/2 cups half-and-half cream
8 eggs

Steps:

  • Preheat oven to 400 degrees. In a large bowl, mix together the potatoes, ham and cheese. Fill the cups of one muffin tin with this mixture. Pour 1 1/2 tablespoons of half-n-half into each cup. Cover loosely with aluminum foil and bake at 400 for 15 minutes. Remove the foil and bake for an additional 25 minutes, or until nicely browned. About five minutes before hash brown bites are ready, fry eggs to each person's liking. Serve eggs on top of hash brown bites for a complete breakfast.

How to make Ham and Cheese Pretzel Bites

2 Tubes refrigerated Pillsbury breadstick dough
1 cup cheese of your choice. I use Mozzarella or Provolone
1 cup of thick sliced ham cut up into very small cubes
1 egg beaten
Melted Butter
2 teaspoons Dijon mustard
Kosher or coarse Sea Salt

Steps:

  • Preheat oven according to package directions.
  • Unroll dough and lay out into two long pieces on a floured board. Slightly roll dough into about a 12 x 4 rectangle. Doesn't have to be neat.
  • Brush dough lightly with Dijon mustard then sprinkle with ham and top with shredded cheese. With the long side facing you, gently press the ham and cheese into the bottom third of the dough, and roll as tightly as possible, starting with the end that has the filling.
  • Cut into 12 1-inch pieces and transfer to a sheet pan lined with parchment paper. Brush lightly with egg wash and bake in the preheated oven until they are puffed and golden, about 15 minutes.
  • Remove from oven and immediately brush each pretzel bite with melted butter and sprinkle with coarse salt. Serve warm.

These little "bites" are my "snack" version of a ham and cheese sandwich. The arugula and honey mustard gives these snacks a refreshing flavor twist. They make a great snack as well as an appetizer served at a party.

12 - snack crackers (or pretzel shaped crackers as shown in picture)
1/4 cup(s) prepared ham salad
1 - slice swiss cheese( the long slices) cut into small squares to fit crackers
3 - 4 - cherry tomatoes, cut into thin slices
1 small handfull baby arugula
2 tablespoon(s) prepared honey mustard dressing

Steps:

  • Place crackers on an oven proof baking pan.
  • Divide ham salad evenly among crackers, spreading to the outer edges. (You can use more or less ham salad depending on your personal taste.)
  • Place a slice of tomato on top of ham salad and top each with a piece of cheese. Place under broiler until cheese is melted, about 2-3 minutes, being careful not to burn.
  • Remove from oven and top each with 2 or 3 sprigs of arugula. Drizzle each with honey mustard dressing.
