Wanted to make a main meal with Ham. I could find what I envisioned, so I made my own. It' So flavorful and very filling! My family and Me Love it!

Number Of Ingredients 9

1-1/2 c diced ham
1/2 c diced yellow onion
2 c white rice
4 c chicken broth
2 clove garlic
3 Tbsp olive oil
2 Tbsp chili powder
1 can(s) black beans-rinsed/drained
1 can(s) diced tomatoes

Steps:

  • 1. In a deep Skillet, heat olive oil at med heat. Add diced onion and diced garlic. Stir until onion is clear, and garlic is fragrant. Toss in diced Ham. Stir.
  • 2. Reduce heat, and add drained beans and canned tomatoes. Stir in Chili powder, add salt to taste. Bring up the heat to med. Cover. Cook to reduce liquid.
  • 3. Add in Rice. Stir. Slowly add in chicken broth. Heat skillet to boiling, then reduce to a simmer until liquid is absorbed. As soon as that happens, sprinkle with shredded cheese of your choice. cover until cheese has melted.

1/4 cup onion, chopped
1/2 carrot, chopped
1 teaspoon olive oil
2/3 cup cannellini beans, drained and rinsed (from a can or cooked)
1/2 cup ham, diced
1/3 cup chicken broth or 1/3 cup vegetable broth
2 tablespoons white wine or 2 tablespoons beer
1/2 teaspoon fresh thyme

Steps:

  • In a skillet, cook onion and carrots in oil, over medium heat until onion is softened, about 5 minutes.
  • Stir in beans, diced ham, broth, wine, and thyme; cook until heated through, about 10 minutes.
