Key Lime Bunt Cake the weight watchers version image

This was originally a lemon cake that i got from my Auntie Shirl in the 70's. Because of my habitual tweaking nature and the fact i love lime, this is what i always fall back on, it's quick, easy, i always have the ingredients on hand =)

CAKE
1 pkg white cake mix
1 small pkg of sugar free lime jello [it's all about the wiggle room]
3 egg whites
2 limes zested and juiced
water added to the lime juice to equal 1 1/4 cup [i use all lime juice about 4-6 limes juiced]
1/4 c olive oil
FROSTING
1 c powdered sugar
1 lime zested and juiced [2 tbs.]

Steps:

  • 1. Preheat oven to 350 put rack in the middle position. Prepare your bunt pan w/shortening and flour. Mix cake mix, jello, lime zest, egg whites, olive oil, juice + water to equal 1 cup or lime juice to equal 1 cup. Beat until smooth. Pour into prepared bunt pan. Bake @ 350 for 37-41 minutes Let set in the pan on a rack for 10 min to cool turn out onto a your serving plate.
  • 2. Pierce the top w/a fork all the way around. Note you can also bake this in a 9x13 pan [cooking time 32-36 minutes].
  • 3. in a 2 cup measuring cup measure 1 cup of powdered sugar, add lime zest and just enough juice to make a pour able frosting. Drizzle and spread around the top. This is a great hot day sweet =)
