HALIBUT EN PAPILLOTE
It's a super easy, super fast, and really flavorful way to prepare halibut but the best part happens at the table, when you tear open that parchment paper package. You can see the quinoa, the bright vegetables, and the steam rising off to the side...that's when you know you're in business.

- Preheat oven to 400 degrees F (convection, if possible). Prepare the vegetables: Peel and slice the turnip on a mandoline, then julienne into matchsticks. Set aside. Do the same for the carrots. Then slice the shallot, jalapeno, sugar snap peas, garlic, and cabbage. The vegetables should be roughly the same size, so they cook evenly.
- Assemble the papillote: Lay parchment paper on a rimmed baking sheet. Place 1/2 cup quinoa in the middle of the parchment and then layer 1/4 of each vegetable on top (for 4 individual papillotes). Season with a pinch of salt, pepper, and a drizzle of olive oil. Place a halibut fillet on top and drizzle with more olive oil, salt, and a bit of lemon zest. Bring the two sides of the parchment up over the halibut, align the edges, and fold down the parchment tightly over the fish. Turn the packet and fold the ends of the parchment under the fish to create a tight packet. Bake 8-12 minutes.
- Finish the dish: The halibut is cooked when the fish is opaque and firm to the touch. Set the packet on a serving plate and carefully open. Finish with 1 tablespoon olive oil, scallions, and lemon juice and serve.

- Preheat the oven to 400 degrees F.
- Add the olives, capers, garlic and anchovy to a food processor. Add 1/2 cup olive oil and black pepper to taste. Process to form a silky paste with small pieces of olive and capers remaining, 15 to 20 seconds. Drizzle in more olive oil as needed. Remove the tapenade from the carafe, then drizzle with olive oil and set aside.
- Drizzle the center of each of 4 large circles of parchment paper with some olive oil, then sprinkle with salt and pepper. Top each piece with a thin layer of fennel and some leeks. Top each with a dollop of the olive tapenade and 2 to 3 lemon slices. Lay the fish on top of the lemon slices and sprinkle with salt and pepper. Fold the parchment in half to cover the fish, then crimp the edges shut, being sure to cover the corner of each previous fold. When you are halfway through folding, add 1 tablespoon of white wine to each packet, then continue to fold until the entire package is formed and closed. Place each packet on a baking sheet.
- Bake the fish for 8 to 10 minutes. Remove from the oven, then place each packet on a plate. Cut open the top of the paper to expose the fish. Garnish each fillet with the Calabrian chiles and basil. Serve immediately.
FISH EN PAPILLOTE, MEDITERRNANEAN-STYLE
Tender, flavor-packed fish en papillote with green peppers, tomatoes, and a light lemony sauce, all cooked together in parchment parcels. I used cod fillet in this recipe, but any fish fillet that (no thicker than 1 inch) such as halibut, trout, snapper, or even salmon should work.

- Heat the oven to 425 degrees F.
- Season the fish with kosher salt and pepper on both sides.
- Prepare the sauce. Place the olive oil, lemon juice, shallots, garlic and spices in a small mixing bowl or measuring cup and whisk to combine.
- Prepare 4 large pieces of parchment paper (about 12 inches or so on each side). Fold the parchment pieces down the middle to mark two halves.
- Assemble the pouches. Place each fish fillet on the bottom half of a parchment piece. Spoon 2 tablespoons of the prepared sauce over the fish. Add 1 lemon slice, 1 tomato slice, and 1 bell pepper slice on top.
- Fold the top half of the parchment paper over the fish and veggies and go around to fold and secure each piece of parchment around the fish and veggies creating a well-wrapped pouch.
- Place the fish pouches on a large baking sheet. Bake on the middle rack of your heated oven for 12 to 15 minutes or until the fish is fully cooked and flakes easily.
- To serve, leave the fish and veggies in their own closed parchment pouches and transfer each pouch to a serving plate.

HALIBUT IN PARCHMENT
Steaming fish "en papillote" is a French technique, but with cilantro, ginger, sesame oil, and rice vinegar, you can put a Southeast Asian-inspired twist on the classic Halibut in Parchment dish.

- Preheat oven to 400 degrees. Divide cabbage and carrot among four 16-inch-long pieces of parchment. Top with fish, cilantro, and ginger and season with salt. Drizzle with oil and vinegar.
- Bring long ends of paper together and fold 3 times to make a seam. Tuck short ends under to secure.
- Place packets on a rimmed baking sheet and bake until puffed and fish is opaque, 13 to 15 minutes. Transfer packets to plates, gently pull open, and serve immediately.

HALIBUT WITH SHELLFISH EN PAPILLOTE
Steps:
- Prepare the fish: Preheat the oven to 400°. In the small saucepan set over medium heat, add 1 teaspoon olive oil, Shallot, Garlic, Thai chile, Salt. Cook, using the wooden spoon to stir the mixture often, until the shallot is soft and translucent, about 5 minutes. Increase the heat to medium-high and add the Chopped thyme leaves, White wine. Simmer until the wine is reduced by three-quarters, about 20 minutes. Turn off the heat and whisk in the Butter. Once melted, add the Cherry tomatoes. Set the tomato-wine sauce aside. 2. Lay a 12-inch square piece of parchment paper over a rimmed plate. Fold the parchment to make a triangle and then unfold. Into the center of the paper, place Half of the cubed halibut, 5 mussels, 3 shrimp. Pour half of the tomato-wine sauce over the seafood and top with 2 fresh thyme sprigs. Fold the parchment over so the edges meet and crimp and fold to make a tight seal all the way around. Carefully place the pouch on the rimmed baking sheet and set aside. Repeat with another sheet of parchment paper and the remaining halibut, mussels, shrimp, tomato-wine sauce and thyme. Place on the baking sheet and bake for 12 minutes. Remove from the oven and set aside. 3. Grill the baguette: Set a grill pan over medium-high heat. On a cutting board, brush the Baguette slices With the remaining Olive oil. Place the oiled baguette slices oiled-side down on the grill pan and cook until grill-marked, about 1½ to 2 minutes. Use the tongs to transfer to a large plate.4. Use the metal spatula to hold the parchment pouch over a bowl, using the scissors to slice off the end of the packet. Carefully empty into the bowl. Repeat with the other parchment pouch, emptying it into a second bowl, and serve with the grilled bread.
