HALIBUT CAKES (CROQUETTES)

Something delicious to make with leftover halibut or cod or any white fish. My Alaskan family and extended family in the lower 48 love these.

¼ cup vegetable oil, divided
1 pound skinless, boneless halibut fillets
1 pinch salt and ground black pepper to taste
1 cup shredded Italian cheese blend
1 egg
¼ cup mayonnaise
¼ cup minced onion
2 tablespoons lemon juice
2 tablespoons panko bread crumbs
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon seafood seasoning (such as Old Bay®)
¾ cup panko bread crumbs

Steps:

  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add halibut fillets; season with salt and pepper. Cook until flesh flakes easily with a fork, about 4 minutes per side. Transfer to a plate; cool until easily handled, about 5 minutes. Flake into small chunks.
  • Mix Italian cheese blend, egg, mayonnaise, onion, lemon juice, 2 tablespoons bread crumbs, Worcestershire sauce, garlic powder, dry mustard, and seafood seasoning together in a large bowl. Gently mix in flaked halibut.
  • Pour 3/4 cup bread crumbs into a shallow dish. Shape halibut mixture into 6 cakes and dip both sides in bread crumbs to coat.
  • Heat remaining 2 tablespoons oil in the skillet over medium-high heat. Add halibut cakes and cook until browned, about 5 minutes per side.

Steps:

Halibut is so darned expensive! We had some left over Halibut and I was looking for a way to use it up. This is an adaption of the Halibut cake recipe I found on the Halibut Barn web site.

1 lb cooked halibut pieces, flaked
1 c italian bread crumbs (or panko)
1 large egg
1/4 c mayo
1/2 tsp salt
1/4 tsp pepper
1/2 tsp old bay seasoning
1 tsp dry mustard
half oil and butter for frying
lemon wedges

Steps:

  • 1. Mix bread crumbs (or Panko flakes) with egg, mayo, and seasonings (salt through dry mustard).
  • 2. Gently mix in cooked halibut flakes.
  • 3. Shape into small patties (3 inches in diameter and 1/2 inches thick) and fry in hot oil and butter, about 5 min. per side.
  • 4. Drain on paper towels to absorb oil / butter; serve with tartar sauce or cocktail sauce and a wedge of lemon.

1 lb halibut, cooked and flaked
1 cup Italian seasoned breadcrumbs
1 large egg (or 2 small eggs)
1/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard or 1 teaspoon prepared mustard

Steps:

  • Mix together breadcrumbs, egg, mayonnaise and seasonings.
  • Add Halibut and mix gently; If mixture is dry, add more maynnaise.
  • Shape into 6 cakes and cook in hot oil until browned on each side (about 5 minutes).
  • These Halibut Cakes may also be deep fried.

20 fluid ounces lemon-lime soda
1 pound halibut, cut into 1-inch chunks
1 tablespoon olive oil
¼ onion, diced
¼ cup diced zucchini
1 carrot, diced
1 rib celery, diced
2 cloves garlic, minced
1 teaspoon seasoned salt (such as Johnny's®), or to taste
½ cup seasoned bread crumbs
¼ cup mayonnaise
1 egg
1 teaspoon dried parsley
¼ teaspoon ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with cooking spray.
  • Fill a large pot with water and lemon-lime soda; bring to a boil. Add halibut chunks, a few at a time, and cook until they float to the top, 30 to 45 seconds. Transfer to a colander to drain.
  • Heat olive oil in a large skillet over medium-low heat. Add onion, zucchini, carrot, celery, and garlic; cook and stir until softened, about 5 minutes. Sprinkle seasoned salt on top.
  • Flake halibut chunks into a large bowl. Stir in onion mixture, bread crumbs, mayonnaise, egg, parsley, and cayenne pepper.
  • Scoop halibut mixture onto greased baking sheet with a cookie scoop; flatten into cakes.

"BRAISED" HALIBUT WITH GRILLED CORN CAKES

1 tablespoon olive oil
6 (6-ounce) halibut fillets
Salt and freshly ground black pepper
1/2 cup chopped carrots
1/2 cup chopped onions
1/2 cup chopped celery
3 to 4 cloves garlic, minced
1 cup dry white wine or vermouth
2 bay leaves
1 cup chicken broth
1/4 cup freshly chopped parsley leaves

Steps:

  • Heat oil in a large saucepan or Dutch oven over medium-high heat. Season halibut with salt and pepper. Add halibut to hot pan and cook 2 minutes per side, until golden brown. Remove halibut from pan and set aside.
  • To the same pan, add carrots, onions, celery, and garlic. Saute 3 minutes, until soft. Return halibut to pan and add wine. Simmer 1 minute. Add bay leaves and broth and simmer 10 minutes, until fish is fork tender. Remove from heat and add parsley.
  • Serve half of the halibut for this meal and reserve remaining halibut for a future meal.
