This is my mother's recipe. Simple but delicious! It tastes great with French fries or mashed potatoes and is great for the cold winter days!

2 -3 lbs stewing beef
1 red onion
2 garlic cloves, minced
24 ounces dark beer (Guinness for instance)
1/2 cup beef broth
3 cups mushrooms
salt & freshly ground black pepper
2 teaspoons dried thyme
1 1/2 tablespoons cornstarch

Steps:

  • Peel the garlic and the onion and cut it in half rings.
  • Heat up some olive oil in a large pot and brown the meat.
  • Stir in the garlic and the onion and let it simmer for about 2 minutes.
  • Warm up the beer and the broth and add it to the meat.
  • Add the thyme, pepper & salt to taste.
  • Let it all simmer with the lid on, for about 2 ½ hours until well done.
  • Clean and cut the mushrooms in half and add them to the stew.
  • Mix the cornstarch with a bit of cold water and thicken the stew to taste.

A luscious, tender Mexican beef stew with very basic ingredients. The oven baking makes the meat extremely tender, and the cumin gives it so much flavor! This is a typical Mexican beef stew, simple, with not a lot of vegetables. Serve folded up in warm tortillas, or on rice or with your favorite cornbread.

2 1/2 lbs chuck roast, trimmed of fat and cut in bite-sized pieces
4 tablespoons flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, chopped
2 -3 jalapeno peppers, seeded and minced
3 cups beef stock
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F.
  • Toss meat pieces with flour, then brown quickly in oil in an ovenproof Dutch oven.
  • Add onion, garlic, jalapeño, beef stock, tomato paste, cumin and chili powder; bring to a simmer on the stove.
  • Cover Dutch oven and place in the preheated oven, baking for about 2 to 2-1/2 hours, until meat is extremely tender.
  • Serve as is, or on rice, or folded into warm tortillas.

Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

4 teaspoons vegetable oil, divided, or as needed
12 shallots, peeled and left whole
1 pound cubed beef stew meat
1 tablespoon all-purpose flour
1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
2 onion, cut in half and sliced
1 large garlic clove, crushed
4 slices smoked streaky bacon, sliced into strips
1 ½ cups fresh button mushrooms
salt and ground black pepper to taste

Steps:

  • Preheat slow cooker on Low.
  • Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker. Add beef to the same skillet and cook until meat is seared on all sides and browned, about 5 minutes. Add flour and mix well. Pour in beer and bring to a boil. Transfer beef-beer mixture to the slow cooker.
  • Wipe out the skillet with a paper towel and add remaining 2 teaspoons oil. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and bacon and cook for 1 minute more. Transfer to the slow cooker. Add mushrooms and season generously with salt and pepper. Cover.
  • Cook on Low until meat is cooked through, about 5 hours.

I originally got this from a microwave cookbook but decided it was a hassle to open the microwave every 10 minutes. I adapted it to the stove top. Cooking time will depend on how tender the meat is. Maggi sauce can be found in most well-stocked supermarkets in the ethnic foods section.

4 slices bacon, chopped
2 lbs beef tenderloin, cut in small cubes
4 green onions, sliced
1 garlic clove, minced
1 canned chipotle chile, chopped
2 1/2 cups dark beer
4 tablespoons flour
1 tablespoon brown sugar
2 teaspoons maggi seasoning, sauce or 2 teaspoons Worcestershire sauce
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme, crushed
1 tablespoon red wine vinegar

Steps:

  • Heat a dutch oven over medium heat. Add the bacon and cook until crisp.Remove from heat.If it looks like there is more that 2 tbs grease, drain a little. Reserve the bacon.
  • Add the beef and brown on both sides; add the onions and garlic. Cook until onion is wilted. Add chile and mix.
  • Meanwhile in a bowl, whisk together the rest of the ingredients except the vinegar. Add to the beef. and bring to a boil. Lower the heat and cook, stirring once in a while, until the meat is tender and sauce has thickened.
  • Add the vinegar and mix well. Sprinkle with the bacon bits and serve very hot.
