IRISH GUINNESS BROWN BREAD

1 cup quick-cooking oats (not instant), such as McCann's, plus extra for sprinkling
2 1/4 cups whole wheat flour, such as Heckers
1/4 cup all-purpose flour
1/2 cup dark brown sugar, lightly packed
2 1/4 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons kosher salt
1 (11- to 12-ounce) bottle Guinness extra stout beer, at room temperature
1 cup buttermilk, shaken
5 tablespoons unsalted butter, melted, plus extra for brushing the pan
1 teaspoon pure vanilla extract
Salted butter, such as Irish Kerrygold

Steps:

  • Preheat the oven to 450 degrees.
  • In a large bowl, combine the oats, whole wheat flour, all-purpose flour, brown sugar, baking soda, baking powder, and salt. In a separate bowl, whisk together the beer, buttermilk, melted butter, and vanilla. Make a well in the dry ingredients and pour the wet ingredients into the well. With your fingers, stir the batter from the middle of the bowl to the outside, until it's well mixed. It will look more like cake batter than bread dough.
  • Brush a 9 x 5 x 2 1/2-inch loaf pan with melted butter. Pour the batter into the pan and sprinkle the top with oats. Put the bread in the oven, immediately turn the temperature down to 400 degrees, and bake for 45 minutes, until a toothpick comes out clean. Turn the bread out onto a baking rack and allow to cool completely. Slice and serve with salted butter.

I developed this recipe after visiting my ancestral homeland of Ireland. It's a great way to get Guinness into your bread! Serve warm with butter and honey.

1 cup regular rolled oats, plus additional
2 cups whole wheat flour
½ cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup melted butter
2 teaspoons vanilla extract
1 cup buttermilk
1 (12 fluid ounce) can or bottle Guinness® beer

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
  • Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
  • Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.

600 g whole meal flour
150 g plain flour
75 g oatmeal
2 1/2 teaspoons bread baking soda
1 teaspoon salt
2 1/2 tablespoons brown sugar
40 g unsalted butter
480 ml whole milk (please use whole milk, not reduced fat or skim milk)
200 ml black treacle
1/2 pint Guinness draught (please do NOT use Extra Stout or Foreign Extra Stout in this recipe)

Steps:

  • In a large bowl, mix all the dry ingredients and the butter until the dough is the consistency of breadcrumbs.
  • Add the milk, black treacle, and Guinness Draught, mixing until you get a wet dough.
  • Place dough in a greased bread tin, and bake in a preheated (170C/338F) oven for 40-45 minutes.

To make 1 loaf:
This is for 2 loaves: (save half for later!)
7 cups all-purpose flour
6 Tbsp. sugar
2 Tbsp. baking powder
3 tsp. salt
12 ounces Guiness Extra Stout
handful caraway seeds
1/4 c pecan pieces
1/4 c (1 stick) melted butter

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 375 degrees. Mix flour, sugar, baking powder and salt in a large bowl. Mix well. Place a fat 3 1/2 cups of this mix into a baggie or jar to save for another day. To the remaining fat 3 1/2 cups flour mixture, toss in the caraway seeds, pecan pieces and mix. Add the Guinness. Stir with a fork or sturdy spatula until combined. Turn the lumpy dough into a buttered loaf pan. Pour melted butter over top of loaf. Bake until golden brown, about 45-60 minutes. Transfer to a wire rack to cool.

  • In a large bowl cream the brown sugar, banana, eggs, vanilla and oil; set aside.

1 (12-ounce) bottle Irish stout beer
1 cup grated Irish cheddar cheese (about 4 ounces)
1/4 cup chopped chives
1/4 cup Irish butter, melted

Steps:

  • Preheat oven to 375° F. Line 8 1/2- x 4 1/2-inch loaf pan with parchment paper, or coat with butter. In a mixing bowl, thoroughly whisk together the flour, sugar, baking powder, and salt. Pour in the beer and mix until the dry ingredients are evenly moistened. Fold in 3/4 cup of the cheese and the chives. Transfer the batter to prepared pan. Pour the melted butter evenly over top of the dough. Bake about 30 minutes then scatter the remaining 1/4 cup of cheese over the top. Return the loaf to the oven and bake 15 to 20 minutes longer or until a tester inserted near the center comes out clean. Cool in the pan for 5 minutes. Turn out and serve warm, sliced.

3 cups self-rising flour*
1/2 cup white sugar
1/3 cup molasses
A pinch of salt (roughly 1/8 teaspoon)
12 ounces of Guinness beer
Butter for greasing the pan and painting the top, about 3 tablespoons
If you don't have self-rising flour, you can substitute using a ratio of 1 cup all-purpose flour, 1 1/4 teaspoon baking powder, plus 1/8 teaspoon of salt, for every cup of self-rising flour. Have made both ways though and got better results from the self-rising flour.

Steps:

  • Preheat oven to 350°F. Grease a 9x5-inch loaf pan well with butter. 2 Pour the flour, salt and sugar into a large bowl and whisk to combine. 3 Slowly pour the Guinness into the flour mixture. (The "pub cans" are larger than 12 ounces, but they have better carbonation, so I pour most of it out and leave a swig to drink. This has never failed me, but if you are a stickler, use a 12-ounce bottle of Guinness instead.) Start stirring the beer into the dry ingredients, and when you are about halfway done, add the molasses. Mix well, just to combine. Don't work the heck out of the batter - because that's what it'll look like - but you don't want lumps, either. 4 Pour into the loaf pan to no more than 2/3 full. Pop into the oven immediately and bake for 50 minutes. Since ovens can vary, check the bread after 40 minutes and see if a toothpick inserted into the deepest part of the loaf comes out clean. If it does, you're done. 5 Let the loaf cool a bit, maybe 5 minutes, and then turn it out onto a rack. Paint it with lots of soft butter, which will melt as you go.

3 tsp baking powder (omit if using self-rising flour)
1 tsp salt (omit if using self-rising flour)
1/4 c sugar
1 can(s) or bottle (14.9 ounce) of guinness draught (or other dark beer)
1/2 c melted, unsalted butter - divided (1/4 cup for the batter and 1/4 cupfor pouring over the top before baking)

Steps:

  • 1. Preheat oven to 375 degrees. Prepare a large loaf pan (or 2 smaller ones) by spraying lightly with oil (like Pam Spray or Baker's Joy)
  • 2. REMEMBER TO DOUBLE SIFT THE FLOUR - either the self-rising or AP flour. NOTE: measure after sifting
  • 3. Mix the dry ingredients, 1/4 cup melted butter, and beer together. Pour into a prepared loaf pan
  • 4. Pour the remaining 1/4 cup of melted butter over mixture; and then bake 1 hour.
  • 5. Remove to a wire rack and let cool for a few minutes. Turn the loaf out and slice at least 1" pieces. Serve warm, with or without spreading on softened butter or honey. Enjoy!

IRISH SODA BREAD AND GUINNESS BUTTER

Crusty on the outside and tender inside, this Irish soda bread will be delicious on St. Patrick's Day. It's filled with flavor from the caraway seeds. Raisins add a pop of sweetness to the bread. Once baked, it's a dense bread but not dry. It freezes wonderfully too. We loved the Guinness butter on a piece of soda bread. Guinness has a robust flavor that's prevalent in the butter. It's sweet and savory at the same time. Enjoy for breakfast, as a snack, or alongside a bowl of hearty beef stew.

  • Preheat oven to 350F. Grease 1 9-inch round pan.
  • In the mixer bowl combine flour, caraway, raisins, cubed butter, sugar, baking powder, salt, and baking soda.
  • In a measuring cup with buttermilk, add one egg and beat. In a separate bowl, take the remaining egg and a bit of water and beat. Reserve this to brush dough with just prior to placing it in the oven.
  • With the mixer on low speed, add buttermilk and egg mixture. Mix until just blended; do not over mix.
  • Place dough on a floured surface. Add a bit more flour to top of the dough ball and knead for about 10 strokes to make a ball.
  • Place in greased pan. Baste with egg wash.
  • Cut a cross on the top with a sharp knife.
  • Bake for 1 1/2 hours. Allow to cool and wrap in plastic wrap this goes stale quickly.
  • A great addition to the final product is Guinness butter. To make, mix 2 sticks of room temp butter, 3 oz of Guinness, and 3 tablespoons honey in a mixer.
  • Served on this bread is very yummy!

GUINNESS BEEF STEW IN BREAD BOWLS RECIPE - (4/5)



Guinness Beef Stew in Bread Bowls Recipe - (4/5) image

1 1/2 pounds beef cubes
1 teaspoon salt
3 tablespoons all-purpose flour
4 tablespoons olive oil
1 large onion, finely chopped
6 cloves garlic, chopped
4 cups beef broth (you can also use chicken broth)
1 can (14.9-ounces) Guinness Draft
2 bay leaves
2 large sprigs of fresh thyme
2 teaspoons salt
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1/4 teaspoon ground pepper
3 medium carrots, peeled and chopped
2 large parsnips, peeled and chopped
3 large potatoes, peeled and chopped
4 tablespoons all-purpose flour
Medium-sized round loaves of bread (day old bread is ideal)

Steps:

  • Heat the 4 tablespoons of olive oil in a large pot over medium-high heat. Separately, in a large bowl, toss the beef cubes with the 3 tablespoons of flour and 1 teaspoon of salt. Once the oil is hot, add in the beef cubes. Sauté for 6-8 minutes, or until the meat has browned. Next, add in the chopped onion. Sauté for 5 minutes, then add in the garlic and continue cooking for 2 minutes. Then, turn the heat down to medium and stir in the beef broth, Guinness, bay leaves, thyme, salt, sugar and Worcestershire sauce. Let simmer for 30 minutes. Lastly, add in the vegetables (carrot, parsnip, potatoes). Continue cooking for about 45 minutes, or until the potatoes are tender when pierced with a knife. To thicken the broth, scoop about 1 cup of the hot broth into a small bowl and whisk in 4 tablespoons of flour. Once mixed (it should resemble a thick, smooth paste), slowly stir the flour/broth mixture back into the pot and continue simmering the soup over medium-low heat until ready to serve. To make the bread bowls, use a serrated knife to cut a circle into the top of a round loaf of bread. You'll want to make sure that when you cut that you leave about 1-1 1/2-inches of bread around the sides. Then, use your hands to pry off the circle of crust that you cut out as well as scooping out some of the interior. As with the sides, make sure to leave about 1 1/2-inches of bread on the bottom so that the stew doesn't soak through.
