I was in the process of making a "quick" guacamole to go with fajitas. The salsa I had planned to use had gone bad. Rotel to the rescue. I drained a can of Rotel tomatoes and dinner was saved.

2 Hass avocadoes
1/2 medium onion, chopped
1 serrano pepper, minced
1 garlic clove, minced
1 (10 ounce) can Rotel tomatoes & chilies, drained
1 tablespoon lemon juice
salt and pepper, to taste

Steps:

  • Cut avocados in half, remove pit and scoop out pulp; place in medium size bowl along with onion, pepper and garlic.
  • Mash the avocado and stir in drained Rotel tomatoes and green chili, sprinkle with lemon juice, stir, adjust seasoning to taste and serve.

3 avocados
Salt
Pico de Gallo, recipe follows
Tortilla chips, for serving
3 yellow or red onions
12 Roma tomatoes (slightly under ripe is fine)
2 cups fresh cilantro leaves
2 to 3 jalapenos
1 lime
Salt

Steps:

  • Halve the avocados lengthwise. Remove the pit and dice the flesh inside the shell. Squeeze the diced avocado into a bowl.
  • Next, sprinkle on some salt and mash away with a fork until you get the avocado to the consistency you want.
  • Now throw on a big pile of Pico de Gallo and stir together gently. Always test the guacamole with tortilla chips so you'll get a more accurate gauge of the salt content.
  • Dice up equal quantities of onion and tomato. Roughly chop the cilantro.
  • Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don't want to cause any fires. Now dump the four ingredients into a bowl.
  • Slice the lime in half and squeeze the juice from half a lime the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed.

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
½ cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper

Steps:

  • In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
