A recipe from the September 2006 Bon Appetit magazine. I spooned this over #19710 Grilled Cauliflower, oooh, it's so good.

2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/2 cup grated gruyere cheese
kosher salt, to taste
fresh ground white pepper, to taste

Steps:

  • Melt butter in small saucepan over medium-low heat.
  • Add flour; stir 2 minutes (do not brown).
  • Gradually whisk in 1 1/2 cups milk.
  • Increase heat to high; bring to boil, then reduce heat to medium and simmer until mixture is thickened, stirring constantly, about 4 minutes.
  • Remove from heat.
  • Add cheese, stir until melted.
  • Season with salt and pepper.
  • Do Ahead: This cheese sauce can be made 2 hours ahead.
  • Let stand at room temperature.
  • Rewarm before using, adding more milk if sauce is too thick.

Oven Roasted Cauliflower in Gruyere Cheese Sauce-Weight Watchers image

I found this recipe on www.laaloosh.com website, and I thought it sounded delicious and worth a try. Here, the cauliflower is oven roasted instead of being cooked in a saucepan or steamer.

1 large head cauliflower, chopped into florets
4 teaspoons all-purpose flour
1 cup fat-free buttermilk
2 tablespoons white wine
1/2 cup gruyere cheese, shredded
1 tablespoon shallot, minced
1 tablespoon fresh chives, finely chopped
3 garlic cloves, minced
1 teaspoon salt (to taste)
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 450°.
  • Spray a large casserole dish with non-fat cooking spray. Add cauliflower florets to dish and lightly coat them with non-fat cooking spray. Then season with half the salt and pepper. Put into oven and roast for 25 minutes or until cauliflower is golden brown.
  • Meanwhile, whisk flour with 2 tablespoons buttermilk until smooth.
  • Heat the wine and remaining buttermilk in a saucepan over medium heat until steaming. Add the flour mixture; cook, whisking, until the sauce bubbles and thickens, 2 to 3 minutes.
  • Remove from heat; stir in Gruyere, chives, shallots, garlic, salt and pepper. Spoon over the cauliflower and serve.

This is great side dish. The cauliflower is topped with Swiss gruyere cheese, and it's oven roasted instead of being steamed or cooked in a saucepan. It's actually a Swiss recipe (not German). But there is no option for Swiss cuisine, so I picked the closest match possible.

PHILLY CHEESE STEAK WITH SMOKED GRUYERE SAUCE



Philly Cheese Steak with Smoked Gruyere Sauce image

1/4 cup unsalted butter
1/4 cup whole-wheat white flour
2 cups evaporated milk
1 cup smoked Gruyere cheese, shredded
2 tablespoons canola oil
1 large Spanish onion, thinly sliced into rings and halved
1 large green pepper, thinly sliced into rings and halved
2 pounds rib-eye steak, thinly shaved from butcher (fat included)
1/8 teaspoon seasoning salt
Sea salt
Freshly ground pepper
Extra-virgin olive oil
Vinegar
Dried oregano
4 soft hoagie rolls, amoroso rolls or steak sandwich bread, split lengthwise
Salty potato chips, for serving

Steps:

  • For the sauce: Melt the butter in saucepan over medium-low heat. Add the flour and stir until blended. Slowly whisk in the milk until the sauce thickens, stirring constantly, about 5 minutes. Stir in the cheese until melted.
  • For the philly: Heat the oil in a pan over medium-high heat. Add the onions and green peppers, tossing around to flavor the oil, until starting to change color, 10 to 12 minutes. Add the steak and start chopping using a spatula, moving it around the skillet until there's a sprinkling of both browned and red meat. Add the seasoning salt, some sea salt, black pepper, olive oil, vinegar and oregano. Really dig the spatula into the meat, moving it around until it's all cooked evenly, about 2 minutes, depending on desired doneness.
  • Lay the meat onto the rolls and top with the smoked Gruyere cheese sauce. Serve with salty potato chips.
