1 (8 ounce) package uncooked egg noodles
1 tablespoon vegetable oil
1 pound ground turkey
1 tablespoon minced onion
1 cube chicken bouillon, crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup water
1 tablespoon paprika
salt to taste

Steps:

  • Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes, until al dente, and drain.
  • Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon.
  • Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Season with paprika and salt. Serve over the cooked egg noodles.

Low fat made with a puree of winter squash be it pumpkin, acorn or butternut any hard squash. You can use canned pumpkin or roast and puree your own. Very nicely seasoned with sage, parsley, turmeric, cumin a bit of heat from pepper flakes and of course onions and GARLIC!

1 tablespoon oil
3 -6 garlic cloves, minced
1 large onion, diced
1 1/4 lbs ground turkey
2 tablespoons fresh sage, minced and divided in half
1/2 teaspoon nutmeg
2 teaspoons dried parsley or 2 tablespoons fresh parsley
1/2 teaspoon chili pepper flakes
2 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon turmeric
1 -2 teaspoon curry
1 cup pureed squash
1 cup low-fat milk ((use cream for more richness if not watching your fat in take)
1 cup frozen peas, defrosted
1 lb noodles, cooked

Steps:

  • Heat oil in a large pan. Add onions and garlic cook till translucent about 3 minutes.
  • Add ground turkey and cook for 5 more minutes stirring to break up. Sprinkle ingredients 1/2 the sage through the curry over the turkey mixture and mix inches Add pureed squash and milk. Stir to mix and thicken. Add peas and remaining sage toss to mix.
  • Serve over noodles.
  • If need be, you can butter or oil the noodles. I did avoid to keep the fat down! Garnish with sage.

1 large onion (diced)
3 cloves garlic (minced)
28 ounces canned diced tomatoes
28 ounces canned crushed tomatoes
¾ cup water
1 large green bell pepper (diced)
3 tablespoons tomato paste
1 tablespoon Italian seasoning
1 teaspoon sugar
½ teaspoon salt
¼ cup fresh parsley (chopped)
2 tablespoons fresh basil (chopped)

Steps:

  • Brown ground turkey with onion and garlic until no pink remains. (Drain fat if needed).
  • Add remaining ingredients (except parsley & basil) slightly breaking up the tomatoes. Bring to a boil, reduce heat and simmer uncovered 1 hour or until desired consistency.
  • Stir in parsley & basil.
  • Serve over hot pasta.

3 cups wide egg noodles
1 pound ground turkey
1 onion, chopped
1 (15 ounce) can tomato sauce
1 teaspoon Italian seasoning
½ cup milk
4 ounces cream cheese
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 ¼ cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain.
  • Heat a large skillet over medium-high heat and stir in turkey and onion. Cook and stir until turkey mixture is crumbly, evenly browned, and no longer pink, about 10 minutes; drain. Stir in tomato sauce and Italian seasoning; bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  • Combine milk, cream cheese, parsley, and garlic in a small saucepan. Cook and stir over medium heat until cream cheese is melted, about 5 minutes.

1 medium spaghetti squash (about 4 pounds)
1 pound lean ground turkey
2 cups sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup white wine or beef stock
3 tablespoons cornstarch
2 cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon Montreal steak seasoning
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 cup half-and-half cream
Optional: Grated Parmesan cheese and minced fresh parsley

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-18 minutes., Meanwhile, in a large nonstick skillet, cook the turkey, mushrooms and onion over medium heat until turkey is no longer pink, breaking it into crumbles; drain. Add garlic; cook 1 minute longer. Stir in wine., Combine cornstarch and stock until smooth. Add to pan. Stir in the Worcestershire sauce, steak seasoning and thyme. Bring to a boil; cook and stir until thickened, 2 minutes. Reduce heat. Stir in cream; heat through., When squash is cool enough to handle, use a fork to separate strands. Serve with turkey mixture. If desired, sprinkle with cheese and parsley.

CREAMY GROUND TURKEY, SPINACH AND PEA PASTA



Creamy Ground Turkey, Spinach and Pea Pasta image

This dish is a great way to feed a group of people and make a pound of meat stretch. I also sneak in veggies like spinach and peas for picky eaters. Rich, creamy and filling, this pasta is perfect for busy weeknights or special enough for entertaining.

Kosher salt and freshly cracked black pepper
Extra-virgin olive oil
1 pound dark meat ground turkey
3 cloves garlic, minced or grated
1 tablespoon minced thyme leaves
1/4 cup all-purpose flour
1/4 cup dry vermouth or white wine
1 1/2 cups whole milk
1 cup freshly grated Parmesan, plus more for garnish
1 pound torchiette or any short pasta
1 bunch spinach, roughly chopped
1 cup frozen peas

Steps:

  • Bring a large stock pot of salted water to a boil.
  • Meanwhile, heat a large nonstick skillet over medium heat. Add 1 to 2 tablespoons olive oil along with the ground turkey and cook, breaking up the turkey with a wooden spoon, until browned, about 8 minutes. Season with salt and pepper. Turn the heat to medium low and add the garlic and thyme; cook, stirring, until fragrant, about 2 minutes. Next, add the flour and stir to coat. If the skillet looks too dry, add 1 to 2 more tablespoons olive oil. Cook, stirring, until it smells nutty, about 2 minutes. Deglaze the skillet with the vermouth or white wine and cook, scraping up the browned bits with the wooden spoon, until the liquid evaporates. Next, add the milk and 1 cup Parmesan, liberally season with salt and pepper then simmer on low heat until the sauce thickens, 8 to 10 minutes.
  • At this point drop the pasta into the boiling water and cook per the package directions until al dente.
  • Five minutes before the pasta is ready, add the spinach and peas to the sauce and cook over low heat, stirring occasionally, for 5 minutes. Taste for seasoning; add more salt and pepper, if necessary. Add the pasta, along with 3/4 to 1 cup of the pasta cooking water, directly to the skillet and stir until the sauce is thick and creamy, 1 to 2 minutes.
  • Serve the pasta in shallow bowls, then sprinkle with pepper and extra Parmesan.
