1 lb ground turkey
1 medium onion
3 cups tomato juice
3 cups beef broth
3 -4 medium red potatoes, cubed
2 carrots, chopped small
2 stalks celery, chopped small
1 (14 ounce) can pinto beans (your choice) or 1 (14 ounce) can red beans (your choice)
1 (14 1/2 ounce) can diced tomatoes
1/4-1/2 teaspoon garlic powder
1/4-1/2 teaspoon dried oregano
1/4-1/2 teaspoon dried basil
1 dash Old Bay Seasoning
2 bay leaves
1 tablespoon Worcestershire sauce
grated cheese (your choice, I used Romano)

Steps:

  • Brown turkey in a large saucepan; drain.
  • Add onion, carrots, celery.
  • Sauté about 5 minutes Add tomato juice, beans, broth diced tomatoes and spices.
  • Bring to a boil and then reduce heat.
  • Simmer covered 45 minutes to 1 hour or until vegetables are tender.
  • Add Worcestershire sauce and simmer another 5 minutes.
  • Put in bowls.
  • Sprinkle with cheese.
  • Serves 6.

1 lb lean uncooked ground turkey
5 cups water
1 (14 1/2 ounce) can no-salt-added diced tomatoes, undrained
1 cup spicy v8 juice
1/3 cup quick-cooking barley
1/3 cup dried split peas, rinsed and drained
1 teaspoon salt
1/2 teaspoon dried oregano, crushed
1/4 teaspoon dried basil, crushed
1/2 teaspoon ground black pepper
1 bay leaf
2 stalks celery & leaves, cut into 1/2-inch pieces (1 cup)

Steps:

  • Lightly coat a 4-quart Dutch oven or pot with cooking spray. Heat over medium heat. Cook ground turkey in hot Dutch oven about 5 minutes or until no longer pink, stirring occasionally. Drain off any fat. Stir in water, undrained tomatoes, V8 juice, barley, split peas, salt, oregano, basil, black pepper and bay leaf. Bring to a boil; reduce heat. Simmer, covered, for 30 minutes.
  • Stir celery into soup mixture. Simmer, covered, for 30 minutes more or until celery and barley are tender. Remove and discard bay leaf. Makes.

2 medium carrots, diced
1 small onion, diced

1 ½ teaspoons ground black pepper

Steps:

3 tablespoons Knorr chicken bouillon
1 teaspoon pepper
1 teaspoon season salt

Steps:

  • Chop up all vegetables.

1 teaspoon minced garlic
1 teaspoon mrs. dash original flavor seasoning
1 (14 1/2 ounce) can stewed tomatoes
1 (14 1/2 ounce) can diced tomatoes
1 (28 ounce) bag frozen soup vegetables
5 cups water
1 tablespoon fresh dill
1 tablespoon fresh parsley

Steps:

  • Saute` onion in cooking spray.
  • Add ground turkey and cook until almost fully browned.
  • Add garlic and Mrs. Dash and finish browning turkey.
  • Add tomatoes, vegetables and water and bring to a simmer.
  • Simmer, covered for 45 minutes to an hour.
  • Sprinkle with fresh herbs and serve.

10 ounces ground turkey
1/2 onion (diced)
1/2 head green cabbage
1 (14 1/2 ounce) can okra (cut okra)
2 (14 1/2 ounce) cans tomatoes (diced)
1 cup water
3 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can green beans
1 (14 1/2 ounce) can corn (whole kernels)
1 tablespoon chili powder (optional)
1 teaspoon oregano (dried)
salt and pepper, to taste at the end of the cook

Steps:

  • Add all ingredients to a large stew pot and simmer on the top of the stove for 35 minutes after the soup reaches the boiling point.

This has to be the easiest soup ever to make. It's like beef stew but subbing out the beef for ground turkey. I started making this when I cut back my beef intake. I don't add potatoes which makes for a very satisfying healthy low carb meal. I've found that extra lean ground turkey tends to be chewy and doesn't absorb the sauce and spice very well so I use regular ground turkey. You can use chicken, beef or veggie broth and any additional veggies that you like.

3 tablespoons olive oil
1/3 cup chopped celery
1 onion, chopped
1 lb ground turkey
4 cloves of minced garlic
1 teaspoon pepper
1/2 teaspoon salt
1 (14 ounce) can stewed tomatoes
1 beef stew seasoning (I use McCormick's)
3 cups water
1 cup beef broth
2 zucchini, quartered and chopped
2 squash, quartered and chopped
3 -4 carrots, chopped
1/2 cup frozen corn
1 cup frozen cut green beans

Steps:

  • Heat olive oil in large pot and saute onions and celery until translucent, about 5-7 minutes.
  • Add ground turkey and season with salt and pepper, add the minced garlic.
  • Brown until no longer pink while stirring and breaking up large chunks of meat, drain well and return to pot.
  • Add stewed tomatoes with juice along with remainder of ingredients.
  • Bring to a boil, cover and simmer for an hour 1/2 or until veggies are soft.

I came up with this one cold and rainy afternoon because I wanted something healthy, spicy, tasty and warm. I was pleasantly surprised with the results and thought I better write this down before I forget, because I want to make it again!

2 tablespoons vegetable oil
1 yellow onion, chopped
3 garlic cloves, minced
1 1/2 lbs ground turkey
1 serrano pepper, finely chopped
1/3 cup chopped cilantro
1 (14 1/2 ounce) can stewed tomatoes
2 cups frozen corn kernels
8 ounces of sliced button mushrooms
1 teaspoon dried chipotle powder
1 lime, juice of
2 (14 ounce) cans low sodium chicken broth
salt and pepper
chopped fresh cilantro
sour cream, if you like

Steps:

  • Heat oil in a 4 quart soup pot on medium high.
  • Sautee onions and garlic until soft and transparent.
  • Push it to the side and add ground turkey.
  • Cook until nicely browned and mix with onion mixture.
  • Add serrano peppers, cilantro, stewed tomatoes and corn, cook for 5 minutes, stirring frequently.
  • Add mushrooms, chipotle chile powder, lime juice and chicken broth.
  • Bring to boil, lower heat and simmer for 5 minutes.

Ground turkey can be used just like ground beef. I substitute it in many recipes because it drastically reduces the fat content. Many are scared they will not like it as well as ground beef, but many times it is cheaper to buy and provides just as much flavor in your recipes. This is a hearty soup and a meal in itself. To me, that is the only way to eat soup!

2 tablespoons butter or 2 tablespoons margarine
2 cloves garlic, crushed
1 small onion, diced
1/2 cup sliced fresh mushrooms (or canned)
1 lb ground turkey
2 lbs red potatoes, cut in 1 inch chunks
1 lb string bean, trimmed
4 chicken bouillon cubes
4 -6 cups water
2 -3 teaspoons dried dill weed
salt and pepper

Steps:

  • Melt the butter in a Dutch Oven or large soup pot.
  • Saute garlic, onion, and mushrooms over medium heat until tender, about 5 minutes Add turkey, cooking until browned.
  • Add potatoes, string beans, water and boullion cubes and cook over medium heat until potatoes are tender, about 30-40 minutes, stir occasionally Add dill weed and reduce heat to low, simmering about 10 minutes.
  • Add salt and pepper to taste and serve.
