- In a large skillet, cook turkey and onion over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; stir in chili seasoning. Transfer to a 3- or 4-qt. slow cooker. Pour tomatoes and tomato sauce over turkey., Cook, covered, on low 2-3 hours or until heated through. Stir turkey mixture to combine. Top with beans. Sprinkle with cheese. Cook, covered, 5-10 minutes or until cheese is melted. Top with chips. If desired, serve with sour cream, minced cilantro and additional onion.

Steps:
- Sautee ground turkey and season with taco seasoning according to packet directions. Set aside.
- Dice onion, bell pepper, tomatoes, and avocados. Slice olives. Crush 1 cup corn chips for topping and set aside.
- In a medium bowl combine remaining corn chips, cheese, cooked meat, black beans, enchilada sauce, sauteed vegetables, olives and corn. Once well blended, place in 2 quart casserole dish.
- Top meat mixture with crushed corn chips.
- Bake at 375F for about 20 minutes or until heated through.
- Serve on a bed of shredded lettuce and top with diced tomatoes and avocados, hot sauce and sour cream to taste.

- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.
