Simple and fast enchiladas made with easy to get ingredients and ground turkey. I made this one up myself for our family dinner tonight actually and it turned out really yummy! Served with refried beans and sour cream.

1 lb ground turkey
1 small onion
1 (4 ounce) can mild diced green chilies
1 (20 ounce) can enchilada sauce
10 flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Brown ground turkey and onion together. Drain any liquid.
  • Add green chilies and about 1/2 cup of the enchilada sauce.
  • Place a couple spoonfuls of meat mixture into each tortilla and roll.
  • Place into a 9x13 baking dish.
  • Cover rolled enchiladas with remaining enchilada sauce.
  • Top with cheese.
  • Bake at 350F for 10-15 minutes until heated through and cheese is melted and sauce is bubbly.

1 lb. ground turkey
1 small onion, chopped
1 red pepper, chopped
1/4 cup KRAFT Zesty Italian Dressing
1 jar (16 oz.) TACO BELL® Thick & Chunky Salsa, divided
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, divided
12 flour tortillas (6 inch)
6 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 375°F.
  • Cook turkey with onions and peppers in dressing in large skillet on medium heat until turkey is done, stirring frequently. Stir in 1/4 cup salsa; simmer on medium-low heat 2 min. Remove from heat; stir in 1 cup cheese.
  • Spread 1/4 cup salsa onto bottom of 13x9-inch baking dish. Spoon about 1/4 cup turkey mixture down center of each tortilla; roll up. Place, seam sides down, in dish. Spoon remaining salsa over enchiladas; cover.
  • Bake 20 min. Uncover; top with remaining cheese. Bake 10 min. or until enchiladas are heated through and cheese is melted. Top with sour cream and cilantro just before serving.

I like to get inspired by recipes and then tweak them into my own fabulous creations. Unsure of what to make for Sunday dinner, but needing a quick and economical solution to my dilemma, I came up with these. I served these with a salad that was topped with a fresh pineapple and fresh cilantro vinaigrette I concocted. I hope you love them as much as we did! This is a great idea to use up that left over rice. Also leave out the turkey for a vegetarian option.

1 lb lean ground turkey
1 teaspoon oil
1 1/4 ounces taco seasoning mix
1 red onion, finely diced
1 green pepper, finely diced
8 small sun-dried tomatoes (optional)
16 ounces salsa, chunky
1 (4 1/2 ounce) can green chilies, chopped, divided (optional)
1 (4 1/2 ounce) can jalapeno peppers, chopped (optional)
1 (16 ounce) can corn (optional)
1 (16 ounce) can black beans (or beans of your choice)
1 cup cooked rice (great idea for left over rice)
8 tortillas, whole wheat
2 cups cheese, divided (I recommend Mexican or Taco Blend)
6 ounces black olives, sliced for topping
8 ounces sour cream, for topping
1 bunch fresh cilantro, finely chopped

Steps:

  • Begin to brown the ground turkey in a frying pan. (make sure it is big enough to fit the rest of the diced vegetables).
  • Stir in all the veggies and let them cook down.
  • Add the taco seasoning mix as directed on the package. If you like cilantro you can add it to your taste at this point.
  • Heat your oven to 350 degrees.
  • Once the meat is cooked and the veggies have softened, you can add the canned peppers, beans, corn and about 1/4 of the salsa.
  • Lightly grease the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with turkey mixture and your cooked rice and sprinkle with cheese before folding.
  • Fold tortillas over the filling and place seam-side down in the prepared pan.
  • Pour the rest of your salsa over the top evenly over the enchiladas. Cover with the remaining cheese.
  • Sprinkle the reserved chopped green chilies and the sliced olives on top of the cheese.
  • Bake in the preheated oven until filling is heated through and the cheese is melted and bubbling, about 25 -30 minutes.
  • Top with sour cream and fresh chopped cilantro and serve.

1 1/2 lbs ground turkey
14 ounces frozen spinach, thawed and drained
2 cups salsa
14 ounces diced tomatoes
10 flour tortillas
2 cups Mexican blend cheese
1 (8 ounce) package cream cheese
ground cumin

Steps:

  • Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
  • Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
  • Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
  • Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

1 lb extra lean ground turkey
1/2 c chopped green pepper (optional)
1 large onion, chopped
1 tsp. brown sugar
1 tsp. garlic powder
1 tsp. chili powder
1/8 tsp. salt
1 can (28 oz) crushed tomatoes, divided
4 oz reduced fat or fat free cream cheese
1/4 cup light or fat free sour cream
1 tsp. spicy garlic seasoning (I used garlic powder and added a bit of cayenne to taste)
3/4 cup prepared salsa
8 tortillas, warmed
1/2 cup shredded 2 % mexican four cheese blend (or whichever kind you prefer)

Steps:

  • Brown turkey along with pepper and onion in a skillet. Once browned, add brown sugar, garlic powder, salt and chili powder. Stir in 1 cup crushed tomatoes and simmer uncovered over low heat for 10 minutes, stirring occasionally. Meanwhile, combine sour cream, spicy garlic seasoning, and cream cheese with mixer. Set aside. Mix 3/4 of this mixture into the meat mixture in the last 2 minutes of simmering. Stir well to combine. Prepare 9x13 pan with baking spray. Combine salsa and remaining tomatoes and spread 1 cup of this into the bottom of the pan. Spread a small amount of the cream cheese mixture onto a tortilla, fill with about 1/3 c turkey mixture, and roll. Place seam side down into dish. Finish this process with the rest of the meat mixture. Spread remaining tomato/salsa mixture over the top and sprinkle with cheese. Cook uncovered for 25 minutes at 350 degrees F. Serve topped with sour cream and taco sauce if desired.
