1 pound ground beef
1 medium onion, chopped
1 clove garlic, minced, or more to taste
1 (10 ounce) can sliced mushrooms, drained
1 teaspoon dried oregano
2 dashes hot pepper sauce, or more to taste
salt and ground black pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (10 ounce) can condensed cream of celery soup
1 cup sour cream
1 (8 ounce) package grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add mushrooms, oregano, hot sauce, salt, and pepper. Simmer for 5 minutes. Add spinach, soup, and sour cream; cook until heated through, about 5 minutes.
  • Transfer to a casserole dish and cover with mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, 15 to 20 minutes.

This creamy, cheesy Spinach and Ground Beef Casserole is an old-fashioned, easy dinner that's ready for the oven in about 30 minutes!

1 lb. ground beef
1 cup finely chopped onion
1 tablespoon minced fresh garlic
2 (10 oz) boxes frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
½ cup sour cream, at room temperature
½ cup milk, at room temperature
½ teaspoon kosher salt
2 cups shredded mozzarella cheese, divided
¾ cup French-fried onions

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
  • Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
  • Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

3 tablespoons vegetable or canola oil
4 cloves garlic, minced
3 Thai chiles, such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced* (See Cook's Note)
1 pound flank steak, very thinly sliced
3 shallots, thinly sliced
1 red bell pepper, stemmed, cored, seeded and cut into 1/8-inch thick slices
1/4 cup fish sauce*
2 tablespoons sweet soy sauce*
2 tablespoons black soy sauce*
1 tablespoon chili paste in soy bean oil*
1 1/2 cups chopped fresh Thai basil leaves*
1 cup whole fresh mint leaves
Serving suggestion: sticky or steamed white rice

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the garlic and chiles and cook until aromatic, about 30 seconds. Add the steak and cook, stirring frequently, for 2 minutes. Add the shallots and bell pepper and cook for 1 minute. Add the fish sauce, sweet soy sauce, black soy sauce and chili paste. Bring the mixture to a low simmer and cook, stirring frequently until the meat is cooked through and the vegetables are tender, about 3 minutes. Remove the skillet from the heat and stir in the basil and mint until wilted. Transfer to a serving dish and serve over steamed white rice.

10 ounces fresh spinach, stemmed and washed
1/2 cup fresh cilantro stem
1/4 cup fresh mint leaves
1/4 cup canola oil
1 cinnamon stick (1-inch piece)
8 green cardamom pods
6 whole cloves
4 garlic cloves, finely minced
2 inches piece fresh ginger (peeled and grated)
1 large onion, quartered, then sliced 1/2-inch thick
1 fresh hot green chili pepper, cut crosswise into 1/2-inch rounds
1 teaspoon salt (to taste)
1 1/2 lbs lean ground beef
1/2 teaspoon ground black pepper
1 cup plain yogurt, whisked until smooth
1/2 teaspoon garam masala

Steps:

  • For the green paste, bring 2 inches of water to a boil in a large saucepan over high heat. Add the spinach and stir. Cover and steam, stirring every now and then, until wilted, about 5 minutes. Puree in a blender (with any remaining water) along with the cilantro and mint leaves. Set aside.
  • Heat the oil with the cinnamon stick, cardamom, and cloves in a large, heavy-bottomed casserole over medium-high heat and cook, stirring, until the cinnamon unfurls, about 2 minutes.
  • Add the garlic and ginger and cook stirring, 1 minute. Add the onion, green chile, and salt and cook, stirring, until the onion begins to brown around the edges, 8-10 minutes.
  • Stir in the beef and black pepper and cook, stirring, 5 minutes. Add the yogurt 2 tablespoons at a time and stir well after each addition. Simmer gently, stirring every now and then, for 5 minutes. Add the green paste, bring to a boil, reduce the heat and simmer 5 more minutes.
  • Stir in the garam masala and cook 1 more minute. Taste for salt, Serve hot.

1 medium onion, chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 can (4 ounces) mushroom stems and pieces, drained
1 teaspoon garlic salt
1 teaspoon dried basil
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
1 cup shredded Monterey Jack cheese or part-skim mozzarella cheese
Biscuits, optional

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the spinach, mushrooms, garlic salt and basil. Cover and cook for 5 minutes. , In a saucepan, melt butter over medium heat. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in cheese. Pour over meat mixture; mix well. Reduce heat; cook, covered, until heated through. If desired, serve with biscuits.

salt and pepper

Steps:

  • Sauté onion until cooked.

1/4 cup lime juice
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
1 teaspoon dried basil

1 pound beef top sirloin steak, cut into 1/4-inch-thick strips
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
5 ounces fresh baby spinach (about 6 cups)
1 large sweet red pepper, julienned
1/2 medium cucumber, julienned

Steps:

  • For dressing, mix first six ingredients until blended. Place a large nonstick skillet coated with cooking spray over medium-high heat.
