If your family likes gyros as much as mine, they'll love this easy version that's made with ground beef instead of lamb. I found the recipe in a newspaper and adapted it to fit our tastes. They're very much like the ones served at a local restaurant. A cucumber yogurt sauce adds an authentic finishing touch. -Ruth Stahl, Shepherd, Montana

1 cup plain yogurt
1/3 cup chopped seeded cucumber
2 tablespoons finely chopped onion
1 garlic clove, minced
1 teaspoon sugar
GYROS:
1-1/2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt, optional
3/4 teaspoon pepper
1 pound ground beef
4 pita pocket halves
3 cups shredded lettuce
1 large tomato, chopped
1 small onion, sliced

Steps:

  • In a small bowl, combine the first 5 ingredients. Chill. In a large bowl, combine seasonings; crumble beef over mixture and mix lightly but thoroughly. Shape into 4 patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side or until a thermometer reads 160°. Cut patties into thin slices; stuff into pita halves. Add lettuce, tomato and onion. Serve with the yogurt sauce.

Easy Ground Beef Gyros are so delicious and ready in 30 minutes! Ground beef is perfectly seasoned with a greek spice blend then tucked inside of a soft pita with lots of fresh lettuce, tomato, cucumber, and red onion. Finish the gyro with homemade tzatziki sauce and feta cheese.

1 pound ground beef
1 teaspoon each dried oregano, ground thyme, ground cumin, garlic powder, onion powder, and salt
1/2 teaspoon black pepper
1/4 teaspoon ground nutmeg
4 pitas
Optional toppings: lettuce, sliced tomato, sliced cucumber, sliced red onion, fresh dill and feta cheese
3/4 cup greek yogurt
3/4 cup grated cucumber ((I like to use an English cucumber))
2 tablespoons fresh dill, finely chopped
1/2 tablespoon lemon juice
2 garlic cloves, minced
1/2 teaspoon salt
1/4 cup feta cheese, crumbled

Steps:

  • Add the ground beef to a skillet over medium-high heat and cook until browned, about 5-7 minutes. Add the seasonings and 1/2 cup of water. Simmer over medium heat until the sauce has thickened around the meat, about 5 minutes.
  • While the beef cooks, make the Tzatziki sauce. Start by squeezing the excessive liquid out of the grated cucumber, discarding the liquid. In a small bowl, mix the grated cucumber with the remaining ingredients.
  • To assemble a gyro, layer a pita with lettuce, tomato, cucumber, onion, and ground beef, then finish with tzatziki sauce, fresh dill and feta cheese.

Instead of using pita bread this is made with pizza dough using ground beef, mushrooms, feta cheese and olives rolled into a pizza crust, you can substitute the feta for 2 cups (or more or less) mozzarella cheese if desired.

2 -4 tablespoons oil
1 lb lean ground beef (or a combo of beef and ground pork)
2 tablespoons minced fresh garlic
1 large onion, finely chopped
1 teaspoon dried red pepper flakes (optional)
seasoning salt
pepper
1 1/2 tablespoons dried oregano
2 teaspoons cumin
3 tablespoons chopped fresh parsley
1/4 cup grated parmesan cheese
1 (10 ounce) can mushrooms, well drained and coarsely chopped
7 -8 ounces feta cheese (can use less or to taste)
1 1/2 cups chopped olives, divided (green or black)
1 large prepared pizza dough (or use two 10-ounce cans refrigerated pizza crusts)
oil, for brushing
1 teaspoon garlic powder, divided (or to taste)
4 tablespoons grated parmesan cheese, divided (or to taste)

Steps:

  • In a large skillet cook the beef with garlic, onion and red pepper flakes until browned (about 10-12 minutes) drain fat.
  • Add in oregano, cumin, salt, pepper, chopped parsley, Parmesan cheese and chopped mushrooms; cook for about 2-3 minutes; remove from heat and set aside.
  • If you are using homemade pizza dough, then separate into two even pieces.
  • Roll out prepared pizza dough into TWO 11 x 7-inch rectangles.
  • Sprinkle HALF the crumbled feta cheese (or mozza cheese if using) on the top of one crust, then HALF of the olives on top of the feta cheese, then spoon HALF of the beef mixture on top of the olives.
  • Roll up starting at the long end, sealing both edges as you roll.
  • Seal the seam across the roll and then tuck both edges under.
  • Repeat with the remaining pizza dough and remaining fillings.
  • Place the gyrolls on a lightly greased baking sheet.
  • Lightly brush with oil, then sprinkle each with about 1/2 teaspoon garlic powder and 2 tablespoons Parmesan cheese (these amounts do not have to be exact).
  • Bake in a 400°F oven for 5 minutes.
  • Reduce oven temperature to 325°F and continue baking for about 35 minutes more, or until golden.

1 lb lean ground beef
4 plum tomatoes, thinly sliced
8 small pita pocket bread, cut in half, warmed (4-inch diameter)
1 garlic clove, crushed
1/2 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
2/3 cup plain low-fat yogurt
1/3 cup cucumber, chopped
3 tablespoons onions, finely chopped
2 teaspoons fresh parsley, chopped

Steps:

  • In small bowl, combine Yogurt Sauce ingredients, mixing well. Cover and refrigerate.
  • Heat oven to 350ºF.
  • In medium bowl, combine ground beef and seasoning ingredients, mixing lightly but thoroughly.
  • Divide beef mixture into 16 equal portions and shape into patties 2 inches in diameter.
  • Place patties on rack in broiler pan.
  • Bake in oven 10 minutes or until no longer pink OR GRILL over medium heat.
  • To serve, place equal amounts of beef and tomato in each pita half; top with yogurt sauce.

1/3 cup chopped seeded cucumber (thinly slice remainder of cucumber)
2 tablespoons finely chopped onions
1 garlic clove, minced
1 teaspoon sugar
1 lb lean ground beef (I use ground turkey)
1 1/2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt (optional)
3/4 teaspoon pepper
4 pita breads
3 cups shredded lettuce
1 large tomatoes, chopped
1 small onion, chopped

Steps:

  • In a bowl, combine first 5 ingredients.
  • Cover and refrigerate. (If possible overnight).
  • In separate bowl, combine ground beef and seasonings.
  • Mix well.
  • Shape into 4 patties.
  • Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.
  • Cut patties into thin slices.
  • Stuff into pitas.
  • Add lettuce,cucumber, tomato, and onion.
  • Serve with yogurt sauce.
