These are beef filled tortilla shells baked in a creamy chicken soup and cheese sauce. My husband absolutely loves these. I served them to guests once with Mexican rice, and they went home with the recipe. Enjoy!

1 ½ pounds lean ground beef
1 bunch green onions, finely chopped
1 diced fresh jalapeno pepper, or to taste
¼ cup water
1 (1.25 ounce) package taco seasoning mix
1 cup plain yogurt
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded mozzarella cheese
6 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, cook the ground beef, green onion, and jalapeno pepper until the beef is evenly brown. Stir in water and taco seasoning. Simmer until water has evaporated.
  • In a medium bowl, mix together yogurt, condensed soup, and cheese.
  • Divide the meat mixture evenly between tortillas. Place a couple of tablespoons of cheese mixture over meat, and roll up. Place in a 7x11 inch baking dish. Repeat for each tortilla. Spoon remaining cheese mixture over the top of the tortillas.
  • Bake in preheated oven for 20 to 30 minutes.

Authentic Enchilada sauce is not tomato based. This recipe is delicious. Serve with one of the great spanish rice recipes here on Food.com and my Easy and Delicious Borracho Beans (Recipe #441035) and you have a great meal.

1/4 cup butter
4 tablespoons flour
2 tablespoons chili powder (this will be mild. 3 tablesoons medium)
1 1/2 teaspoons cumin powder
1 teaspoon garlic powder
3 cups chicken stock
1/2 teaspoon salt
1/2 cup shredded cheese (this is NOT traditional but I like the creaminess it adds)
1 lb ground beef
1/4 onion, chopped (use 1/2 teaspoon onion powder if you have onion haters)
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Worcestershire sauce
12 corn tortillas
3 cups shredded cheese, divided (your choice...i use the Mexiblend cheese)
chopped tomato
sour cream
diced onion
shredded lettuce

Steps:

  • Enchilada Sauce: In a medium saucepan heat butter, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder, cumin and garlic powder and cook for 30 seconds. Slowly add chicken broth and stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Add salt and adjust as desired. Sprinkle cheese over top of sauce and stir in until melted.
  • Enchiladas: While enchilada sauce is simmering, brown ground beef and onion. Season with garlic powder, salt, pepper and Worchestershire sauce. Stir in 1-1/2 cups of the cheese.
  • In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  • Dip tortillas in enchilada sauce, coating both sides (one at a time).
  • Fill each tortilla with a large spoonful of meat mixture.
  • Roll tortilla and place seam side down in pan. Continue until meat mixture is gone.
  • Pour remaining enchilada sauce over tortillas and top with remaining cheese.
  • Bake in 350 degree oven for 20 minutes. Allow to sit for 5 minutes before serving.
  • Serve with desired garnishes.

  • Heat oven to 375°. Brown ground beef until thoroughly cooked; drain.
  • Stir in 3/4 cup enchilada sauce and one cup of cheese.

1 lb ground beef
1 (15 ounce) can black beans or 1 (15 ounce) can texas ranch style beans
1 (14 ounce) can diced tomatoes, drained
1/2 cup finely diced fresh poblano peppers or 1 (4 ounce) can diced green chilies
1/2 cup finely diced white onions or 1/2 cup yellow onion
2 cloves crushed garlic
1 cup shredded Mexican blend cheese or 1 cup monterey jack cheese
salt and pepper
12 -15 8-inch whole wheat flour tortillas or 12 -15 8-inch corn tortillas
2 1/4 cups hot water
1 (6 ounce) can tomato paste
2 tablespoons margarine or 2 tablespoons butter
2 tablespoons flour
5 teaspoons red chili powder
1 teaspoon cumin
2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Combine in large skillet ground beef, onion, garlic, salt and pepper.
  • Cook until beef is browned.
  • Drain grease.
  • Return to skillet and add tomatoes, peppers or canned chilies, and beans (I prefer the Texas beans and fresh pablano pepper here because of the added flavor).
  • Reduce heat, cover and simmer while preparing the sauce, stirring frequently.
  • Prepare the sauce by mixing all ingredients in medium bowl with a wire whisk until butter has melted.
  • Add salt and pepper to taste.
  • Add about 1/2 cup sauce to meat mixture.
  • Turn off heat.
  • Dip each tortilla (the whole wheat are absolutely delicious in this recipe) into the enchilada sauce coating thoroughly.
  • Lay the soaked tortilla in your baking pan and add one serving spoon of the meat mixture lengthwise along one end of tortilla then roll it up from there (Note that there should be about 2 serving spoons of meat left when you are done with filling all tortillas).
  • When done rolling each one make sure to place it so that open end of tortilla is on the bottom to avoid spillage.
  • Repeat with all tortillas.
  • Add remaining meat mixture and remaining sauce evenly on top of enchiladas.
  • Cover with aluminum foil and bake 15 minutes.
  • Remove from oven, remove foil, cover with grated cheese and return to oven for 5 minutes uncovered, or until all cheese has melted.
  • For easiest serving, slice enchiladas in half lengthwise down the pan.
  • Serve with rice, sour cream, guacamole, and your favorite corn chips.

4 ounces green chilies (I use half)
12 ounces salsa
10 ounces corn (I use half)
10 ounces black beans (I use half)
1 (24 ounce) can red enchilada sauce
3 ounces cream cheese
1 (1 1/4 ounce) packet enchilada seasoning
1 cup cheese, shredded, of your choosing (This varied depending on your taste)
1 tablespoon lemon juice (optional)
1 tablespoon Worcestershire sauce (optional)
tortilla
3 teaspoons garlic
3 teaspoons paprika
3 teaspoons onion powder
salt and pepper (to taste)
cumin (to taste)
parsley (to taste)
chives (to taste)

Steps:

  • Place defrosted ground beef in crock pot.
  • Put everything in crock pot except tortillas, cream cheese, shredded cheese, and enchilada sauce. ( I just threw everything in crock pot unitl i liked the look of its consistency).
  • Mix the meat with the ingredients, cook on low for about 4 hours I cooked longer since i came home late and it was still good.
  • When its cooked, pour desired amount of enchilada sauce, and shredded cheese in mixture. Also room temp cream cheese cubed.
  • Let sit until cheese is melted, stir together and roll mixture in warm tortillas.
  • Put in baking dish pour desired amount of left over enchilada sauce over tortillas. And sprinkle cheese on top.
  • Bake on 350 for 15-20 minutes.

1 teaspoon Christopher Ranch Crushed Garlic (Or 2 Fresh Cloves, Minced)
8 ounces, fluid La Victoria Enchilada Sauce Medium (See Notes)
4 ounces, fluid Del Monte Tomato Sauce (See Notes)
1/2 teaspoons Mexican Oregano
1/4 teaspoons Black Pepper
1/4 teaspoons Red Pepper Flakes (optional)
1- 1/2 cup Sharp Cheddar Cheese, Shredded And Divided
2 Tablespoons Chopped Cilantro, For Garnish

Steps:

  • Preheat oven to 350ºF. Spray cooking spray in a baking pan big enough to hold all the halved peppers lying flat cut side up. Set aside.
  • Cut bell peppers in half lengthwise (down through the stem, or just beside the stem). Remove seeds and membranes. Put peppers in a microwaveable dish and splash with a tablespoon of water. Cover tightly and microwave on high for 3 minutes. Drain well, and lay the peppers out in the baking pan or casserole big enough for them to lay flat with their cut sides up.
  • Brown ground beef with onion in a large skillet. Give the meat a light sprinkle of salt and pepper while cooking. Cook until onions are translucent and water from meat has evaporated. Drain the grease.
  • While meat is cooking, drain olives and set aside 6 halves or slices to use as garnish.
  • Add garlic to cooked meat, and continue cooking for another minute. Add enchilada sauce, tomato sauce, drained olives, remaining spices, and 1 cup of the cheese to the hamburger. Stir until cheese is completely melted and mixture has thickened somewhat.
  • Divide enchilada stuffing evenly among pepper cups. Sprinkle remaining cheese over the top. If you reserved any of the olive halves/slices, put them on top of the cheese. This is just for presentation, so if you forgot to set some aside, don't worry about it.
  • Bake for 30 minutes, or until cheese on top begins to brown. Remove from oven, and sprinkle with chopped cilantro. Serve.
  • Leftovers may be frozen.
  • Notes:
  • • I stuffed both red and green bell peppers, and I like the red much better for this dish. They give it a sweetness the green does not impart. The green bell peppers have 1 less carb per serving. To improve macros, I recommend serving with some avocado slices on the side.
  • • Use any enchilada sauce that is gluten free, sugar free, and has no added tomato sauce.
  • • You'll be using only 1/2 of a small can of tomato sauce. Be sure you use one with no added sugar. You can freeze the other half in a freezer bag and save to use next time, or make 2 batches at one time and freeze the extras to be warmed and served later.

I dont like the store bought red enchilada sauce, so I make my own. You can use any beans you like, black, pinto, chili or kidney. I have also left the beans out, and spread the tortilla with refried beans before adding the beef mixture. Either way is great. I like to make the sauce and beef mixture the night before, then all I have to do is assemble and bake, and its super easy. This recipe freezes well. Sometimes I like to make a double batch of the sauce, and freeze for later use.

2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup onion, chopped
4 ounces green chilies, chopped
24 ounces tomato sauce

1/2 cup chopped onion
1/2 cup sour cream
2 tablespoons parsley
1 cup Mexican blend cheese, shredded

Steps:

  • In a large skillet brown the ground beef for about 10 min, then drain the grease from the pan and return the ground beef (make sure your burner is either off or on the lowest setting). once you have returned the ground beef to the pan you are going to want to add your onion, sour cream, shredded cheese, parsley and pepper. Mix all these together till cheese is almost all the way melted, binding all this together, then set aside.
  • In a separate skillet open your can of diced tomatoes and chilies add that, tomato past and sauce along with the bell pepper, cumin seasoning, oregano and garlic powder to this skillet. Bring all this to a warm temperature, you are not going to want this to warm because you are going to be dipping your flour tortillas into this mixture.
  • Grab some flour tortillas and dip them into the sauce making sure both sides are coated. Remove coated tortilla shell from sauce setting flat into an 11 x 7 x 1 1/2 baking dish, grab you a spoon and start filling your tortilla shells with beef mixture (about one spoonful per tortilla) roll and place into backing dish. Repeat this process till backing dish is full. Once filled pour remainder of sauce over tortillas, then top with remaining filling, shredded cheese, sour cream, and green garden onions.
  • Make sure oven is warmed to about 200 degrees and place baking dish into oven. You are going to want to let this warm up till cheese is melted then you are ready to eat.

6 (8 inch) flour tortillas or 6 (8 inch) corn tortillas

Steps:

  • Combine sauce mix with tomato paste and three cups water in a medium sauce pan. Bring to boil, reduce heat and simmer 15 minutes.
  • Meanwhile, brown ground beef in a skillet. Drain fat.
  • Add garlic salt, parsley flakes, chili powder, and vinegar, and mix well.
  • Add 1/4 cup of the prepared sauce to the ground beef mixture.
  • Pour 1/2 cup of sauce in a 12 x 8 x 2 baking dish.
  • Place 1/4 cup of meat mixture on each of the tortillas.
  • Roll tortillas and place seam side down in the baking dish.
  • Pour remaining sauce over enchiladas.
  • Sprinkle top with grated cheese.
  • Bake in a 350 degree oven for 20 minutes; OR microwave for 10 minutes on 70% power.

This Cheesy Ground Beef Enchiladas are Great, not only are they packed filled with cheese but they are also super yummy, too. It is time to present a new dish into the family!

2 lbs ground beef (cooked, drained)
1 medium onion (chopped)
2 Tbsp diced jalapenos (can use diced green chilies instead)
2 tsp cumin
1 tsp Slap Ya Mama® seasoning
28 oz can red enchilada sauce
1 tsp pepper
¼ tsp red pepper flakes
3-4 cups Monterey Jack cheese (shredded)
3-4 cups sharp cheddar cheese (shredded)
16 large flour tortillas
3 cloves garlic (minced)
15 oz can red enchilada sauce
6 ½ oz can black olives (sliced)

Steps:

  • Preheat oven to 375° and spray a 13x9" baking-dish with a non-stick spray right before filling.
  • In a skillet cook ground-beef over medium-high-heat, then add the onions and cook till beef is no longer pink.
  • Add garlic into beef mixture and cook for an extra 2-3 minutes stirring occasionally. Drain grease and return to pan.
  • Sprinkle seasonings, jalapenos, red pepper flakes and pepper over ground beef. Stir.
  • Pour big can of enchilada-sauce to meat mixture, stir till mixed and cook over moderate heat till warm and bubbly. Stir as necessary.
  • Open smaller enchilada-sauce and then pour just a small piece into prepared baking dish. Put aside.
  • Take 1 tortilla at a time, add a few heaping spoonfuls of meat mixture into center of tortilla, followed closely by both kinds of cheese and around 5-6 olives.
  • Roll and put each enchiladas from the baking-dish. After the base layer is stuffed, pour a bit more enchilada sauce on the top and repeat by putting the remaining enchiladas on top to the surface.
  • Then add any leftover meat and mix on top of the enchiladas then pour on the remaining enchilada-sauce over the enchiladas, top with remaining cheese then add the olives.
  • Cover with foil and put baking-dish on a baking-sheet to catch any spillage and bake for 60 minutes or till cheese is hot and sweet.
  • Carefully remove from oven and serve with sour-cream, slit green onions, cilantro and sliced avocados, if necesary.

  • Prep Time: 1 Hour30 Minutes Cook Time: 20 Minutes Difficulty: Easy Step #1 - The Sauce In a large saucepan over medium heat, add oil and flour and whisk together to make a paste, cooking for one minute. Pour in the red sauce, chicken broth, cilantro, salt and pepper. Bring to a boil. Reduce heat and simmer 30-45 minutes. Step #2 - The Meat Brown the meat with onions in a skillet. Drain off fat. Stir in 2 cans diced green chilies and seasoned salt. Set aside. Step #3 - Tortillas Heat canola oil in a small skillet over medium heat. One by one, using tongs, fry tortillas in oil until soft, not crisp - about 30 seconds per side. Remove to a paper-towel lined plate. Repeat until all tortillas have been fried. 19 ounces enchilada sauce
16 ounces fat-free refried beans
2 cups kraft Mexican blend cheese
6 large flour tortillas
4 1/2 ounces chopped green chilies, half liquid drained
1 small onion, diced
hot sauce (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • In a skillet brown the ground beef and onions. Drain the fat from the skillet.
  • Add chopped green chilies with remaining half of liquid from the can. Add hot sauce if desired. Stir to mix. Add about a third to a half of the enchilada sauce to the meat mixture. (Don't add so much though, that the mixture is soupy.)
  • Coat the bottom of a 13x9 inch baking dish with enchilada sauce. It doesn't have to be a lot, just enough so the tortillas don't stick after baking.
  • Lay a tortilla in the baking dish, sprinkle it with cheese, and spoon 1/6th of the meat mixture into the tortilla. Roll the tortilla up and leave it seam side down in the dish. Repeat this step with the remaining meat and tortillas. The six should take up enough room to span the entire baking dish. Toward the end you won't be able to fully lie the tortillas in the dish but you can just lie them on top of the completed ones, roll them and place them in the dish.
  • Spread the refried beans over the enchiladas.
  • Pour the remaining enchilada sauce over the beans. Sprinkle the remaining cheese over the enchiladas.
  • Bake at 350 for about 30 mins or until hot and bubbly.
  • Remove from the oven and let sit for about 5 mins to cool.

1 tablespoon canola oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cumin
2 tablespoons chili powder
2 tablespoons flour
2 cups chicken broth
1 teaspoon salt
1 (8 ounce) can tomato sauce
1 lb ground sirloin
6 flour tortillas, at room temparture
1/2 cup cheddar cheese

Steps:

  • Preaheat oven to 400.
  • For the sauce: In a medium sauce pan over medium high mix in flour and oil under bubbly. Add in spices and stir well. Slowly add in chicken broth. When the mixture is thick add the tomato sauce. Turn the heat to low and let the sauce simmer covered, for 15 minutes, stir once or twice.
  • For the filling: In a large skillet brown the beef and drain any grease. Season with salt and pepper (I use a dash of garlic powder also.) Take the tortillas and fill each one with the beef and place in a baking dish (I use a 9x13.) Bake the filled tortillas uncovered for 15 minutes. After 15 minutes remove the dish from the oven and top with the enchilada sauce and cheddar cheese. Bake for an additional 15 covered. Serve and enjoy!
