I got this recipe from a Better Homes and Garden magazine all on Mexican food. I have made this recipe a few times now for a variety of people and everybody LOVES it! It's awesome and a must try! The recipe calls for hominy, and I always forget to buy it so I throw some corn in the mixture and it's good and adds a little color. It looks a little intimidating because of the number of ingredients but takes 35 minutes total to prep and cook and well worth every minute of it!

1 lb ground beef
2 tablespoons vegetable oil
6 garlic cloves, minced
3/4 cup red pepper, chopped (1 medium)
1/2 cup onion, finely chopped (1 medium)
1/2 teaspoon kosher salt
3 tablespoons dark chocolate or 3 tablespoons semisweet chocolate, chopped
2 tablespoons sesame seeds
1 tablespoon chili powder
2 teaspoons paprika
2 teaspoons dried Mexican oregano or 2 teaspoons dried oregano, crushed
2 teaspoons ground cumin
1/2 teaspoon cinnamon
1/4-1/2 teaspoon cayenne pepper
1/4 cup sherry wine
1/2 cup canned tomato sauce
1/2 cup yellow hominy, rinsed & drained
1/2 cup pimento-stuffed green olives, sliced
1/2 cup fresh cilantro, snipped

Steps:

  • In a large skillet, cook beef until browned. Remove beef from skillet, drain, and keep warm.
  • In same skillet, healt oil over medium-high heat. Add garlic; cook and stir for 1 minute. Stir in sweet pepper, onion, and 1/2 tsp salt for about 5 minutes or until onions and peppers are softened.
  • Reduce heat to medium; stir in chocolate, sesame seeds, chili powder, paprika, oregano, cumin, cinnamon and cayenne pepper. Cook and stir 1-2 minutes or until spices are fragrant (be careful not to burn mixture).
  • Remove skillet from heat. Stir in Sherry. Return skillet to heat. Add ground beef, the tomato sauce, hominy, & olives. Cook and stir until mixture is combined and thickened. Stir in cilantro. Season to taste with additional salt.

1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
  • Serve with the grated cheese, diced tomatoes and shredded lettuce.
