GROUND BEEF BURRITOS

I was surprised to see that there are so many burrito casseroles on Zaar, but no one has posted an actual beef burrito recipe. Here is my recipe for the much loved Ground Beef Burrito! The key to this burrito in achieving that authentic Mexican flavor and mouth feel, is in the method for cooking the ground beef. If you decide to brown your ground beef or follow the directions on the spice package, you will end up with a totally different product.

1 lb 90% lean ground beef
1 5/8 ounces dry burrito mix (1.62 ounce package McCormick Burrito Seasoning Mix. Can substitute with Taco Seasoning Mix - the Best!)
3/4-1 cup water, warm (Up to 1 cup. The more water added, the longer cooking time to boil it down.)
4 burrito-size flour tortillas
6 tablespoons sour cream
1 cup four-cheese Mexican blend cheese (Kraft fancy shred)
2 roma tomatoes, diced
4 green onions, sliced into thin rings
8 tablespoons salsa (Fresh Mexican Salsa)

Steps:

  • With your clean hands start by adding 3/4 to 1 cup of warm water and the burrito seasoning packet in a large pot. Place the raw hamburger in the liquid and use your hands to break all down so there are no chunks. Bring the mixture to a full boil then reduce the heat and allow to simmer, stirring occasionally, until all the liquid has been absorbed.
  • Place a tortilla on a plate and cover with a damp towel. Microwave on high for 15 seconds. Remove tortilla from the microwave, uncover. Slightly off center of the tortilla, spread on 2 tablespoons of sour cream on the tortilla. Place 1/4 of the ground beef on top of the sour cream. Place 1/4 cup of the cheese blend on top of the ground beef. Sprinkle on tomatoes and green onions. Top with 2 tablespoons of Recipe #311703.
  • Fold the front of the tortilla over the filling. Tuck the left and right sides of the tortilla inside as you roll. Roll the belly on top of the back so the weight of the filling holds it together. Use a small piece of masking tape if necessary, but remember to use only edible tape. : ).

2 lbs lean ground beef
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cornstarch
1/2 cup water
salt and pepper
2 cups sour cream
2 (10 3/4 ounce) cans condensed cream of chicken soup
2 (4 ounce) cans chopped green chilies
2 cups shredded monterey jack cheese
12 flour tortillas (burrito size)
shredded lettuce
diced tomato
chopped onion
sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, cook the ground beef, until the beef browned. While beef is browning, mix together in a small bowl, the chili powder, garlic powder, onion powder, oregano, paprika, cumin, salt pepper and cornstarch. After beef is browned, sprinkle the seasoning mix over the beef and mix well. Stir in water and simmer until water has evaporated, about 10 minutes.
  • In a medium bowl, mix together sour cream, cream of chicken soup, green chilies and cheese.
  • Mix about half of the cheese mixture with the ground beef. Divide the meat mixture evenly between tortillas and roll up. Place in a 9 x 13 inch baking dish. Repeat for each tortilla. Spoon remaining cheese mixture over the top of the tortillas.
  • Bake in preheated oven for 20 to 30 minutes.
  • Allow to cool for about 5 minutes then serve with desired garnish.

How to make Copycat Hacienda Wet Burritos (Shredded Pork, Beef, Chicken or Ground Beef)

2 lbs. cooked, pulled and shredded pork, chuck roast or chicken, or cooked and chopped ground beef, (*a rotisserie chicken can also be used in place of homemade pulled chicken)
Seasoning Mix:
Dry:
2 tsp. seasoned salt, I use Johnny's
1/2 tsp. cayenne
1 tsp. onion powder
2 1/2 tsp. quality chili powder
2 tsp. paprika
2 tsp. garlic powder
2 tsp. cumin
2 Tbl. cornstarch
2 Tbl. flour
Wet:
2 tsp. Better Than Bouillon Beef Base for red meats, (Chicken Base for poultry and pork)
1 Tbl. ketchup
1/2 Tbl. Sriracha sauce
1 cup beer
1 1/2 cups water
Secret Sauce:
2 Tbl. butter
2 Tbl. flour
1 (10 1/2 oz.) can Campbell's Beef Consommé
1 (10 oz.) can Enchilada Sauce, I used Old El Paso's Mild
1/2 tsp. quality chili powder
⅛ tsp. garlic powder
Rest of ingredients:
4 large burrito-sized flour tortillas
1 (16 oz.) bag shredded Mexi-blend cheese
1 large tomato, or 2 small, chopped
4-6 cups shredded lettuce, as desired
salt and coarse ground black pepper
chopped pickled jalapeño peppers, optional
1 (12-16 oz.) can kidney beans, rinsed and drained well
Extra Toppings:
12 black olive slices
Sour Cream
Guacamole
Hot Sauce or Sriracha Sauce

Steps:

  • Add cooked pulled pork, beef or chicken, (or cooked ground beef), to a large frying pan.
  • In small to medium bowl, mix dry ingredients from seasoning mix well.Sprinkle over meat in pan and stir in to coat and mix.
  • Stir in wet seasoning ingredients. (*I like to dissolve the beef/chicken base in the water in the microwave so that it's easier to mix in.) Heat over medium-high heat until it comes to a low boil, reduce heat and simmer, stirring as needed, until thick. *Stir often towards end to prevent sticking or scorching. Cover and set aside.
  • Preheat oven to 350 degrees.
  • In medium saucepan, make Secret Sauce: Melt butter over medium-low heat, stir in flour and heat, stirring, until bubbly. Cook and stir for 4-5 minutes to cook out raw flour taste. Slowly whisk in beef consommé keeping mixture blended and smooth. Stir in enchilada sauce, and add chili powder and garlic powder. Heat to boiling, and low boil for 3-4 more minutes until thickened. Remove from heat.
  • In four separate small, very shallow, baking dishes (ones you can eat out of), place a large flour tortilla.
  • Top each in order:
  • small amount of cheese
  • chopped tomato
  • shredded lettuce
  • sprinkle with salt and pepper
  • a handful of cheese
  • chopped pickled jalapeños, optional
  • a fourth of the meat (1/2 lb. each)
  • beans to taste
  • Fold edges over tightly and careful turn each over.
  • Ladle with sauce until each are completely covered.
  • PILE on the cheese!
  • Pop into the oven and bake for 15 minutes.
  • Top each with 3 black olive slices. Serve with extra toppings of choice.
  • Goes well with chips and salsa and Mexican red beans and rice.

Super quick, easy dinner the whole family will love! Serve with cooked rice and/or refried beans for a great meal.

10 each wheat tortillas - burrito size
2 lb ground beef
12 oz chunky salsa- your fave brand (mild or medium)
1/2 c grated cheddar cheese
5 oz frozen corn kernels
your choice of chopped lettuce, chopped cilantro, chopped onion, tomatoes, chopped bell peppers, etc.
12 oz grated cheddar or monterey jack cheese
sour cream, guacamole, etc.

Steps:

  • 1. Wrap Tortillas tightly in foil. Heat in a 325 deg. F. oven for about 8 minutes, until nice and warm.
  • 2. Meanwhile, cook ground beef until no longer pink. Drain off all grease.
  • 3. Add Salsa to ground beef along with frozen corn and grated cheese. Stir to blend and heat on medium until well blended and warm.
  • 4. Chop up lettuce, tomatoes, fresh cilantro, red onion, avocados, etc.-- whatever veggies you like or have on hand.
  • 5. Remove tortillas from oven. Place 2 or 3 Tablespoons of cooked beef/salsa down middle of a tortilla. Add grated cheese, chopped tomatoes or lettuce and/or cilantro, etc. Roll up tortilla around filling.
  • 6. If desired garnish rolled up tortilla with sour cream, guacamole, chopped avocado, additional cheese, etc. Eat and enjoy!

GROUND BEEF/CHORIZO BURRITOS

Supper tonight were these burritos and they turned out quite good. I just added what I had as leftovers and put on those huge spinach tortillas and passed them out to the family. Easy, very easy to make and tasty too!!

1 1/2 lb lean ground beef
2 links of beef chorizo-take out of casings
1 Tbsp sea salt or kosher
1 Tbsp black pepper
4 Tbsp of my canned salsa..instead use regular salsa
1 chopped up green pepper
1 c kernel corn
1 c chopped onion
4 Tbsp canned chopped garlic-don't drain
4 large chopped potatoes
cheese for topping the instead of burrito

Steps:

  • 1. Start cooking the ground beef and chorizo. Be sure to take the chorizo out of the casing first. Add the onions and green bell pepper. Sprinkle in the salt and pepper and add the garlic. Mix well.
  • 2. Chop the potatoes up and fry them separately. Add the corn and simmer. When done, set aside.
  • 3. Keep chopping up the meat into small amounts like taco meet. Stir and keep cooking until the onions are glazed and meat is cooked. Add the salsa and fried potatoes, then mix it throughly and let it simmer for a few minutes for the flavors to blend...turn of stove
  • 4. With the tortilla, place a large amount of mixture along the middle and fold it up after topping it with grated cheese. Pass it around and enjoy supper..
