2 medium zucchini, sliced lengthwise into thin strips
Canola oil
Salt and freshly ground black pepper
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
Honey
2 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
1/2 cup extra-virgin olive oil
Wedge Pecorino Romano, for shaving
2 tablespoons toasted pine nuts
Fresh mint leaves, torn

Steps:

  • Heat the grill to high heat. Brush the zucchini on both sides with canola oil and season with salt and pepper, to taste. Grill for just about 1 minute per side (until slightly charred and wilted), then remove them to a platter.
  • Whisk together the Dijon mustard, lemon juice, lemon zest, honey, to taste, and salt and pepper, to taste, and parsley in a small bowl. Slowly, whisk in the olive oil until emulsified.
  • Drizzle the vinaigrette over the zucchini and let it marinate for 15 minutes at room temperature. Top with shaved cheese, pine nuts, parsley and mint leaves.

1 cup raw walnuts
1 cup coarse-grind bulgur
¼ tsp. kosher salt, plus more
2 lb. zucchini and/or yellow summer squash
¼ cup extra-virgin olive oil, plus more for drizzling
3 Tbsp. preserved lemon paste (such as NY Shuk)
2 tsp. honey
1 garlic clove, finely grated
Freshly ground black pepper
7 oz. Greek feta, crumbled
½ cup coarsely chopped parsley
½ cup torn mint leaves
Lemon wedges (for serving)

Steps:

  • Toast walnuts in a dry medium skillet over medium heat, tossing often, until golden brown, 8-10 minutes. Transfer to a cutting board and let cool. Coarsely chop.
  • Wipe out skillet and toast bulgur, stirring often, until a shade darker and starting to smell like popcorn, about 3 minutes. Add ¼ tsp. salt and 2 cups water and bring to a boil. Reduce heat to low and simmer gently until liquid is almost completely evaporated, 8-10 minutes. Cover skillet and remove from heat. Let sit while you prepare the rest of the salad.
  • Prepare a grill for high heat. (Or, heat a grill pan over high.) Trim ends of zucchini; slice lengthwise into long ¼"-thick planks. Set a wire rack inside a rimmed baking sheet and arrange zucchini in a single layer on rack (you can also do this in a large bowl if you don't have a wire rack). Drizzle with oil and season with salt. Toss zucchini, rubbing with your hands, to coat completely with oil.
  • Grill zucchini, undisturbed, until grill marks appear, about 2 minutes. Turn over and grill on other side until grill marks appear, about 2 minutes. Return to wire rack (or a colander set in a bowl) to drain; let cool slightly, Transfer to a cutting board and slice on a diagonal into 1" pieces.
  • Whisk preserved lemon paste, honey, garlic, and remaining ¼ cup oil in a large bowl to combine; season with pepper (lemon paste and feta should make it salty enough). Add bulgur and feta and toss to combine. Set some of zucchini, parsley, and mint aside for serving, then add remaining zucchini and herbs to salad; toss gently to combine. Taste and season with salt and pepper if needed.
  • Transfer salad to a platter. Top with reserved zucchini and herbs. Scatter walnuts over. Serve salad with lemon wedges for squeezing over.

1/4 cup olive oil (preferabley extra-virgin) plus additional for brushing zucchini
1 1/2 pounds zucchini, cut diagonally into 1/3-inch-thick slices
1 pound whole-wheat penne or other tubular pasta
2/3 cup Kalamata or other brine-cured black olives, chopped coarse
6 ounces ricotta salata or feta cheese, diced
1 1/2 cups whole small or torn large fresh basil leaves

Steps:

  • In a large bowl gently stir together tomatoes, onion, garlic paste, vinegar, and 1/4 cup oil
  • Brush one side of zucchini slices lightly with additional oil and season with salt and pepper. Heat a well-seasoned ridged grill pan over moderate heat until hot and grill zucchini, oiled sides down, in batches, brushing tops with more oil before turning, 1 to 2 minutes on each side, or until just tender but not soft. Transfer zucchini as grilled to a small bowl.
  • In a kettle of salted boiling water cook pasta until just tender and drain well. Add hot pasta to tomato mixture and toss well. Cool pasta slightly and stir in zucchini, olives, cheese, basil, and salt and pepper to taste. Pasta may be made 4 hours ahead and kept covered at room temperature.
  • Serve pasta warm or at room temperature.

1 cup extra-virgin olive oil, divided
Sea salt, preferable gray salt and freshly ground black pepper
6 cloves minced garlic
1/2 teaspoon red chili flakes
2 lemons juiced
2 tablespoon freshly chopped parsley leaves
2 tablespoon freshly chopped basil leaves
6 tablespoons toasted pine nuts, optional
Shaved Parmesan, to taste

Steps:

  • Prepare a charcoal grill, or heat a gas grill to high.
  • Wash the zucchini and trim the ends. Using a mandolin or vegetable peeler thinly slice the zucchini lengthwise. Toss the zucchini with 1/3 of the olive oil, gray salt and pepper, to taste. Quickly grill the zucchini ribbons on 1 side, until lightly marked and wilted, about 1 to 2 minutes. Remove to a plate or a baking dish and let cool slightly.
  • When slightly cooled toss zucchini in a bowl with the remaining ingredients except nuts, if using and Parmesan. Spread onto a serving platter, top with pine nuts, if desired and shave Parmesan over the top. Eat and enjoy.

  • Combine the mustard and vinegar, beating them together until blended. Beat in the olive oil.
  • Brush the chicken and zucchini with half this mixture. Preheat grill or broiler.

3 plum tomatoes, halved
1 red onion, cut into 1/4-inch thick rings

1/2 loaf rustic white bread, crusts removed, cut into bite-size cubes
1/4 cup red wine vinegar
1 1/2 cloves garlic, smashed and minced

1 cup cake flour
1 tablespoon baking powder

1/2 cup goat cheese
4 zucchini blossoms
4 fresh basil leaves
2 cups baby arugula
1 tablespoon olive oil

Steps:

  • For the panzanella: Heat a grill or grill pan. Toss the zucchini, tomatoes, and onions gently with olive oil and salt and grill until cooked through. Flip halfway through cooking.
  • Toss the bread cubes with vinegar, garlic, 1 tablespoon olive oil, a sprinkle of water, and salt.
  • Chop the grilled vegetables and add to the bread mixture. Toss gently together and season with salt, to taste.
  • For the blossoms: Heat the oil to 375 degrees F.
  • Whisk together the cake flour, baking powder, pinch salt, and club soda.
  • Spoon the goat cheese into a piping bag and cut a hole in the bag. Gently fill each zucchini blossom with goat cheese.
  • Dip each blossom into the batter and then carefully place into the hot oil. Cook until lightly puffed and golden. Remove the blossoms from the oil and drain on a paper towel. Season with salt immediately.
  • Fry the basil leaves until just crisped. Set aside.
  • For the salad: Toss the arugula with the oil, salt, and a splash of vinegar. Divide the arugula among 4 plates. Mold the panzanella into a ring mold and place on a plate. Repeat with remaining plates. Top each panzanella portion with 1 fried blossom. Drizzle with olive oil to finish and top each plate with a fried basil leaf.

Grilled veggies with beans in pasta. Beer yes beer is in the marinade. This is a different take on a pasta salad. Beer helps enhance flavors of the veggies! Be sure to keep a bite to the eggplant and zucchini, you don't want them to be mushy in the salad. Lots of texture and flavor! This salad has grain from the beer and pasta, ohhh and the fresh herbs just liven this (you can skip or change herbs to please) the beans makes this a balanced meal giving protein and creaminess, lots of zip from the lemon (lime if you wish) and garlic you all know how I feel about GARLIC!! Be sure to drizzle with Extra virgin olive oil and be as generous with the grated cheese as you like.

1 lemon, juice and zest of, fresh
2 large garlic cloves, minced
1 tablespoon olive oil
4 ounces porter
1 zucchini, cut into 5 slices lengthwise
1 small eggplant, cut into 5 slices lengthwise
1 (15 ounce) can white beans, drained and rinsed
2 roasted red peppers, diced
16 ounces dry pasta, cooked (al dente)
1 1/2 cups fresh parsley, coarsely chopped
1/4 cup fresh sage, coarsely chopped
3 tablespoons fresh rosemary, coarsely chopped
salt & fresh ground pepper (be careful with this if you plan on using lots of cheese)
grated romano cheese
extra virgin olive oil

Steps:

  • In a zip-seal plastic bag, blend together the lemon zest, garlic, lemon juice. porter and olive oil. Add the zucchini and eggplant strips and let marinate 1 hour.
  • Reserve the marinade for salad. Prepare a grill and grill zucchini and eggplant until tender, but still holding its shape. Cut into 2-in. chunks, and toss with beans, roasted red peppers, and the remaining marinade in a large bowl with pasta.
  • Spray a nonstick skillet with cooking oil. Add the chopped herbs and heat until aromatic.Add the heated herbs into the pasta mixture and stir to blend. Season with salt and pepper to taste, and serve drizzled with oil and topped with grated Romano cheese.

3 medium zucchini, thinly sliced
1/4 cup olive oil, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped red onion

2 tablespoons minced fresh parsley
1 medium lemon, juiced and zested
1/3 cup crumbled feta cheese
3 tablespoons pine nuts, toasted

Steps:

  • In a large bowl, combine zucchini and 2 tablespoons olive oil. Add salt and pepper; toss to coat. Transfer to a grill wok or open grill basket; place on grill rack. Grill, covered, over medium-high heat until zucchini is crisp-tender, 5-10 minutes, turning occasionally. Transfer zucchini to a serving bowl; sprinkle with remaining 2 tablespoons olive oil and red onion. When cooled slightly, sprinkle with mint, parsley, lemon juice and zest and feta cheese. Stir gently. Sprinkle with pine nuts before serving.

Recipe was printed on one of those recipe cards from the grocery store. I really liked the flavors of this dish and used it as a main dish by adding some grilled chicken too. I used an indoor grill pan but of course this would work on an outdoor grill too. **Note 4-8 hours of marinading of veggies is needed to really get the flavors** Hope you enjoy it too!

3 medium zucchini, cut into 1/2 inch rounds
1 red onion, cut into thick wedges
1 large red bell pepper, seeded and cut into quarters
1/2 cup light balsamic vinaigrette
1 (14 ounce) package penne, pasta (tubular, use multi-grain or whole-wheat)
1/2 cup fresh parsley, chopped
salt and pepper
1 cup parmesan cheese, shredded

Steps:

  • Place zucchini, onion, red bell pepper and vinaigrette in a large resealable bag. Seal bag and refrigerate 4-8 hours, turning occasionally.
  • Boil 4 quarts of water and cook Penne pasta to al dente, about 8-10 minutes (according to package directions).
  • Preheat grill to medium (300-350F/150-180C). Remove veggies from marinade and reserve marinade. Place veggies on a veggie grill rack and grill covered for 8-10 minutes, turning once. Remove from grill and cut into bite-size pieces.
  • Drain pasta, transfer to a deep serving platter/dish. Spoon veggies over pasta and drizzle with reserved marinade. (I heated the marinade for a bit in the microwave to warm before drizzling over the pasta & veggies).
  • Season dish with salt & pepper to taste (I used McCormick's Garlic Pepper Grinder instead) and sprinkle with parsley and Parmesan. Serve immediately.

Grilled Shrimp with Chickpea Fries, Zucchini & Pine Nut Salad image

for the chickpea fries
Kosher salt
1/2 cup chickpea flour
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 cup canned or cooked chickpeas, crushed
Extra virgin olive oil
for the salad
8 jumbo shrimp, peeled and deveined (I prefer the ones with the head on)
Extra virgin olive oil
Kosher salt
1 zucchini, green part only, julienned
1/2 red onion, sliced super-thin
2 cups baby arugula
1/2 cup pine nuts, toasted (see page 17)
Juice of 2 lemons

Steps:

  • FOR THE CHICKPEA FRIES
  • Put 2 cups water in a small saucepan, salt well, and bring to a boil (BTB) over high heat. Reduce the heat to low, whisk in the chickpea flour, and cook over low heat for 3 to 4 minutes, or until the mixture begins to thicken. Toss in the cumin, cayenne, and crushed chickpeas. When it's done, the mixture will be thick like mashed potatoes, about 15 minutes. Taste it-it should be REALLY good; if it isn't, reseason.
  • Spread the mixture out in a lightly oiled 9-inch baking dish and chill until fully set, at least an hour (this can be done in advance).
  • Cut the chilled mix into thick sticks, 3/4 to 1 inch wide. Coat a nonstick sauté pan with olive oil and bring to high heat. While the oil heats, set up your drying situation next to the stove by putting a couple layers of paper towels on a baking sheet. Working in batches, cook the fries on all sides until golden and crispy, 3 to 4 minutes per side. Remove and drain on the paper towels, sprinkle with salt, and keep warm in a low oven.
  • FOR THE SALAD
  • Preheat a grill.
  • In a medium bowl, toss the shrimp with olive oil to coat and season with salt.
  • Put the zucchini, onion, arugula, and pine nuts in a large bowl and toss with lemon juice and olive oil. Season with salt and make sure it tastes delicious!
  • Grill the shrimp, turning once, until no longer translucent, 4 to 6 minutes total.
  • Arrange the salad on serving plates and top each with a couple of chickpea fries and 2 shrimp.
  • note
  • When you go to a fish store you might see numbers next to the shrimp. These numbers correlate to how many shrimp are in a pound (for example, 12/15 means there are between twelve and fifteen shrimp in a pound). The bigger the number, the more shrimp per pound; the smaller the number, the bigger the shrimp! For this recipe I recommend really big shrimp.

1 lb zucchini, scrubbed and trimmed
3 tablespoons extra-virgin olive oil
salt & freshly ground black pepper
12 large fresh mint leaves, slivered (or 1 tsp dried)
2 tablespoons fresh Italian parsley, finely chopped
1 tablespoon fresh lemon juice (to taste)
1 garlic clove, minced
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon white pepper

Steps:

  • Preheat the grill to high.
  • Cut the zucchini into 1/4 inch length-wise slices. Brush each with olive oil (you'll need about 1 tablespoons in all) and season with salt and pepper.
  • When ready to cook, arrange the zucchini slices on the hot grill, turning with tongs, until tender and well browned, 10 minutes in all. Transfer to cutting board to cool.
  • Cut each zucchini slice crosswise on the diagonal into 1/4 inch strips. Transfer strips to a serving bowl and stir in the remaining 2 tablespoons oil, the mint, parsley, 1 tablespoons lemon juice, garlic, paprika, cumin and 1/4 teaspoons white pepper. Taste for seasoning, adding salt, white pepper, or lemon juice as necessary; the salad should be highly seasoned. Serve at room temperature.
