I got this recipe from a guy I fish with up north, I love them; they are absolutely great, and I can't get enough of them. We call them 'Scooby Snacks' and usually have them around the campfire. Be sure your foil is good and sealed. When done, it will be puffed up like a pillow! You can use any white, flaky fish in place of walleye fillets.

1 pound walleye fillets
2 12x12-inch squares aluminum foil
5 tablespoons butter, melted
1 pinch seasoned salt, or to taste
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®), or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Place walleye, skin-side down, in the center of one aluminum foil square. Brush fillet with butter; season with seasoned salt and garlic and herb seasoning blend. Place second aluminum foil square over the fish and fold edges of the two pieces of foil together to form a secure packet.
  • Cook on the preheated grill until fish flakes easily with a fork, about 7 minutes per side.

2 tablespoons butter, softened
1 teaspoon chopped fresh chives
1 teaspoon orange juice
1/4 cup chopped pecans, toasted
2 (6-oz.) walleye fillets
1/8 teaspoon salt
Dash coarse ground black pepper

Steps:

  • GRILL DIRECTIONS: Heat grill. Cut one 12-inch-square piece of heavy-duty foil. With tip of sharp knife cut 2-inch slits every 2 inches across foil. Spray foil with nonstick cooking spray.
  • In small bowl, combine butter, chives, orange juice and 2 tablespoons of the pecans; mix well.
  • When ready to grill, place foil on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Sprinkle walleye fillets with salt and pepper. Place fillets on foil; cook 8 to 12 minutes or until fish flakes easily with fork, turning once. During last minute of cooking time, top fillets with pecan butter. Remove fillets from heat; place on serving platter. Sprinkle with remaining 2 tablespoons pecans.

6 -8 ounces walleye, fillets- (4)
2 -3 tablespoons olive oil
2 -3 tablespoons fresh lemon juice
1 teaspoon thyme
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
1 -2 tablespoon lime juice

Steps:

  • Mix Olive Oil and lemon juice together. Sprinkle fillets with thyme, salt and pepper and marinade in oil and juice about 10-15 minutes. I used a George foreman indoor grill sprayed with canola oil so the fillets would not stick and both sides cooked simutaneously. I cooked about 5 mins and then used a spray bottle and spritz the fillets with the lime juice and resumed cooking for about 3 more minutes.

1 pint water
1 cup white wine
2 whole bay leaves
2 cloves garlic, crushed
6 sprigs fresh parsley
1 teaspoon whole peppercorns
1 teaspoon salt
1 stalk celery
1 lemon, sliced
2 (8-ounce) walleye fillets
1/2 cup fine diced celery
1 tablespoon chopped dill
1 cup mayonnaise
1/2 cup sour cream
1 lemon, juiced
1 tablespoon whole grain mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Steps:

  • In a shallow pan combine all the court-bouillon ingredients and bring to a simmer. Place the walleye fillets in the pan, making sure the liquid covers them. Poach the fillets for 5 minutes, until firm to the touch. Remove the walleye from the pan, cover and refrigerate.
  • Combine the ingredients for the salad dressing. After the walleye has chilled, gently flake the fillets, checking again that all the bones are removed. Add the dressing to the walleye and mix. Be careful not to break up the walleye any more. Cover and refrigerate until needed.

Grilled Walleye Pike and Jumbo Prawns in Saffron Fennel Broth with Fried Greens and Minnesota Wild Rice image

18 large prawns, shelled and de-veined
1 1/2 pounds walleye pike fillets, skinless
2 tablespoons olive oil
Old Bay Seasoning, to taste
6 bamboo skewers soaked in water for 1/2 hour
Oil, for deep-frying
2 cups mesclun salad mix, very dry
Salt and pepper, to taste
3 cups cooked wild rice, warm
2 teaspoon each minced chives, tarragon, parsley and chervil
1 medium leek, julienned
1/2 fennel, cored, julienned
1/2 cup white wine
5 cups seafood stock, or 2 1/2 cups clam broth and 2 1/2 cups chicken broth
1/2 teaspoon saffron
1 medium carrot, very finely diced

Steps:

  • Brush prawns and walleye with olive oil. Sprinkle with Old Bay Seasoning, salt, and pepper. Thread 3 prawns on each skewer. Cut the fish into 12 pieces. Set aside.
  • Heat about 2 to 3 inches of oil in a large saucepan until it registers 375 degrees F on a deep frying thermometer. In 2 to 3 batches drop the salad greens into the oil and fry for a few seconds, until bright green and crisp. Drain on a paper towels. Sprinkle with salt and pepper.
  • Preheat a gas or electric grill or a broiler. Grill the shrimp and fish until just cooked through. Set aside. To serve pack the some of the wild rice into a 1/2 cup ramekin. Invert the ramekin into the center of a large rimmed soup plate, to set the rice in the center of the bowl. Repeat with the remaining rice, to make a total of 6 servings. Ladle hot saffron broth around the rice, making sure to distribute the leeks, fennel, and carrots around the entire bowl. Place 2 pieces of fish at offset angles on top of the rice, pile a small amount of fried greens on top of the fish. Lean skewered prawns against fish. Sprinkle with the herbs and serve immediately.
  • In a medium soup pot combine, leeks, fennel, and wine. Bring to a simmer and cook until the mixture is almost dry. Add the seafood stock and saffron; simmer for 5 to 10 minutes or until the flavors are well incorporated. Add the carrots and cook until crisp tender, about 1 minute. Set aside.
