4 large Vidalia onions
Kosher salt and freshly ground black pepper
1 stick unsalted butter, room temperature
3 slices bacon, cooked and crumbled
2/3 cup crumbled blue cheese
2 tablespoons freshly chopped thyme leaves

Steps:

  • Preheat grill to medium heat.
  • Cut onion top and "backtail" so onion can sit flat. Peel the onion. Using a parking knife cut a hollow cone-like shape into the center of the onion making sure not to go all the way to the bottom. Salt and pepper to the cavity. Place onions on individual squares of heavy duty aluminum foil.
  • Add the butter, bacon, blue cheese, and thyme to a bowl and mix until well combined. Add large dollops of the butter to each cavity of the onions. Fold the aluminum foil all around the onion, gathering at the top and sealing to create a tent.
  • Place on the grill over direct heat and cover the grill. Cook for 30 minutes until onions are soft. Let cool for 5 minutes before opening the foil packet and serving.

3 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
1 teaspoon finely chopped fresh thyme leaves
Salt and freshly ground black pepper
1/4 cup pure olive oil
4 New York strip steaks, about 12 ounces each
Canola oil
1 large Vidalia onion, peeled, and cut crosswise into 1/4-inch thick slices

Steps:

  • Whisk together the Worcestershire sauce, mustard, thyme and salt and pepper, to taste, in a medium bowl until combined. Slowly whisk in the olive oil until emulsified. Let sit at room temperature while you prepare the steak and onions.
  • Remove the steaks from the refrigerator 20 minutes before grilling. Heat the grill pan over high heat until it begins to smoke. Pat the steaks dry with paper towels. Brush both sides of the steaks with canola oil and season well with salt and pepper. Arrange the steaks on the grill pan and let cook until golden brown and charred, about 5 minutes. Flip the steaks, lower the heat to medium and continue cooking to medium-rare doneness (130 degrees F internal temperature on an instant-read thermometer), about 4 minutes longer. Remove from the heat and arrange on a serving platter. Loosely tent with foil and let rest while you grill the onions.
  • Brush the onions on both sides with canola oil and season with salt and pepper, to taste. Grill until golden brown and slightly charred on both sides and just cooked through, about 2 minutes per side. Separate the slices into rings and add to a small bowl. Add half of the vinaigrette to the onions and gently toss to coat. Serve the steaks topped with the onions and drizzled with the remaining vinaigrette.

Steps:

  • Preheat an outdoor grill for low heat and lightly oil the grate.
  • Cut the onions into 1/2 inch slices. In a large bowl, combine the onions with the dressing, cover and marinate in the refrigerator for at least one hour.
  • Cook over low heat, turning once, to desired tenderness. Apply more dressing, if desired.

2 large onions, vidalia, peeled,
1 lb thin cut hickory smoked bacon
4-6 Tbsp light brown sugar
3-4 Tbsp balsamic vinegar
4-5 Tbsp molasses or maple syrup
1 box long wooden toothpicks

Steps:

  • 1. Mix brown sugar/vinegar/molasses or Maple syrup and set aside. Cut Vidalia's into 1/2" to 1" wedges. Throw away (or chop up for other uses) the few center pieces. You need a flat surface to stick picks through
  • 2. wrap each wedge center to center (around) with a 1/2 piece of bacon, top to bottom corner. Stick pick through bacon and onion. All the way through onion. This holds together while grilling. keeps from falling apart
  • 3. Lay out a single layer of wedges/wrapped and put a spoonful of sauce mixture on each onion. This is thick and will soak in good. After each piece has sauce on it. Cover and place in fridge for at least 2 hours or overnight. Flip container over 1/2 way through if possible so liquid soaks in onions good.
  • 4. Preheat grill to 300-350* It is a lot less messy to grill if you use an aluminum pan with holes in it on the grill. (dollar store) or a nonstick grill pad. cook until bacon is done and serve soon as possible. You will LOVE easier than i make it sound. ;o)

1 tablespoon olive oil
1 large Spanish onion, coarsely chopped
3 cloves garlic, coarsely chopped
2 cups bourbon, plus 2 tablespoons
3 cups canned plum tomatoes and their juices, pureed
2 cups water
1/4 cup ketchup
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons dark brown sugar
2 tablespoon honey
1/4 cup molasses
2 tablespoons Dijon mustard
3 tablespoons ancho chili powder
1 tablespoon chipotle pepper puree
Salt and freshly ground pepper
2 rib-eye steaks, about 2 inches thick and 1-pound each
Spice Rubbed Grilled Vidalia Onions, recipe follows
2 tablespoons paprika
1 tablespoon ancho chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons kosher salt
1 teaspoon cayenne powder
1 teaspoon dry mustard
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
4 Vidalia onions, peeled and sliced into 1/4-inch thick slices
Canola oil

Steps:

  • Heat the butter and oil over medium heat in a heavy-bottomed medium saucepan. Add the onions and garlic and cook until translucent, 3 to 4 minutes. Add 2 cups bourbon and cook until completely reduced. Add the tomatoes and water, bring to a boil, and then simmer for 10 minutes. Add the remaining ingredients, excluding the salt, pepper, and steaks, and simmer for an additional 20 to 25 minutes, stirring occasionally. Transfer the mixture to a food processor and puree until smooth. Season with salt and pepper, to taste. Pour into a bowl and allow to cool slightly. Whisk in the remaining 2 tablespoons of bourbon.
  • Heat grill to high. Season steaks on both sides liberally with salt and pepper and rub some of the spice rub from the onions onto 1 side of the steaks. Place steaks on grill, spice rub side down, and grill until slightly charred and crusty, about 4 to 5 minutes. Brush the steaks with some of the Bourbon-BBQ baste and turn steaks over; reduce heat of the grill to medium-low and cook to medium-rare doneness, about 8 to 9 minutes longer. Brush with the Bourbon-BBQ baste every 2 minutes. Remove from the grill, brush with more of the baste, and let rest for 5 minutes before slicing into 1/4-inch thick slices.
  • Heat grill to high.
  • Whisk together all spices in a small bowl until combined. Brush onions with oil on both sides. Rub 1 side of each onion with some of the spice mixture and place rub side down on the grill. Grill until golden brown and a crust has formed. Turn the onions over and continue grilling until just cooked through. Serve with the steaks.

2 tablespoons olive oil
one large vidalia onion, thinly sliced and rings separated
2 tablespoons balsamic vinegar
2 tablespoon soy sauce
1 teaspoon brown sugar
1/2 teaspoon black pepper
six boneless pork chops, 1/2 inch thick
tasty pork chop seasoning, as needed, recipe follows
six kaiser rolls, split

Steps:

  • 1. in a large skillet over medium heat, heat the oil. Add the onion and cook for 7 to 8 minutes, stirring occasionally until the onion begins to soften and turn Brown. Add the vinegar, soy sauce, Brown sugar, and pepper and mix well. Cook for another 7 to 8 minutes until the onion is deep Brown and very soft. Transfer to a bowl and set aside.
  • 2. Season the chops liberally on both sides with the tasty pork chop seasoning. Prepare the grill for cooking over direct high heat. Quickly toast the buns on the cooking grate and remove to a platter. Place the chops directly on the cooking grate and cook for three minutes. Flip and top with onion mixture, dividing evenly among them. Cook for another three minutes and remove chops to the buns. Serves six.
  • 3. tasty pork chop seasoning: 3 tablespoon salt 1 tablespoon finely ground black pepper 1/2 tablespoon granulated garlic 1/2 tablespoon onion powder 1/2 tablespoon paprika 1/2 tablespoon lemon pepper 1/2 teaspoon dried tarragon leaves 1/2 teaspoon dried thyme leaves 1/2 teaspoon sugar in the raw mix together and keep in an airtight container. Makes about 3/8 cup. The sandwich is a little more civilized because it uses boneless pork chops and sweet and delicious Vidalia onions. Be sure to cook them until they are all brown and crunchy and put plenty on your sandwich. They would go very well served with home fries and coleslaw

4 slices crisp bacon, crumbled

Steps:

  • Melt margarine over low-medium heat and add olive oil, salt, pepper, hot sauce, lemon juice, and bacon. Simmer for 2 minutes. Allow to cool.
  • Place the cleaned crabs on plate. Liberally coat the crabs with the sauce, making sure to lift the sides of the shell to coat the meat inside. Save remaining sauce for basting. Cover the crabs and allow to marinate in the refrigerator for at least 2 hours.
  • Heat grill to medium-low.
  • Place crabs on grill topside down. Baste with remaining sauce while they cook. Cook crabs about 3 to 4 minutes on each side. The crab will crisp on the outside and the meat inside will turn white.
  • Remove from grill and serve topped with Grilled Vidalia Onions.
  • Heat griddle or nonstick pan over medium-high heat.
  • Peel onions and cut into thin rings. Toss rings with seasoning and olive oil.
  • Cook until onions turn clear and start to caramelize. Serve over grilled crab.

4 center-cut pork chops, about 1 1/4 inches thick
8 whole bay leaves
2 large Vidalia onions

Steps:

  • Combine garlic, vinegar, Worcestershire sauce, sugar, cumin, pepper, 2 tablespoons grapeseed oil and 1/4 teaspoon salt, or more, to taste, in a bowl large enough to hold chops. Add chops, turn to coat thoroughly, then transfer chops and marinade to a heavy zip-lock bag. Slip bay leaves between and around chops. Seal bag, forcing out air pockets. Refrigerate 6 to 8 hours, turning from time to time.
  • Light a hot fire about 6 inches from cooking grate.
  • Peel onions, and cut each horizontally in 3 thick slices. Thread slices on skewers. Brush with remaining oil. When coals are gray, place onions on grill. Turn after 10 minutes.
  • Remove chops from marinade. Place on grill with a bay leaf on each side of each chop. Brush chops and onions with some remaining marinade. Grill chops and onions, turning a few times and brushing with marinade, until chops are medium to medium-well done, about 150 degrees on an instant-read thermometer. Onions should be seared and tender.
  • Remove onions from skewers. Separate into rings, and tangle over the bottom of a warm platter. Place chops on onions, with a bay leaf on each chop.

2 large Vidalia onions, cut into 1-inch thick slices (about 5 or 6 slices each)
¼ cup olive oil
1 tablespoon kosher salt
2½ teaspoons freshly ground black pepper
4 large, ripe heirloom tomatoes, cored and cut into 1-inch-thick slices
4 ripe Haas avocados, halved, peeled, seeded and sliced into 1/2-inch thick slices
1 cup fresh lime juice
1 cup extra-virgin olive oil
⅔ cup julienned fresh basil leaves
6 (6-ounce) skin-on grouper fillets
2 tablespoons peanut oil, optional
3 cups fresh arugula

Steps:

  • 1. Heat grill to high or oven to 400 degrees. Arrange onions on a baking sheet. Brush lightly with olive oil, then season with ½ teaspoon each salt and pepper. Grill onions until tender, sweet and slightly charred, 4-5 minutes per side. Or roast in oven 15 minutes. Transfer cooked onions to a mixing bowl and separate rings. Add tomatoes and avocado to bowl. Set aside. 2. Make vinaigrette: In a separate bowl, whisk together lime juice, olive oil and basil. 3. Make salad: Toss vinaigrette with onion-tomato-avocado mixture. Season with 1 teaspoon salt and ½ teaspoon pepper. Allow salad to marinate, tossing occasionally, at room temperature 10-15 minutes. (This allows the avocados to break down slightly and thicken the vinaigrette.) 4. Meanwhile, season fish fillets on both sides with remaining salt and pepper. Place fillets skin-side down on hot grill and cook until fillets begin to pull away from grill rack, 6-7 minutes. Flip and cook until fillets are golden brown and cooked through, 4-5 minutes more. Alternatively, cook on stove: Heat peanut oil in a cast-iron skillet set over high heat. Place fish fillets, skin-side down, into pan and cook until skin is crisp and begins to loosen from pan, 8-10 minutes. Flip and cook until fish is just cooked through, 2-3 minutes more. Remove fish fillets from heat and keep warm. 5. To serve, arrange 1 tomato slice each in center of 6 dinner plates, then place grilled onions and avocado slices on top of tomatoes. Top each salad with another tomato slice. Spoon 2-3 tablespoons vinaigrette over and around each salad. Top salad with fish fillets. Toss arugula in a mixing bowl with remaining vinaigrette and add to top of fish.

4 medium vidalia onions
4 tablespoons unsalted butter, cut into 1 Tbs pieces
1 teaspoon beef bouillon granules
1 teaspoon fresh rosemary
salt
pepper

Steps:

  • Cut top and root end from onions. Peel and rinse. Make two cuts into each onion without going all the way through, making quarters that stay together. Core the middle of the onion.
  • Place each onion in the middle of a foil square large enough to securely wrap the onion. Put 1/4 tsp of beef boullion granules into the middle of each onion. Crush about a 1/4 tsp of rosemary on to the top of each onion. Top with 1 Tbs of butter. Add salt and pepper to taste.
  • Securely wrap each onion. I double wrap so juices don't leak out. Place on medium grill for 30-40 minutes until soft when squeezed.
  • Serve as side dish. We serve in the foil packet.
