2 medium vidalia onions
4 tablespoons butter or 4 tablespoons margarine
1 garlic clove, chopped
1 beef bouillon cube
1 -2 teaspoon seasoning salt

Steps:

  • Cut each onion into approximately 8 wedges.
  • Place wedges on a large sheet of aluminum foil.
  • Slice butter into dabs and place on top of the onion.
  • Add garlic, bouillon cube, and seasoning salt.
  • Wrap in foil paper ensuring that the seams are closed tightly. I usually wrap again with another sheet of foil.
  • Place foil package on the hot grill for 30 to 40 minutes, turning frequently.

4 large Vidalia onions
Kosher salt and freshly ground black pepper
1 stick unsalted butter, room temperature
3 slices bacon, cooked and crumbled
2/3 cup crumbled blue cheese
2 tablespoons freshly chopped thyme leaves

Steps:

  • Preheat grill to medium heat.
  • Cut onion top and "backtail" so onion can sit flat. Peel the onion. Using a parking knife cut a hollow cone-like shape into the center of the onion making sure not to go all the way to the bottom. Salt and pepper to the cavity. Place onions on individual squares of heavy duty aluminum foil.
  • Add the butter, bacon, blue cheese, and thyme to a bowl and mix until well combined. Add large dollops of the butter to each cavity of the onions. Fold the aluminum foil all around the onion, gathering at the top and sealing to create a tent.
  • Place on the grill over direct heat and cover the grill. Cook for 30 minutes until onions are soft. Let cool for 5 minutes before opening the foil packet and serving.

2 poblano chiles
1 vidalia onion, large
2 tablespoons olive oil
2 tomatoes, medium, seeded and diced
1/2 red bell pepper, diced small
1/4 cup fresh cilantro, chopped
2 limes, juiced
1 jalapeno, finely chopped
salt, as needed

Steps:

  • Prepare the grill for cooking over direct high heat.
  • Roast the poblanos until they are blistered on all sides, then set them aside in a covered container. Peel the onion and cut it into 3/4 inch slabs. Brush the slices with oil and grill until brown and soft, flipping occasionally. This should take 8 to 10 minutes total. Let cool.
  • Peel and chop the poblanos and put them in a medium bowl. Chop the onion and add it to the bowl. Add the tomatoes, pepper, cilantro, lime juice, and jalapeno. Mix well. Let rest for 15 minutes and mix again. Add salt as needed and mix again.

4 ears fresh corn, shucked
Cooking spray, for coating the grill
1 large Vidalia onion, cut into 1/2-inch slices
1 1/4 cups finely chopped fresh cilantro
1 1/4 cups chopped seeded yellow tomato
3 tablespoons rice vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes

Steps:

  • Prepare a charcoal or gas grill for medium-high heat, or preheat the broiler.
  • Place the corn on the grill or in a broiler pan. Cook, turning every 5 minutes, until lightly browned all over, about 20 minutes. Let cool, then cut the kernels from the ears (you should have about 3 cups).
  • Coat the grill or broiler pan with cooking spray. Grill the onion slices for 5 minutes on each side.
  • Combine the corn, onions, cilantro, tomatoes, vinegar, salt, pepper and red pepper flakes in a large bowl. Toss well and serve.

8 slices bacon
4 teaspoons butter

Steps:

  • Preheat grill.
  • Core onions with sharp knife so there is a hole in the onion, but don't go all the way through! The butter has to sit somewhere.
  • Wrap two strips of bacon around the onion securing with a toothpick.
  • Put a teaspoon of butter inside the onion.
  • Wrap onion with foil
  • Grill onion for about 1 hour and 20 minutes or until tender when pierced with a fork.
  • Cool onions and cut into quarters and serve.
