2 tablespoons Italian seasoning
1 tablespoon chopped fresh basil
1 tablespoon paprika
1 tablespoon ground black pepper
¼ cup olive oil
1 yellow squash, sliced into 8 rounds
1 zucchini, sliced into 8 rounds
12 pearl onions
2 Roma tomatoes, each sliced into quarters
4 skewers, or as needed

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine Italian seasoning, basil, paprika, and black pepper in a mixing bowl. Add olive oil and stir marinade well. Add squash, zucchini, onions, and tomatoes and let marinate for 5 minutes.
  • Slide vegetables onto wooden or metal skewers, alternating the different types as you go.
  • Cook skewers on the bottom rack of the preheated grill, turning every 2 minutes, until vegetables are tender, 6 to 8 minutes total.

1/4 cup lemon juice
3 tablespoons olive or vegetable oil
2 teaspoons chopped fresh rosemary leaves or 1 teaspoon dried rosemary leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, finely chopped
1 lb boneless skinless chicken breasts, cut into 1 1/2 inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 medium zucchini or yellow summer squash , cut into 1-inch pieces
1 medium red onion, cut into wedges
1 lb fresh asparagus spears
1/4 cup crumbled feta cheese (1 oz)

Steps:

  • In shallow glass or plastic bowl, or resealable food-storage plastic bag, mix all marinade ingredients. Add chicken, stirring to coat with marinade. Cover dish or seal bag; refrigerate, stirring occasionally, at least 30 minutes but no longer than 6 hours.
  • Heat coals or gas grill for direct heat. Remove chicken from marinade; reserve marinade. Thread chicken, bell pepper, zucchini and onion alternately on each of four 15-inch metal skewers, leaving about 1/4-inch space between each piece. Brush vegetables with marinade.
  • Cover and grill kabobs over medium heat 10 to 15 minutes, turning and brushing frequently with marinade, until chicken is no longer pink in center. Add asparagus to grill for last 5 minutes of grilling, turning occasionally, until crisp-tender. Discard any remaining marinade.
  • Sprinkle feta cheese over kabobs. Serve kabobs with asparagus.

2 medium red onions, cut into wedges
1 each large sweet red, yellow and green peppers, cut 1-inch pieces

Steps:

  • In a small bowl, combine vinegar, lemon juice, garlic powder, salt, pepper and olive oil. Pour into a large resealable plastic bag; add the beef. Seal bag and turn to coat; refrigerate 5 hours or overnight., Coat broiler pan or grill rack with nonstick cooking spray; heat broiler or grill. Drain and discard marinade from beef. 2 large red bell peppers, cut into 2-inch pieces
1 large pineapple, peeled and cut into 2-inch pieces
1 large red onion, cut into 2-inch pieces
Olive oil, for drizzling
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon cumin
Juice of 1 lime
1/2 bunch fresh cilantro chopped

Steps:

  • Heat a grill pan over medium-high heat.
  • For the kabobs: Thread 1 piece of red pepper, 1 piece of pineapple and 1 piece of red onion on a metal skewer. Repeat the process until you reach the end of the skewer. Continue with the remaining fruit, vegetables and skewers.
  • Drizzle the grill pan with olive oil and grill the kabobs until all sides have char marks, 3 minutes on each side, 12 minutes total.
  • For the honey-lime vinaigrette: Add the olive oil, honey, cumin, lime juice and cilantro to a small bowl and mix until combined. Drizzle the vinaigrette over the grilled kabobs.

16 whole cherry tomatoes
8 oz teriyaki sauce

Steps:

  • 1. Wash vegetables except mushrooms, Brush mushrooms clean. Prepare vegetables according to recipe.
  • 2. Cook corn in boiling water for about 10 minutes. Toss vegetables in teriyaki sauce.

1-1/2 onions, divided
1 Tbsp. olive oil
4 cloves garlic, minced, divided
4 roma tomatoes, cut lengthwise in half
1 lb. lean ground beef
1/2 cup chopped fresh parsley
1/4 cup KRAFT Original Barbecue Sauce
1-1/2 tsp. ground cinnamon
1 cup fat-free reduced-sodium chicken broth
2/3 cup couscous, uncooked
1/4 cup KRAFT Cucumber Ranch Dressing
2 Tbsp. chopped fresh mint

Steps:

  • Heat grill to medium-high heat.
  • Chop 1/2 onion; set aside. Cut remaining onion into 8 wedges. Mix oil and 1 tsp. garlic in medium bowl. Add tomatoes; toss to evenly coat. Thread 2 each tomato halves and onion wedges onto 2 parallel wooden skewers. Repeat with 6 additional skewers and remaining tomato and onion pieces.
  • Reserve 1/4 tsp. of the remaining garlic. Mix remaining garlic with chopped onions, meat, parsley, barbecue sauce and cinnamon just until blended. Shape into 8 (1-inch-thick) oval-shaped patties.
  • Grill patties 6 min.; turn. Add skewered vegetables to grill; cook 6 to 8 min. or until burgers are done (160ºF) and onions are crisp-tender, turning skewers after 4 min.
  • Meanwhile, bring broth to boil in medium saucepan on side burner of grill. Remove from heat. Stir in couscous; cover. Let stand 5 min. Mix dressing, remaining garlic and mint until blended.

2 red onions, large, cut into 1-inch slices
3 heads broccoli, spears separated
12 ounces portabella mushrooms, baby variety
1 (16 ounce) bottle Italian dressing
12 bamboo skewers

Steps:

  • Wash and cut peppers, onions and broccoli spears. With a damp cloth, gently wipe debris from mushrooms.
  • Carefully spear vegetables onto bamboo skewers. I like to arrange the veggies in the order of pepper, onion, broccoli & mushroom. Note: If desired, you may soak the bamboo skewers in water before using, but I feel it is not necessary due to their being soaked well with the marinade.
  • Place skewers in a large, rectangular resealable container. Pour dressing liberally over veggies. Marinate for 6-12 hours or overnight, making sure to carefully flip the container upside-down and shake occasionally to redistribute the dressing.
  • Grill for 10-15 minutes over medium-high heat or until vegetables reach the desired crisp, done-ness.
  • To serve, slide vegetables off the skewer onto each person's plate.

1 bag frozen already cooked italian meatballs, thawed
whole mushrooms, rinsed
grape or cherry tomatoes
red and green pepper chopped for skewering
vadalia onion sliced for skewering
1 zuchini or summer squash sliced slightly thick
1/2 cup honey
1 cup open pit regular barbeque sauce (no other kind)
2 tablespoons molasses
lawry's seasoned salt
wooden skewers soaked for an hour

Steps:

  • 1. Take kabob skewers and set them in water for an hour if they're wood, so they won't burn. Put all the cut up vegetables in a large bowl and season with Lawry's seasoning salt (season lightly). Stir to make sure the vege's are all seasoned. Layer the vege's and meatballs as you want on the skewers. In a small bowl, mix the 1 cup of the barbecue sauce with the 1/2 cup honey and molasses, stir together. Set aside. Place the kabobs on the grill and cook on medium flame (300 degrees?)for 30 minutes brushing on the sauce mixture and turning occasionally until the meatballs are grilled through and the vege's are tender. The sauce should be sticking to the kabobs when finished.
  • 2. Serve with a rice dish and some grilled fresh pineapple slices for a great meal.

2 cups , prepared long grain rice

  • Combine dressing, parsley, basil and chives in a small bowl cover and chill. Alternate squash slices, onion wedges, tomatoes and mushrooms evenly among 8 skewers brush with dressing mixture, reserving excess and set aside. Spray grill rack with non-stick vegetable spray. Place skewers on grill rack over medium coals grill 15 minutes or until vegetables are tender, turning and basting frequently with reserved dressing mixture.
